Good olive oil
1 teaspoon minced garlic
1/2 teaspoon Dijon mustard
2 tablespoons champagne vinegar
Kosher salt and freshly ground black pepper
1/2 hothouse cucumber, unpeeled, seeded and sliced 1/2-inch thick
1 large ripe tomato, cut into 1-inch cubes
10 large basil leaves
3 tablespoons capers, drained
1 red onion, sliced into 1/4 inch rounds
1 red bell pepper, seeded and cut into 3 large pieces
1 yellow bell pepper, seeded and cut into 3 large pieces
1/2 small ficelle, cut into 1-inch thick slices

Steps:

  • Prepare a charcoal grill with hot coals. Brush the grilling rack with olive oil.
  • In a small bowl, whisk together the garlic, mustard, vinegar, 1/4 cup olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  • Place the cucumber, tomato, basil and capers in a large bowl, sprinkle with salt and pepper and toss together. Set aside.
  • When the grill is ready, brush 1 side of the onion slices and the peppers with olive oil. Place them, olive oil side down, on the grill and cook for 4 minutes. Brush the other side with olive oil, turn them over and continue cooking an additional 4 minutes. Remove the vegetables from the grill and place on a cutting board. Slice the peppers 1/2-inch thick, separate the onion rings and add them both to the cucumber mixture.
  • Brush the bread slices on both sides with olive oil and toast them on the grill until golden. Add them to the cucumber mixture. Pour the reserved vinaigrette over the vegetables and toss together. Serve warm.

Dressing
1/4 cup fresh lemon juice
2 tablespoons red wine vinegar
1 tablespoon grated lemon peel
1/3 cup extra-virgin olive oil
1 pound tomatoes, cored, cut into 3/4-inch dice, juices reserved
1/2 cup chopped fresh Italian parsley
1/4 cup coarsely chopped assorted fresh herbs (such as chives, dill, chervil, and tarragon)
2 tablespoons drained capers

Steps:

  • For salad:
  • Prepare barbecue (medium heat). Brush both sides of bell peppers, squash, onion, and bread slices lightly with olive oil; sprinkle with salt and pepper. Grill vegetables until tender and brown, about 4 minutes per side for peppers and squash and 3 minutes per side for onion. Grill bread until browned and crisp, turning occasionally, about 4 minutes. Cool slightly. Rub bread with cut sides of garlic. Tear bread into 3/4-inch pieces; place in very large bowl. Cut grilled vegetables into 1-inch pieces; add to bread in bowl.
  • For dressing:
  • Whisk first 3 ingredients in small bowl to blend. Gradually whisk in 1/3 cup oil. Season dressing to taste with salt and pepper.

  • Cut one 12-ounce loaf country bread into 1-inch-thick slices. Grill over medium heat until marked, 2 minutes per side; cut into cubes. Cut 1 each zucchini, yellow squash and red onion into 1/2-inch-thick slices; cut 1 red bell pepper into quarters. Brush the vegetables with olive oil, season with salt and pepper and grill until tender, about 5 minutes. Chop the vegetables and toss with the bread cubes, 1 pint halved cherry tomatoes, 1/2 cup torn basil, 1/2 cup olive oil and 1/4 cup red wine vinegar. Season with salt and pepper. Top with shaved ricotta salata.

Grilled Vegetable Panzanella is my twist on a classic summertime salad! Summers best vegetables are grilled and tossed with grilled ciabatta cubes and a flavorful Dijon vinaigrette.

2 small ciabatta buns (whole grain if you can find it)
2 tablespoons olive oil (divided)
10 campari tomatoes (quartered)
8 ounces cremini mushrooms (quartered)
3 shallots (peeled and sliced lengthwise)
1 orange bell pepper (sliced)
1 medium zucchini (seeded and sliced)
1 medium yellow squash (seeded and sliced)
1 clove garlic (finely minced)
1/2 teaspoon dijon (give or take) (I use an almost-empty jar of Dijon mustard)
3 tablespoons white wine vinegar
1/2 cup light olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Lightly brush sliced ciabatta with a tablespoon of the olive oil and grill until toasted for 10 minutes or so over medium heat. Remove and cube.
  • Place grill basket on grill grates to heat.
  • Toss all the prepped veggies in a large bowl with a couple pinches of kosher salt and the remaining tablespoon of olive oil. Pour veggies into the grill basket and let cook for about 20-30 minutes, tossing occasionally.
  • In a {almost empty} Dijon mustard jar or a small bowl combine minced garlic, vinegar, salt, pepper and oil. Shake well.
  • Remove veggies when tender but still a little firm and place into a serving bowl. Drizzle with desired amount of dressing and bread cubes. Toss and serve warm.

  • Preheat the grill to medium heat. While the grill is heating, whisk together the dressing ingredients: olive oil, red wine vinegar, shallot, parsley, salt, and pepper in a small bowl. Set aside to let the flavors meld while you prepare the rest of the salad.
  • Toss the bell peppers and red onion in some olive oil, and season with salt and pepper if desired. Place the veggies on the grill or on a grill mat (highly recommend), cover, and cook for 7 to 10 minutes, rotating as needed to promote even charring. In a small bowl, mix together some olive oil with the minced garlic. Brush this on both sides of each slice of bread.   • Lightly brush the eggplant with a little oil (I use a pastry brush to do this) and place oiled side down on the grill or grill pan. Lightly brush the halved zucchini and squash with oil and place on the grill as well. Season with a little salt and pepper then cook until tender, about 10-15 minutes, flipping halfway and brushing with more oil as desired. Remove, let cool slightly and cube. Place in a large bowl and continue with the rest of the vegetables.
  • Add the pepper to the grill and cook until lightly charred, turning until cooked all over, about 15 minutes. Remove from the grill and place into a large bowl, then cover tightly with a kitchen towel. This will allow the pepper to steam and make the charred skin easier to remove. After 10 minutes, when the pepper is easier to handle, gently remove the charred skin (it should be easy to peel off, but you can use a paring knife if needed) then cube and place in the bowl with the squash.
  • Add the tomatoes to the grill pan or, if using a grill, place the tomatoes in a grill pan so they don’t slip through the grates. Alternatively, you can place the tomatoes in a piece of foil with the sides gently folded up to create a makeshift basket. Sprinkle with a little salt and pepper and cook for 5-6 minutes, shaking often to turn the tomatoes until the are lightly charred all over and juices start to release. Place in the same bowl as the squash and peppers.
