1/4 cup fresh-squeezed orange juice
1 tablespoon olive oil
2 teaspoons Dijon mustard
1/4 teaspoon ground ginger
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/8 teaspoon black pepper
4 salmon steaks

Steps:

  • Whisk together the fresh-squeezed orange juice, olive oil, mustard, ginger, garlic, cayenne pepper, and black pepper in a bowl.
  • Pour into a resealable plastic bag.
  • Add the salmon steaks, coat with the marinade, squeeze out excess air, and seal the bag.
  • Marinate in the refrigerator for 1 hour.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Remove the salmon from marinade, and shake off excess.
  • Discard remaining marinade.
  • Grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on thickness.

I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

¼ cup fresh lime juice
1 tablespoon olive oil

1/2 cup orange marmalade
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper

4 salmon fillets (6 ounces each)

Steps:

  • In a small bowl, combine the first six ingredients; set aside 1/4 cup. Brush remaining glaze over salmon., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Place salmon skin side down on grill rack., Grill, covered, over medium heat or broil 4 in. from the heat for 10-12 minutes or until fish flakes easily with a fork, basting occasionally with remaining glaze.

1 medium onion, diced
2 tablespoons lemon juice
2 tablespoons orange juice
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1 garlic clove, minced
2 salmon fillets (about 1-1/2 pounds each)
orange or lemon slices, optional

Steps:

  • Combine the first seven ingredients in a jar with a tight-fitting lid; shake well. Grill salmon over medium heat, skin side down, for 15-20 minutes or until fish flakes easily with a fork. Baste every 5 minutes with citrus mixture. Garnish with orange or lemon slices if desired.

1/4 cup fresh orange juice
1/4 cup low sodium soy sauce
1/4 cup brown sugar, packed
2 large green onions, chopped
3 tablespoons fresh chives, chopped

4 (6 ounce) fresh salmon fillets (1-inch thick)

Steps:

  • In a bowl whisk together the first 8 ingredients.

  • Place in the refrigerator for 2 hours.

  • Place the fillets on a preheated outdoor grill (sprayed with cooking spray) or under the oven broiler.
  • Cook for about 6 minutes on each side, basting with reserved marinade until the fish flakes easily when tested with a fork.

1/4 cup Bourbon
1/4 cup fresh orange juice
1/4 cup low sodium soy sauce
1/4 cup packed brown sugar
1/4 cup chopped green onion
3 tablespoons chopped fresh chives
2 tablespoons fresh lemon juice
2 cloves garlic, chopped
4 (6 ounce) salmon fillets (about 1 "inch" thick)
cooking spray

Steps:

  • Combine first 8 ingredients in a large zip top bag, and add salmon to bag.
  • Seal and marinate in refrigerator for 1& 1/2 hours, turning bag occasionally.
  • Prepare grill or broiler.
  • Remove salmon fillets from bag, reserving marinade.
  • Place salmon on broiler pan coated with cooking spray.
  • Cook 6 minutes on each side or until fish flakes easily when tested with fork, basting frequently with reserved marinade.

Dijon, orange juice and scallions, most of which are in your fridge. Easy, low in carbs and so delish. I found this on the eating well website. Hope you enjoy. Original recipe called for 2 T. dijon, we have chosen to cut back to 1 tablespoon and love it that way. Sometimes we broil in the oven and to keep the steaks moist, I add some of the leftover marinade about half way through broiling.

  • At least 4 hours prior to grilling, place a cedar plank inside a large rimmed pan. Pour in the beer, plus two beer cans of water to cover the plank. Add more water if needed. Place a couple heavy mugs on top of the plank to push the plank into the liquid. Let soak until ready to grill. If you don't want to use beer, just use all water. When possible, soak plank overnight.
  • When preparing to grill, take salmon out of the refrigerator. In a small bowl, whisk together orange zest and juice, olive oil, brown sugar, chipotle powder, and cumin. Set aside.
  • Drain liquid from pan with cedar plank, leaving the plank inside. Add salmon fillet, skin side down, to plank. Rub chipotle-orange mixture all over the top and sides of the salmon. Sprinkle with a bit of kosher salt and freshly ground black pepper. Top with fresh orange slices.
  • Heat grill to medium-high, about 415° F. Place plank with salmon on grill grates and cook for about 25 to 30 minutes for a thicker piece of salmon. Salmon thickness will vary, so thinner fillets will take less time to cook. The salmon is done when the thickest part of the fillet is beautifully pink but no longer has a translucent appearance. It should flake a bit when prodded with a fork. Have a spray bottle of water handy for any flare-ups on the wood plank. The wood will smoke and smolder, and slowly start to char and burn, becoming more fragile and brittle at the end of the cooking process. Your goal is to keep the wood smoking, and not burning up. Just use the spray bottle to keep adding moisture to the exposed wood (don't directly spray the salmon). To remove the grill plank, use a large grill turner to get under the plank to lift it onto a rimmed pan. Serve the salmon right from the plank inside the pan for a fun and fuss-free presentation.
