1 cup brown sugar
¼ cup yellow mustard
9 pounds fully-cooked, bone-in ham

Steps:

  • Preheat grill to 350 degrees F (175 degrees C).
  • Mix brown sugar and mustard together in a bowl until a paste forms.
  • Place ham on a large piece of aluminum foil. Spread brown sugar paste over entire ham. Wrap foil securely around ham, sealing all of the edges together. Place wrapped ham in a disposable pan.
  • Grill ham on the preheated grill until heated through, about 2 1/2 hours. Remove ham from grill and let rest 30 minutes before slicing.

1 fully cooked bone-in ham (7 to 9 pounds)
1 can (20 ounces) crushed pineapple, undrained
1 cup packed brown sugar
1 tablespoon Dijon mustard
1/4 teaspoon ground cloves

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/2-in.-deep cuts in a diamond pattern. Cover and bake 1-1/2 hours., In a small bowl, mix remaining ingredients. Spread over ham, pressing mixture into cuts. Bake ham, uncovered, 30-60 minutes longer or until a thermometer reads 140°.

1 cup orange juice
1/4 cup honey
2 tablespoons chopped fresh chives
2 tablespoons vegetable oil
4-pound fully cooked boneless ham
1 cup barbecue sauce
1/4 cup orange marmalade
1 teaspoon ground mustard

Steps:

  • In medium bowl, mix orange juice, honey, chives and oil. Make cuts on top of ham about 1/2 inch apart and 1/4 inch deep in diamond pattern. Place ham in large resealable food-storage plastic bag. Pour orange juice mixture over ham; turn to coat. Refrigerate at least 4 hours but no longer than 24 hours, turning occasionally.
  • Heat coals or grill for indirect heat. Remove ham from marinade; reserve marinade. Cover and grill ham over low heat 1 hour 15 minutes to 1 hour 30 minutes, brushing with marinade 2 or 3 times and turning once or twice, until heated through. Discard remaining marinade.
  • Meanwhile, in 2-quart saucepan, mix barbecue sauce, marmalade and mustard. Cook over low heat 5 to 10 minutes, stirring occasionally, until well blended. Brush sauce on ham. Grill 10 to 15 minutes longer or until glazed. Serve ham with remaining sauce.

1-1/2 teaspoons all-purpose flour
1/2 teaspoon ground mustard
2 tablespoons ginger ale
1 tablespoon cider vinegar
2 boneless fully cooked ham slices (1/2 to 3/4 pound and 1/2 inch thick)

Steps:

  • In a skillet, combine the brown sugar, flour, mustard, ginger ale and vinegar. Bring to a boil over low heat; cook and stir for 2 minutes or until sugar is dissolved and sauce is thickened. Add ham slices and heat through.

I made a 10 pounder for Easter Sunday 2004 on the boat. I served it as sandwiches with beans, and potato salad. The problem I incurred was that when I went to place it in the oven, it was too big! I had to cut a 1/2" slice off of the bottom before it would go in. If you use one of the "spiral sliced" hams, follow the directions for cooking that comes with it. However I will still turn the heat up to 425 for the last 1/2 hour and baste it with a mixture of frozen orange juice concentrate and ground cloves. You should also be aware that I have never had a "spiral sliced" ham that wasn't dry. and I've been known to go to great extremes to find one that wasn't spiral sliced. 1 (8 ounce) can frozen orange juice concentrate, small can
1/2 cup dark brown sugar
whole cloves, as needed

Steps:

  • Preheat oven to 325°F.
  • Cut slices in the top of the ham on a diagonal, and press one whole clove into each square.
  • Mix up the orange juice and dark brown sugar.
  • Bake in oven for 20 minutes per pound at 325°F.
  • Baste every 1/2 hour or so, making sure you work fast to get the ham back into the oven quickly. You'll probably notice that the top may start to burn (caramelize), cover with a strip of tin foil. As the cooking process continues, you'll have to lightly cover the whole ham with a larger piece of aluminum foil.

For my Weber Summit, I preheat the grill with all burners on high for 15 minutes, then turn off all but the outside burners (burner #1 and #6), leaving the middle of the grill with no lit burners.
  • While the grill is heating: Simmer the glaze ingredients in a small saucepan over medium heat, whisking to break up the honey and mustard, until the honey melts, about 5 minutes.
  • Put the pan with the ham in the center of the grill, so the lit burners are not directly below it. Close the lid and cook the ham until it reaches 135°F in its thickest part, about 3 hours for a 10 pound ham. (It should take about 18 minutes per pound of ham, but thickness matters more than weight. If you have a probe thermometer, now is the time to use it; if you don’t, check the temperature every hour.) During the last half hour of cooking, brush the ham with the reheated glaze every ten minutes.
