PERFECT GRILLED TOFU

Perfect Grilled Tofu image

This recipe is very easy to double, though you don't need quite double the marinade: About 1 1/2 times the marinade is perfect for four packages of tofu.

Provided by benandbirdy

Categories     100+ Everyday Cooking Recipes     Vegetarian     Protein     Tofu

Time 1h25m

Yield 6

Number Of Ingredients 9

2 (14 ounce) packages extra-firm tofu, drained
½ cup sherry vinegar
½ cup low-sodium soy sauce
⅓ cup olive oil
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon dried marjoram or thyme
¼ teaspoon black pepper

Steps:

  • Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
  • Meanwhile, mix together remaining ingredients in a bowl.
  • Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.
  • Preheat a gas grill on high heat (450 degrees F to 650 degrees F) 10 minutes, then reduce heat to medium (325 degrees F to 375 degrees F)--or do whatever the equivalent is if you're using charcoal. Oil grate.
  • Transfer tofu from marinade (letting excess drip off and reserving marinade) to grill with a spatula. Cover grill and cook tofu, turning once, until well browned but before grill marks get black, 10 to 15 minutes total. Transfer tofu to a platter and cover with foil to keep warm.
  • Bring reserved marinade to a boil in a saucepan and boil until it reduces to about 1 cup, about 2 minutes. Pour over tofu and serve hot, warm, or at room temperature.

GRILLED OR PAN-FRIED MARINATED TOFU

Grilled or Pan-Fried Marinated Tofu image

This is one of my favorite ways to eat tofu. Keep some marinating in the refrigerator, then grill or pan-fry at will.

Provided by Martha Rose Shulman

Categories     dinner, weekday, main course

Time 1h15m

Yield Serves four

Number Of Ingredients 8

1 tablespoon Asian sesame oil
1/4 cup soy sauce
2 tablespoons mirin (sweet Japanese rice wine)
1 tablespoon rice wine vinegar
1 tablespoon minced or grated fresh ginger
1 pound firm tofu
1 tablespoon canola oil or peanut oil
Additional soy sauce or marinade for topping

Steps:

  • Combine all of the marinade ingredients in a 2-quart bowl. Whisk together well.
  • Drain the tofu and pat dry with paper towels. Slice into 1/2-inch thick slabs, and blot each slab with paper towels. Add to the bowl with the marinade, and gently toss to coat. Cover and refrigerate for 15 minutes to an hour, or for up to a day.
  • To pan-fry the tofu, heat the oil over medium-high heat in a large, heavy nonstick skillet. When the oil is hot, add the tofu in one layer (you may have to do this in batches). Cook on one side for one to two minutes, until lightly colored. Using tongs, turn the tofu over and cook for another one to two minutes, or until lightly colored on the other side. Remove from the pan, and serve with additional marinade or soy sauce. To grill the tofu, prepare a medium-hot grill. Brush the grill with oil, and grill until grill marks appear, 1 1/2 to 2 minutes per side. Remove from the heat, and serve with additional marinade or soy sauce.

MARINATED TOFU (THE BEST TOFU EVER!)

Marinated Tofu (The Best Tofu Ever!) image

This marinated tofu is hands down the best tofu I've ever tasted! It's super flavorful, simple to make, and very versatile. I like to serve it on a bed of rice with stir fried vegetables, or even sliced in sandwiches. Perfect addition to salads, too!

Provided by Nora Taylor

Categories     Main Course     Side Dish

Time 1h30m

Number Of Ingredients 8

16 ounces extra-firm tofu
4 tablespoons low sodium soy sauce
3 tablespoons rice vinegar
1 tablespoon pure maple syrup
1 teaspoon sesame oil
2 garlic cloves, minced
1 tablespoon fresh grated ginger, OR 1/2 teaspoon dried ginger
2-3 tablespoons neutral oil, such as canola

Steps:

  • Quick press the tofu: Cut the tofu into cubes. Place them evenly on a flat surface such as a cutting board lined with paper towels or a clean towel. Cover with a layer of paper towels, set a baking sheet on top and then something heavy, like a large book or cast iron skillet. Press like this for 15 minutes while you make the marinade.
  • Make the marinade: In a small bowl, combine the soy sauce, rice vinegar, maple syrup, sesame oil, garlic and ginger.
  • Marinate the tofu: Place the pressed tofu pieces in a shallow dish. (In the photos above I doubled the recipe, so I used a 9 x 13 inch dish, but for one batch you will need a smaller dish, such as an 8 x 8 inch.) Pour the marinade over the tofu. Let it marinate for at least 1 hour, covered, in the refrigerator. If you want to leave it overnight, it will be even more flavorful.
  • Cook the tofu: In a large skillet, cast iron preferred, add a few tablespoons of a neutral oil, such as canola oil and heat over medium-high heat. You can omit the oil if needed, but you will need a very good non-stick pan so the tofu pieces don't stick. Remove the tofu pieces from the marinade and add to the pan. Do not discard the marinade sauce. Fry the tofu until golden brown on each side.
  • Once the tofu pieces are browned, pour any leftover marinade sauce into the pan with the tofu, and stir to coat. This makes the tofu even more flavorful! The tofu will quickly absorb the sauce. Remove from heat, and serve with rice and stir fried vegetables such as baby bok choy, mushrooms and carrots.
  • Store leftover tofu in a covered container in the refrigerator for 3-4 days. It's also good cold, as a high protein snack or in sandwiches and salads.

MARINATED TOFU STEAK FOR ONE

Treat yourself to a steak dinner for one, using tofu instead of meat. This recipe is more method than ingredients, so change up the seasoning to your liking. Serve with French fries and spinach for a complete meal for one.

Time 5h

Yield 1

Number Of Ingredients 3

5 ounces extra-firm tofu
1 tablespoon grill seasoning (such as Montreal Steak Seasoning®)
1 tablespoon olive oil

  • Press tofu block gently to release as much water as possible. Rub grill seasoning all over the block of tofu. Put into a resealable plastic bag and freeze for at least 4 hours, or overnight.
  • Remove from the freezer and thaw on the counter until soft enough to cut. Slice in half lengthwise. Return to the bag, drizzle with olive oil, and seal. Rub the outside of the bag to help coat the tofu steaks with oil and seasoning. Let rest for 15 minutes.

EASY BALSAMIC TOFU

Easy Balsamic Tofu image

Tofu marinated in an easy balsamic marinade, then quickly pan fried until crisp.

Provided by Lindsay Moe

Categories     Main Course

Time 1h14m

Number Of Ingredients 8

14 ounces tofu (pressed and cut into 1 inch cubes)
1/3 cup balsamic vinegar
1 tablespoon low sodium soy sauce or tamari
1 tablespoon pure maple syrup
1 teaspoon Italian seasoning
2 cloves garlic (pressed)
Coarse kosher salt and freshly ground black pepper
1 tablespoon grapeseed oil (or other neutral tasting oil)

Steps:

  • In a shallow dish, combine balsamic vinegar, soy sauce, maple syrup, oil, Italian seasoning, and garlic. Season with salt and pepper to taste.
  • Add the tofu and toss gently to coat. Arrange in a single layer and allow to marinate, turning once, for 30-60 minutes.
  • Heat grapeseed oil in a large cast iron or non-stick skillet over medium heat. Using a slotted spoon, remove the tofu from the marinade and transfer to the hot pan. Cook 5-7 minutes, shaking the pan or carefully turning the tofu cubes so they get brown and crisp on all sides.
  • Add the remaining marinade to the pan and allow to cook, stirring, just until it has evaporated. Remove from the heat.
  • Serve balsamic tofu however you can imagine such as over pasta, in sandwiches, or as a topping to salads.

PAN-GRILLED MARINATED TOFU WITH TWO VARIATIONS

Pan-Grilled Marinated Tofu With Two Variations image

An easy, mild flavor marinated, mainly to use in recipes such as stir frys, pasta, noodles, rice, soups and practically anything else, when you want to add a little flavor and texture to otherwise plain tofu. I also find this flavorful enough to eat plain with a little rice and steamed veggies. Time does not include the 30 minute marinade time.

ITALIAN-STYLE MARINATED GRILLED TOFU • THE BOJON GOURMET
2019-06-12 Grilled Tofu Marinade. I developed this grilled tofu recipe for a vegetarian cobb salad in place of roasted chicken. • In a bowl or measuring pitcher, combine the tamari, oil, maple syrup, lemon zest and juice, garlic, salt, pepper, and oregano. Whisk well to combine as much as possible – the oil will want to separate out.
  • Press the tofu strips gently with paper towels to remove excess water, then place in a shallow baking pan in a single layer and pour the marinade over the tofu. Let sit at least 30 minutes and preferably 1-2 hours (or cover and chill for up to 2 days).
  • When ready to cook, wipe the garlic off of the tofu (otherwise it will burn) and reserve the marinade. The tofu tends to stick to grills, so I have the best success searing it in a ceramic non-stick pan over medium-high heat until golden, then transferring it to the hot grill to add caramelization. You can also simply sear it the skillet until deep golden on both sides, 1-2 minutes per side.
  • Alternatively, make sure your grill or stovetop grill pan is very clean, and oil it well. If using a grill pan, heat the pan over medium-high heat until very hot. If using a grill, set it to medium heat. Place the tofu slices on the grill at an angle and cook until it holds deep grill marks, 1-2 minutes per side.

  • Slice the tofu into eight 3/4″ strips and place in an airtight container or large freezer bag. Pour the marinade over the tofu, seal the container, and allow to marinate in the fridge for at least 20-30 minutes. But, allowing it to sit overnight is best and will give you maximum flavor.

  • Mix dry rub ingredients together, set aside. Place all ingredients for chimichurri in a blender or food processor, except for olive oil. Pulse 10-15 times. Then stream in olive oil, pulsing continuously, until herbs and garlic are finely chopped. Set aside.
  • Wrap tofu in a kitchen towel and set something heavy on it like a cast iron skillet for 15 minutes, to remove excess water. You could also use a tofu press. First you'll set the tofu on it's long side and cut into thirds horizontally, essentially cross sections so that you have three rectangular slabs. From there you'll cut each slab in half. You now have 6 pieces. Then cut each of those pieces diagonally in half to create triangles!
