MUSSELS IN GARLIC BUTTER
This is a very quick and simple recipe for Mussels. I am not a seafood eater myself but the family do enjoy these.

Steps:
- Cream the butter with the garlic and parsley in a bowl and set aside.
- Place the mussels in a saucepan with the remaining ingredients, bring to boil and simmer for 3 minutes or until the mussels open.
- Detach the lid from the base and place the mussels still sitting in their shells on a baking sheet.
- Dot generously with the garlic butter and grill until the butter has melted.
- Serve the mussles on their own or in the wine broth.

- Scrub mussels in shells under cold running water. If present, remove beards. In an 8-quart Dutch oven combine 4 quarts cold water and 1/3 cup salt; add mussels. Soak for 15 minutes; drain and rinse. Discard water. Repeat soaking, draining, and rinsing twice.
- For sauce, in a small saucepan melt butter over medium heat. Add garlic; cook for 1 minute. Add wine; bring just to a simmer. Remove from heat; stir in parsley.
- Tear off a 36x18-inch piece of heavy foil; fold foil in half to make an 18-inch square. Place the mussels in the center of the foil. Bring up opposite edges of foil and seal with a double fold. Fold remaining edges together to completely enclose mussels, leaving space for steam to build.
- Place foil packet on the grill rack directly over medium-high heat; grill for 8 to 10 minutes or until shells open. Transfer mussels (discard any that do not open) and any liquid to a serving bowl.
- Transfer the sauce to small bowls for dipping. Serve mussels with sauce and, if desired, bread. Makes 4 appetizer servings.

- Place mussels in heavy large Dutch oven, cover and cook over high heat until mussels open, shaking pan occasionally, about 5 minutes. Drain mussels, reserving liquid. Transfer mussels to bowl; discard any that do not open. Tent bowl with foil.
- Melt butter in same Dutch oven over medium-high heat. Add shallots and garlic and sauté until tender, about 3 minutes. Add 3 tablespoons parsley, lemon juice, lemon peel and reserved liquid from mussels and bring to boil. Season to taste with pepper. Drizzle garlic butter over mussels. Sprinkle with 1 tablespoon parsley.

- Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. In a small pot, melt butter over medium. Remove from heat and stir in parsley; set aside.
- Working in batches if necessary, place mussels on grill in a single layer. Place lemons, halved and lightly oiled, on grill, cut side down.
- Grill until mussels open and lemons are warmed through and browned, 5 minutes. With tongs, transfer mussels as they open to a large platter. (Discard unopened mussels.) Pour herb butter over mussels; sprinkle with salt and pepper. Serve with lemons.

- Preheat an outdoor grill for high medium-heat and lightly oil grate.
- Whisk together the butter, garlic, curry powder, cumin, and salt in a small bowl.
- Arrange four large sheets of aluminum foil on a flat surface. Divide the mussels into four even portions and place one portion on each piece of foil. Dot the mussels with the curry mixture. Sprinkle the red bell pepper and parsley over the top of each portion. Top each with lime slices. Wrap foil tightly around the portions.
- Cook the packets on the preheated grill until the mussels have opened, 5 to 10 minutes. Discard any mussels which do not open.

GRILLED CLAMS AND MUSSELS WITH GARLIC, ALMONDS AND MINT
Grilling clams and mussels gives them a smokiness you can't get inside on your stove. Use hardwood charcoal if you can; it gives the best, smokiest flavor. - Build a very hot charcoal fire, mounding coals in the center of the grill, or heat a gas grill.
- Scrub mussels and clams under running water to remove any clinging grit.
- Put clams, wine, oil, sliced garlic and chile in a large disposable aluminum roasting pan and stir. Cover pan tightly with heavy-duty foil. Place pan on the grill and cover. Let cook undisturbed for 10 minutes, then use mitts to open foil and stir in mussels. Replace foil and continue cooking, with grill covered, 10 minutes more. By this time, most or all of the shellfish should be open. Use tongs to transfer opened shellfish to a serving bowl and return any unopened in the pan to continue cooking, covered, for another few minutes. Any that remain unopened should be discarded. Combine all shellfish and pan juices in the bowl.
- Toss shellfish with mint, almonds, chopped garlic and lemon zest. Drizzle with additional oil. Brush grilled bread slices with oil and serve alongside for soaking up juices.

- Prepare a grill for medium direct heat. While grill is heating up, Melt your butter over low heat. Add the garlic and herbs and let reduce down.
- Grilling: If your grill grate skew to being far apart, you will need to put your mussels on a grill/veggies pan. If they are within a small enough apart, you can grill the mussels directly on the grates. Grill the mussels until the pop open. This will be around 5 minutes or so… The ones that open move to a less hot part of the grill while waiting on the others. Any mussels that don’t open should be thrown away.
- These are also really great with grilled bread- grill bread pieces until char marks form while also grilling the mussels. Dip them in the drawn butter! YESSSSS! How do you like your mussels? What do you serve them with? I would pair these with a nice glass of wine of course!

- Preheat the grill to 375 degrees Fahrenheit using indirect or two zone cooking. It’s important that the cast iron is not directly over the heat source or it will burn the broth. As you warm up your grill, be sure the cast iron, or grill safe pan, warms up with the grill.
- When the grill reaches 375 degrees, place butter and olive oil in the pan. It should immediately start to melt. Add the shallots and stir frequently. This will cool the pan and allow the shallots to soften. Do this for 3 – 4 minutes or until the shallots start to get translucent. (note: this is also a good time to place the lemon half over direct heat to grill)
- The garlic is one of the two main stars of this dish. Do not be shy with garlic! Garlic is your friend here. Continue to sauté the garlic for another 1 – 2 minutes.
- Pour in the tomatoes and then wine, parsley, thyme, salt, and chili pepper flakes and stir for 2 minutes or until the wine starts to bubble. If the pan has cooled too much you can place over direct heat. But watch to be sure it doesn’t scorch over direct heat. (This is a good time to remove the lemon as it likely has a good char, then squeeze the juice into the pot – check out how to grill lemon if you have questions). This is when to add your bread over direct heat to get some char to it.
