During summer, I use the barbecue grill often. Food just tastes better, and cleanup is much easier. This recipe is a delicious way to dress up plain hamburgers.

1 can (4 ounces) mushroom stems and pieces, drained
4 bacon strips, cooked and crumbled
2 tablespoons diced green onions
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1/2 teaspoon salt
1 pound ground beef
4 to 5 hamburger buns
Tomato slices, optional

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Shape into four or five patties. , Lightly grease a grill rack. Grill, covered, over medium-hot heat or broil 4 in. from the heat for 5-6 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with tomato if desired.

8 ounces (250 g) bacon, cut into strips
2 tablespoons butter
26 ounces (750 g) brown mushrooms, washed ((pat dry with paper towel))
1 tablespoon olive oil
1/4 cup dry white wine ((or chicken broth/stock))
6 cloves garlic (finely chopped)
1 1/2 cups (400 ml) heavy cream, ((thickened cream or evaporated milk))
1 tablespoon fresh chopped parsley
1 teaspoon fresh chopped thyme
Salt and pepper (to season)
1/2 cup fresh shredded or grated mozzarella
1/4 cup fresh shredded or grated parmesan cheese

Steps:

  • Fry the bacon in a large oven-safe skillet over medium heat until crispy. Use a slotted spoon to transfer to a paper towel lined plate to soak up some of the oil. Set aside.
  • In the same pan, melt the butter. Add the mushrooms, drizzle with oil and mix through, scraping up any browned bits from the bottom of the pan. Fry for 2-3 minutes to lightly brown mushrooms and release their juices (if any).
  • Pour in the wine (or broth) and let reduce for 2 minutes, while occasionally stirring. (Preheat broiler or oven grill.)
  • Add in the garlic and stir it through for a minute, until fragrant. Pour in the cream and herbs. Reduce heat down to low. Gently simmer until tender (about 4-5 minutes) and sauce is slightly thickened. Season with salt and pepper.
  • Add the bacon back in and give everything a good mix to combine all of the flavours together. Top the mushrooms with the mozzarella and parmesan cheese.
  • Broil until cheese is melted and bubbly and mushrooms are done to your liking (about 3-5 minutes).
  • Serve warm.

12 oz frozen brussel sprouts, thawed and sliced in half
3 pieces bacon, chopped
1/2 c onion, chopped
1 c sliced mushrooms
1 Tbsp butter
1/2 tsp house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
salt to taste

Steps:

  • 1. In a skillet, fry up the chopped bacon until crispy and remove the bacon to a paper towel lined plate, retaining the bacon grease in the skillet. Add the onions and mushrooms to the pan and cook over med. high heat for 3-4 minutes, just enough to soften the veggies. Remove them to a plate and add the butter to the pan.
  • 2. Once melted add in the sliced brussel sprouts and reduce the heat to medium. Season with the house seasoning and salt to taste. Cook them, stirring often, until they are tender and begin to brown around the edges, about 7-8 minutes. Add the bacon, onions and mushrooms back to the pan to warm through, tossing to combine, just before serving.

1 tablespoon soy sauce (gluten-free or coco aminos, as needed)
4 cloves garlic (very finely minced, divided)
2 lbs. button mushrooms (cut in half)
2 tablespoons butter
A generous pinch of salt

Steps:

  • In a large bowl, mix the balsamic vinegar, soy sauce, and half the garlic. Add the mushrooms and gently toss the mushrooms so they are coated in the marinade. Set aside on your counter for 30 minutes.
  • In a small saucepan melt the butter and add the remaining garlic and a pinch of salt.
  • Oil your barbecue grill and preheat to medium. Skewer the mushrooms on kebab sticks. (See notes.)
  • Grill the mushrooms for 5 minutes per side. When you flip them over, it is easiest to use two pairs of tongs. Set the grilled mushrooms on a plate and drizzle the garlic butter over the top. Serve immediately.

A staple of many tapas bars, and among the most elementary of appetizers, this is a surefire crowd pleaser-as long as your crowd isn't vegetarian. Even if some members are, you can skewer plain mushrooms or mushrooms and other vegetables-like red peppers and zucchini, for example.

Yield makes 4 servings

Number Of Ingredients 3

12 medium button mushrooms, trimmed
About 1/4 pound slab bacon, cut into 12 pieces, or 6 thick slices bacon, cut in half
Vinaigrette (page 600) or Aïoli (page 603)

Steps:

  • Start a charcoal or gas grill or preheat the broiler: the fire should be medium-hot and the grill rack at least 4 inches from the heat source. Make 4 small skewers, alternating mushrooms and bacon. (If you are using sliced bacon, cut the 6 pieces in half, then fold each over onto itself as you skewer it.)
  • Grill, turning frequently, until the bacon is crisp on the outside and the mushrooms tender, 10 to 15 minutes. Serve, offering vinaigrette or aïoli as a dipping sauce.
  • Half of an English breakfast: Put 1 tablespoon extra virgin olive oil in a skillet and turn the heat to medium-high.
