MORTADELLA MONSTER

Steps:
- Slice the roll in half horizontally. Spread the Jalapeno Honey Mustard on the lid only. Layer on the mortadella, muenster, peppers and lettuce. Close the lid and slice into halves or quarters, depending on who's hungry.
- In a small bowl, combine the mustard, honey and jalapenos. Use right away or store for up to a week in the fridge.
ITALIAN ASSORTED SUB

Steps:
- Preheat oven to 550 degrees F.
- Split roll open.
- Toast in oven until golden brown with slightly burnt edges.
- Spread mayo on top and bottom of roll. Place cheese on roll bottom, then top with ham, dry salami, Genoa salami, capicola, lettuce, Sub Sauce, cherry peppers, if using, tomatoes and red onions. Close the sandwich with the top of the roll and cut on the bias. Place on a plate and garnish with pepperoncini.
- Put water, yeast, honey and sugar in a stand mixer fitted with the dough hook. Mix on lowest speed for 15 seconds to combine ingredients, then mix on medium-low speed for 3 minutes. Add flour and mix for 2 minutes. Add salt and mix for 2 minutes.
- Add shortening and mix for 8 minutes.
- After mixing, remove from mixer and place in a bowl greased with olive oil. Cover with a towel and allow to rise until it doubles in size, 2 to 3 hours.
- Preheat oven to 350 degrees F.
- Remove from bowl and cut into 6 equal portions. Roll out each portion into the shape of a sub sandwich roll approximately 10 inches long.
- Place on a sheet tray at least 4 inches apart. Lightly spritz water on top of each roll. Sprinkle each roll with 1 teaspoon sesame seeds.
- Bake for 16 minutes, then rotate pan and continue to bake until evenly light brown, another 16 minutes.
- Combine vinegar, salt, pepper, red pepper, xanthan gum, shallot and garlic in a bowl. Blend with a hand blender until all ingredients are well incorporated, about 1 minute.
- Continue to blend, slowly adding the olive oil over 30 seconds.
MUENSTER MONSTER HASH BROWN FINGERS
Steps:
- Spray an 8-inch square baking dish with cooking spray and line with parchment with an inch or so of overhang on all sides.
- Put the hash browns in a large bowl. Sprinkle with the cornstarch, salt and smoked paprika and toss well to coat the potatoes evenly. Add the egg and melted butter and toss well to coat. Fold in the Muenster and parsley. Press the mixture firmly into the lined baking dish and flatten the top and sides evenly. Freeze until firm, about 30 minutes.
- Pour about 1/2 inch of oil in a large nonstick skillet and heat over medium-high heat. Remove the hash browns from the baking dish and cut in half with a serrated knife, then cut each half into 5 "fingers."
- The oil is ready when a shred of potato sizzles vigorously on contact. Slide half of the fingers into the oil and fry until deep golden and set on the bottom (you will know it's time to flip when they are easy to turn), about 3 minutes. Flip and fry the second side in the same way, about 3 minutes more. Drain on a cooling rack set over a baking sheet to drain excess oil. Repeat with the remaining fingers. Season with salt and serve with ketchup on the side.
GRILLED ARTICHOKE SUB

- Preheat the oven to 350 degrees F.
- Lop off stem end of the head of garlic. Pour the olive oil over the exposed cloves, sprinkle with salt and pepper and wrap loosely in foil. Bake until soft and slightly caramelized, about 20 minutes. Let cool, squeeze out the garlic cloves and set aside. Once cool, using your knife, chop into a paste.
- Mix together the roasted garlic, ricotta, basil, romano and lemon zest. Season with salt and pepper.
- Heat a grill pan over medium-high heat. Gently add the artichokes to the grill pan and grill until properly charred, 4 to 5 minutes a side, then set aside.
- Meanwhile, lightly toast the baguette, about 5 minutes.
- For the sandwich build: Split the toasted baguette in half and schmear each half with the ricotta spread. Then pile on the grilled artichokes. Next, add the toasted pine nuts and finally the red leaf lettuce. Cut to serve your family and friends and enjoy with a side of Tony Bennett perhaps.
GIANT MORTADELLA SUB

- On the bottom half of the sub, arrange the cheese, then ribbons of thin mortadella, then the lettuce and then the fried onions. On the top half of the bun, spread a generous schmear of the Cherry Pepper Aioli.
- Combine the mayonnaise, cherry pepper relish, mustard, garlic and chives in a medium bowl and stir until well blended.
