- Preheat oven to 375°F. Drain mandarin oranges and reserve juice. Zest limes, cut in half and juice. Stem and coarsely chop mint. Peel shallot and thinly slice. Pat pork chops dry and season both sides with half the lime zest and a pinch of pepper.
- Place reserved mandarin orange juice, half the lime juice, all of the olive oil except for what is needed for the pan to cook the pork chops, honey, mint (reserve a pinch for garnish), remaining lime zest and a pinch of pepper in a large mixing bowl. Mix thoroughly; set aside 1 tablespoon dressing for each pork chop.
- Heat 1-2 teaspoon olive oil in a pan over medium heat. Place pork chops in pan and cook until golden brown, 2-3 minutes per side. Transfer pork chops to prepared baking sheet. Pork chops will finish cooking in a later step.
- Place baking sheet in oven and roast until pork chops reach a minimum internal temperature of 145°F, 8-10 minutes. Rest 5 minutes. While pork chops rest, make salad.
- Stir dressing to recombine. Add arugula, mandarin oranges and shallots (to taste) to dressing. Toss to coat. Plate dish as pictured, topping pork chops with remaining dressing. Garnish salad with slivered almonds and remaining mint. Bon appétit!

- Cut roast in half. Combine the salt, oregano, cumin, paprika and pepper; rub over pork. Place in a 4- or 5-qt. slow cooker., Mince cilantro to measure 1/4 cup; set aside. Trim remaining cilantro, discarding stems. Add the whole cilantro leaves, onions, chiles and garlic to the slow cooker. Combine the broth, orange juice and lime juice; pour over roast. Cover and cook on low for 7-9 hours or until meat is tender., Remove roast; cool slightly. Skim fat from cooking juices; set aside 3 cups juices. Discard remaining juices. Shred pork with 2 forks and return to slow cooker. Stir in minced cilantro and reserved cooking juices; heat through. Spoon 1/2 cup meat onto each bun. Serve with barbecue sauce and pickle chips.

GARLIC-LIME PORK CHOPS
I came up with this recipe because my husband loves pork chops and I was tired of eating them. It turned out to be so good, I wont make them any other way. The pork chops have a great lime flavor with a little kick. I always serve with rice and veggies. This recipe is for 2, but I have made it for 4. Just use smaller half inch pork chops.

- Rinse pork and place in dish to marinate. Stab pork with a fork till there are plenty holes. Cut the lime in half and squeeze both halves over the pork. Sprinkle salt & pepper and garlic powder over one side of pork. Cover and place in fridge for 20-30 minutes.
- In a large skillet, heat vegetable oil and green onions over medium heat.
- Place pork chops in skillet seasoned side down and sprinkle adobo and creole seasoning on top side of pork. (go heavy on the creole seasoning for a spicy kick).
- Cover and cook for about 7 minutes.
- Uncover and turn pork over. Cover and cook for 5 minutes.
- Continue turning pork over every 5 minutes until pork is completely cooked.
- Serve with rice.
CHIPOTLE LIME MARINATED GRILLED PORK CHOPS OR TENDERLOIN
Recipe from package of pork chops.Prep time does not include marinating time. You can alternately use dried chipotle, just rehydrate in hot water for about 15 mins and then chop. I actually like this better as a marinade for pork tenderloin.

- Place chops in large self-sealing plastic bag; combine remaining ingredients in a small bowl and pour over chops.
- Seal bag and refrigerate for up to 24 hours.
- Remove chops from marinade (discard marinade).
- Grill over medium-hot coals for a totoal of 12-15 mins, turning half-wayt thru, or until done.
BBQ LIME PORK CHOPS
The lime juice seems to keep these chops tender and juicy. If you want something a little spicier just add 1 tsp of chili to the marinade.

Steps:
- Mix the marinade in a large "Ziplock" bag or in a shallow glass dish.
- Reserve 1/4 cup of the marinade.
- Add pork chops to the marinade, coat the chops on both sides.
- Refrigerate for 30 minutes.
- Heat BBQ to medium heat.
- Brush chops with reserved marinade and grill turning once.
- Cook for approx 10 minutes each side or until no longer pink.
- Place on platter and garnish with lime slices.
CHILI LIME PORK CHOPS
This comes from my low carb cookbook and I have already converted it into an OAMC recipe. Great flavors! And easy too. I add the zest of the lime. Note marinating time.

- Place the pork chops in a plastic bag or bowl.
- For the marinade, in a small bowl, stir together the lime juice, chili powder, olive oil, cumin, cinnamon, hot pepper sauce, salt and garlic.
- Pour over the chops, turning to coat well. Label and freeze at this point if you are doing OAMC. If not, allow to marinate for 4-24 hours before broiling.
- Preheat broiler.
- Place chops on the unheated rack of a broiler pan Broil for 6-8 minutes (3-4 minutes on each side) or until done and juices run clear.
