ASPARAGUS WITH MISO BUTTER
This combination of miso and butter is natural and delicious, too. Miso butter looks a little like cake frosting and is just as easy to lick off the fingers. With the egg yolk dripping onto the butter and the asparagus spears dipped into the eggy, miso slurry, you're looking at a four-star dish at a neighborhood restaurant - or at home. Steps:
- Put oil or fat in skillet and turn heat to medium-high. Add as much asparagus as will fit in a layer, add salt and pepper to taste, and toss and stir until browned and shriveled, about 10 minutes.
- Meanwhile, over low heat in a small saucepan, warm and whisk together miso and butter, so they combine, and butter softens but does not melt. Whisk in vinegar and keep warm. Warm a serving plate.
- When asparagus is done, put some miso butter on bottom of serving plate. Blot excess fat from asparagus if you like, put on top of the miso butter, and top with poached eggs. Serve immediately.

ROASTED ASPARAGUS WITH MISO DRESSING
Miso has a rich taste, which is perfect for asparagus. This recipe has a nice Asian flavor and I like to serve this especially with teriyaki steak or salmon, and a crisp green salad.

Steps:
- Preheat oven to 400 degrees F. Toss potatoes, 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper together in a medium bowl. Spread in an even layer on a large rimmed baking sheet. Roast until starting to soften and brown, about 15 minutes.
- Meanwhile, toss asparagus with the remaining 1 tablespoon oil, 1/8 teaspoon salt and 1/8 teaspoon pepper in the medium bowl. Combine butter, lemon juice, garlic, 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper in a small bowl.
- Sprinkle salmon with the remaining 1/8 teaspoon salt. Move the potatoes to one side of the pan. Place the salmon in the center of the pan; drizzle with the butter mixture. Spread the asparagus on the empty side of the pan. Roast until the salmon is just cooked through and the vegetables are tender, 10 to 12 minutes. Garnish with parsley.

- In a small bowl, mix white miso and sugar really well until the sugar is dissolved. Then add the rest of the ingredients to combine. Set aside.
- Cut off the bottom ends of the asparagus (You can also snap with fingers or shave off with a vegetable peeler. For a clean presentation, I trimmed the bottoms with a knife). Then chop the remaining asparagus into 2-inch (5-cm) pieces. Keep the spears and tips separated as we will blanch them separately.
- Neatly arrange the asparagus stems in serving bowls and place the tips on top. Drizzle miso dressing before you serve. I put salt pickled cherry blossom on top as a garnish.

- Place the tofu on its side and cut into 3 slabs. Turn the tofu on the flat side and cut into four squares, creating a total of 12 slices of tofu. Pat dry with a clean dishtowel.
- Place the grill/griddle over the front and back burner. Heat the grill over medium – medium-high heat. Using a silicone brush, coat the entire surface well with sesame oil.
- Dip the tofu into the sauce and add tofu squares to half of the grill and the asparagus to the other (I put the tofu towards the front and the asparagus to the back). Cook 4 – 5 minutes. Spoon a little bit of the marinade over the top of the tofu. Add a little over the asparagus as well. Carefully flip the tofu and cook another 5 minutes, until golden brown on both sides. Rotate the asparagus as needed to cook evenly. Once complete, turn off the heat. Add a few slices of lemon to the grill to give it a grilled look. It warms the lemon and makes the juices taste delicious!
