"WHAT YOU GOT" MEATLOAF ON THE GRILL

1 cup ketchup
1/3 cup light brown sugar
3 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon apple cider or sherry vinegar
Freshly ground black pepper
2 pounds ground meat (I'm using beef)
1 cup breadcrumbs
1 cup peeled and grated onion (I'm using yellow)
1/2 cup fresh parsley leaves, finely chopped
1 teaspoon cayenne
1 teaspoon paprika
1/2 teaspoon spice mix (I'm using Old Bay)
5 shakes Worcestershire sauce
2 large eggs, beaten
1 head roasted garlic, mashed, recipe follows
Kosher salt and freshly ground black pepper
8 ounces smoked sausage (I'm using kielbasa), optional
3 heads garlic
3 teaspoons olive oil

Steps:

  • For the glaze: In a medium bowl, add the ketchup, brown sugar, Worcestershire sauce, mustard, vinegar and 1/2 teaspoon pepper. Whisk to combine and set aside.
  • For the meatloaf: Preheat the oven or grill to 375 degrees F. If using a gas grill, set to medium heat on one side and low on the other side. If using a charcoal grill, bank medium-hot coals on one side of the grill.
  • Prepare your pan: Line a baking sheet with foil if using an oven. If grilling, gather a sturdy grilling tray, disposable foil pan or some sheets of foil.
  • In a large bowl, add the meat, breadcrumbs, onion, parsley, cayenne, paprika, Old Bay, Worcestershire sauce, eggs and garlic. Mix the ingredients thoroughly and season well with salt and pepper.
  • Put the meat mixture on the prepared tray. Form the meat into a loaf around the kielbasa, if using, so the sausage is sealed inside. Spread the glaze over the top. Bake in the oven or on the cooler side of the grill, covered, until cooked through and the glaze is sticky, about 1 hour.
  • Serve with potatoes or a side salad or use on a sandwich.
  • Preheat the oven to 400 degrees F. Line a baking sheet with foil.
  • Remove the outer papery skin from the garlic, then cut 1/4 inch off the top of each head. Drizzle 1 teaspoon of olive oil over each head of garlic, then wrap each head in foil. Seal the foil packets and transfer to the prepared baking sheet. Roast until completely soft and caramelized, about 1 hour. Allow to cool slightly.
  • When cool enough to handle, squeeze the garlic cloves from the skin into a medium bowl and mash with a fork into a paste.

For the Chipotle Mayonnaise
1/2 cup mayonnaise
1/4 cup sour cream
2 chipotle chiles from 1 can of chipotles in adobo
1 tablespoon freshly squeezed lime juice
1 teaspoon adobo sauce from can of chipotles in adobo
1/4 teaspoon ground cumin
For the Onions
1 tablespoon butter
2 large yellow onions, thinly sliced
For the Paninis
8 1/2-inch thick slices leftover meatloaf
4 ciabatta rolls, split in half horizontally
3oz arugula, washed and dried
8 slices gouda cheese

Steps:

  • To make the chipotle mayonnaise: Place mayonnaise, sour cream, chipotles, lime juice, adobo sauce, and cumin in the jar of a blender. Puree until chipotles are completely chopped and sauce is smooth. Transfer to an airtight container and place in refrigerator until ready to use.
  • To make the onions: Melt butter in a large heavy-bottomed stainless steel or enameled cast iron dutch oven over medium-high heat. Add onions and cook, stirring occasionally, until softened and bottom of saucepan is coated in a pale brown fond, about 15 minutes. Add 2 tablespoons of water and deglaze pan by scraping with a wood spoon. Continue to cook, stirring occasionally, until another layer of fond has built up again, 3-5 minutes. Add 2 tablespoons of water and deglaze. Repeat process until onions are completely softened and a deep, dark brown, about 15 minutes more. Season onions to taste with salt. Transfer to a bowl and set aside.
  • To make the paninis: Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place cast iron panini presses or foil-wrapped bricks on hot side of grill. Place meatloaf slices on hot side of grill and cook until warmed through, 1 to 2 minutes per side. Transfer meatloaf to a cutting board or plate.
  • Spread chipotle mayo on cut side of each roll. Place 2 meatloaf slices on each bottom half of roll followed by 2 cheese slices, onions, and arugula. Working in batches as necessary, place sandwiches close to, but not directly over, the fire. Place panini press or brick on top of sandwiches, cover grill, and cook until sandwiches are heated through and well compressed, about 3 to 5 minutes. Transfer sandwiches to a plate, cut into two pieces, and serve immediately.

2 slices Italian bread
2 tablespoons mayonnaise
2 slices Cheddar cheese
3 slices deli ham, or more to taste
1 slice firm-ripe tomato
1 thin slice onion
cooking spray

Steps:

  • Drizzle olive oil on 1 side of each bread slice. Spread 1 tablespoon mayonnaise on the other side of each slice. Pile Cheddar cheese, ham, tomato, and onion on top. Top with other bread slice, mayonnaise side down.
  • Heat a grill pan over medium-high heat; spray lightly with cooking spray. Place sandwich on grill; weigh it down with a heavy pan. Cook until cheese is melted and grill marks appear, 3 to 5 minutes per side.

1/4 cup olive oil
2 small Japanese eggplants or 1 medium to large regular eggplant, cut crosswise into 1/2-inch-thick slices
2 zucchini, cut crosswise into 1/2-inch-thick slices
1 small red onion, cut into 1/2-inch-thick slices
Salt and freshly ground black pepper
2 baguettes (each about 2 feet long)
1/2 cup Basil Pesto, recipe follows
8 ounces fresh water-packed mozzarella cheese, drained, sliced
2 tomatoes, sliced
1/2 cup roasted red peppers
8 large basil leaves, optional

Steps:

  • Heat a grill pan over medium-high heat. Drizzle the oil over the eggplant, zucchini, and onion slices, then sprinkle with salt and pepper. Working in batches, grill the eggplant, zucchini, and onions until they are tender and grill marks appear, about 4 minutes per side. Cool completely.
  • Cut each baguette into 6 pieces. Working with one baguette piece at a time, slice in half and spread both sides with the pesto. Working with the bottom slice of the baguette, stack 2 slices of eggplant, 2 slices zucchini, 1 slice onion, 1 slice tomato, 1 slice mozzarella, and 1 slice of roasted pepper. Sprinkle with salt and pepper. Place top half of baguette on top and continue with remaining baguette. (The sandwiches can be made 4 hours ahead. Wrap well with plastic wrap and refrigerate.)
  • 2 cups fresh basil leaves
  • 1/4 cup toasted pine nuts
  • 2 garlic cloves, peeled
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup (about) extra-virgin olive oil
  • 1/2 cup grated Parmesan
  • In a blender, pulse the basil, pine nuts, garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper until finely chopped. With the blender still running, gradually add enough oil to form a smooth and thick consistency. Transfer the pesto to a medium bowl and stir in 1/2 cup of cheese. Season the pesto with more salt and pepper, to taste. (The pesto can be made 2 days ahead. Cover and refrigerate.)
  • Yield: 1 cup

2 1/2 pounds organic or grass-fed beef (80/20)
2 pounds Italian sausage
1/2 cup fresh Italian parsley, chopped
2 yellow onions, chopped
3 tablespoons minced garlic
4 farm-fresh eggs, organic eggs or at the very least cage-free eggs
3 tablespoons organic Italian seasoning
1 tablespoon Himalayan salt or sea salt
1 tablespoon fresh coarse-ground pepper
1 cup organic ketchup
2 cups fresh breadcrumbs (I use gluten-free)
1 tablespoon olive oil
3 yellow onions, peeled and cut in half, then sliced into half-moons 1/4 inch thick
1 tablespoon red balsamic vinegar
1 teaspoon organic sugar
2 fresh garlic cloves
1/4 cup grated mix of Parmesan, Asiago and Romano cheeses or just a good Parmesan will do
1/4 teaspoon Himalayan salt or sea salt
1 cup fresh basil leaves
1 cup stemmed kale leaves of choice (any variety will do)
1/4 cup olive oil
Mayonnaise, for spreading
24 to 28 slices dense bread or French bread
Marinara or meat sauce of your choice, for topping
24 to 28 slices Havarti cheese

Steps:

  • For the mini meatloaves: Preheat the oven to 350 degrees F. Line baking sheets with parchment or silicone pads.
  • In a large bowl, mix together the beef, sausage, parsley, onions, garlic, eggs, Italian seasoning, salt, pepper, ketchup and breadcrumbs with your hands. Yep, they are the best utensils for the job!
  • Form the meat mixture into approximately 12 to 14 mini loaves (6 to 8 ounces each) on the baking sheets. Bake for 16 to 18 minutes until they reach 165 degrees F. Remove from the oven and let cool slightly before slicing.
  • For the caramelized onions: Heat a saute pan over medium-high heat. Pour in the olive oil, add the onions and then reduce the heat to low. Cook the onions until translucent, stirring occasionally. Add the balsamic and sugar and continue cooking until soft, approximately 2 hours low and slow.
  • For Joy's basil kale pesto: In a food processor, add the garlic, cheese, and salt. Process until almost smooth. Add the basil, kale and olive oil and process until combined. Taste and make any adjustment you may like. Ah, yum! Set aside if you can until ready to use.
  • For the sandwiches: Spread some mayo on each slice of bread. On half of the slices, spread on marinara or meat sauce of your choice. On the other slices, spread on the pesto. Slice the mini meatloaves and layer on the pesto slices. Top with the caramelized onions. Finish with the cheese slices. Close the sandwiches and place on a panini grill until browned and toasty! Slice in half on an angle and enjoy!

1 tablespoon margarine
2 slices bread

Steps:

  • Place meatloaf on a microwave-safe plate; cook in the microwave on High, 30 seconds at a time, until heated through.
  • Melt margarine in a non-stick skillet over medium heat. Place both bread slices in skillet over melted margarine.
