GRILLED MARINATED SWORDFISH STEAKS



Grilled Marinated Swordfish Steaks image

Swordfish, with its firm, lean flesh, is an ideal candidate for grilling. It's not as forgiving as some fatty fish, like tuna and black sea bass, so proceed with caution. If you remove the fish from the fire when the center is still slightly pink, by the time it gets to the table it should be cooked through. A quick marinade of soy sauce, red wine vinegar, rosemary, garlic, coriander and cumin pairs beautifully with the meatiness of the fish, but do not marinate for more than 10 to 15 minutes, or the acid will break down the flesh and leave it mushy (or the flavor will overpower the fish). If you don't have a grill, this works equally well in a broiler. Serve this alongside a colorful pile of Pierre Franey's green bean and tomato salad. It's a summer meal you'll never forget. (Swordfish is on the Monterey Bay Aquarium's seafood watch list, but you can find sustainable options here.)

4 center-cut swordfish steaks, about 6 ounces each, one-inch thick
Salt and freshly ground pepper to taste
3 tablespoons olive oil
2 teaspoons soy sauce
1 tablespoon red-wine vinegar
4 sprigs rosemary or 1 teaspoon dried
1 tablespoon finely chopped garlic
2 teaspoons ground coriander
1 teaspoon ground cumin
2 teaspoons grated lemon rind
1/4 teaspoon red pepper flakes

Steps:

  • Preheat a charcoal grill or broiler, or heat a grill pan.
  • Sprinkle fish with salt and pepper on both sides. Place oil in a flat dish, and add soy sauce, vinegar, rosemary, garlic, coriander, cumin, lemon rind and pepper flakes. Blend well. Place fish steaks in marinade, coat well on both sides, cover with plastic wrap and let stand for 10 to 15 minutes.
  • If the swordfish is to be cooked on a grill (or grill pan), place fish on grill and cook for 3 to 4 minutes. Turn and cook for 3 minutes more. Cook longer if desired. If it is to be cooked under a broiler, place fish on a rack and cook for 3 to 4 minutes on each side. Serve with a string bean salad.

⅓ cup white wine
¼ cup lemon juice
2 tablespoons soy sauce
2 tablespoons olive oil
1 tablespoon poultry seasoning
¼ teaspoon salt
⅛ teaspoon pepper
4 swordfish steaks
1 tablespoon chopped fresh parsley
4 slices lemon, for garnish

Steps:

  • In a glass baking dish, combine the garlic, white wine, lemon juice, soy sauce, olive oil, poultry seasoning, salt and pepper. Mix just to blend. Place swordfish steaks into the marinade, and refrigerate for 1 hour, turning frequently.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill swordfish steaks for 5 to 6 minutes on each side. Garnish with parsley and lemon wedges.

1/2 cup vegetable oil
1/4 cup soy sauce
1 teaspoon lemon rind, grated
1/4 cup fresh lemon juice
2 cloves garlic, crushed
1/2 cup butter, softened
1/2 cup ripe avocado, mashed
1/4 cup plus 1 tbsp fresh lime juice
2 tablespoons fresh flat-leaf parsley, minced
2 garlic cloves, minced

  • Remove steaks from the marinade, reserving the marinade. Place marinade in a small saucepan. Bring to a boil; reduce heat, and simmer 5 minutes. Set aside.
  • Grill steaks over hot coals for 9 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with the reserved marinade. Serve with Avocado Butter. Garnish with parsley sprigs.

I just love the summer evenings, not only the beautiful sunsets on Cape Cod but also the wonderful aromas being created by all of the grills cooking up wonderful dinners in our neighborhood. I often cook an entire dinner on a grill just to keep the heat down in our house and the dirty dishes out of the kitchen. The other evening, we celebrated one of our Sisters' 40th Birthday and she asked for swordfish since it was such a special celebration. This is one of my favorite swordfish recipes, I think you'll love it too.

4 steaks swordfish 8 oz pieces
1/2 cup vegetable oil
1/4 cup soy sauce
1 juice and zest lemon
2 cloves garlic
1 stick butter softened
1 avocado mashed
2 juice and zest fresh limes
2 tbsp fresh, flat leaf parsley minced
1 clove garlic minced
1/2 tso salt

Steps:

  • Place swordfish steaks in glass baking dish in a single layer
  • Combine oil and next 4 ingredients in a small bowl; stir well. Pour marinade mixture over steaks; cover and marinate in the refrigerator for 2 hours, turning occasionally.
  • Prepare Avocado Butter: Combine butter and avocado in a small mixing bowl; beat at medium speed of an electric mixer until smooth. Add the lime juice, zest, parsley, garlic, and salt; stir well. Cover and chill until firm. If desired, shape butter into small bowls before serving.
  • Remove steaks from the marinade, reserving the marinade. Place marinade in a small saucepan. Bring to a boil; reduce heat, and simmer 5 minutes. Set aside.
  • Preheat grill. Grill steaks over medium high heat for 9 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with the reserved marinade (do not over cook).
  • Serve fish off the grill with a ball of Avocado Butter on each steak. Garnish with parsley sprigs.

2 tablespoons freshly squeezed lime juice
1 tablespoon chopped fresh basil
1 garlic clove (minced)

4 5-6oz swordfish steaks (1-inch thick) (Note 1)
4 medium zucchini for side dish (optional, Note 2)
Diced tomato for garnish (optional)

Steps:

  • In a large ziplock bag, combine olive oil, lime juice, basil, garlic, salt and pepper.
  • Add swordfish and coat the fish with marinade. Let it sit for 15 minutes.
  • Meanwhile, prepare the grill. Preheat the grill and oil the grates with oil-soaked paper towel.
  • Grill swordfish over medium high heat about 4-5 minutes per side, or until the internal temperature reads 135°F.
  • Cut zucchini lengthwise and grill alongside with fish, if desired.

2 swordfish filets
1 tablespoon coconut oil
1 tablespoon apple cider vinegar
1 teaspoon honey
juice of 1 lemon
1 garlic clove, minced
pinch of cayenne pepper
pinch of salt and pepper
2 peaches, seed removed, diced
1 avocado, halved and diced
1 garlic clove, minced
1/4 red onion, finely chopped
1/2 jalapeno, finely chopped
handful of cilantro, roughly chopped
juice of 1 lime
salt, to taste

Steps:

  • Place your marinade ingredients in a shallow, mix together. Then put your swordfish in the marinade and flip on both sides to coat. Leave in fridge for a while to marinate. (I left mine for about 3 hours in the fridge, but you could settle for 1 hour).
  • Now make your salsa. Mix all ingredients together in a large bowl. Place in fridge to chill.
  • Once your swordfish has marinated, light your grill to medium heat.
  • When your grill is nice on hot, place your swordfish on the grill to cook for about 3-5 minutes on each side.
  • Top your swordfish off with the salsa and love life. OMG good.

This is an excellent and very flavorful recipe adapted from "The California Heritage Cookbook". I've never had anyone not like it. Any steaky fish should work. The avocado butter is a marvelous accompaniment for any barbecued fish, especially swordfish or salmon.

1 teaspoon lemon peel, grated
1/4 cup fresh lemon juice
1 garlic clove, crushed
2 teaspoons Dijon mustard
1/2 cup salad oil
8 small swordfish steaks or 4 large swordfish steaks, cut in half
lemon wedge, to serve
parsley sprig, to serve
1/2 cup butter, softened
1/2 cup avocado, mashed
4 tablespoons fresh lemon juice
2 tablespoons fresh parsley, minced
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt

Steps:

  • Fish:.
  • Combine first 6 ingredients in a large ziploc bag. Add swordfish steaks. Refrigerate for 1-3 hours, turning a few times.
  • To cook, place fish on a preheated broiler pan. Broil 5-6 minutes on each side or until fish flakes easily when tested with a fork.
  • You may also barbeque this. If you do brush it with the marinade often.
  • Serve hot with avocado butter, lemon wedges and fresh parsley sprigs.
  • Avocado Butter:.
  • In a small mixing bowl beat butter with an electric mixer until soft and creamy. Beat in remaining ingredients.
  • Place in a decorative dish and refrigerate until firm and ready to use. A melon baller works great to scoop out balls to place on the hot fish.
