Vietnamese Noodles with Lemongrass Chicken image

Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON'T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!

600 - 800g / 1.2 - 1.6lb chicken thigh fillets (, skinless and boneless or breast (or pork, beef or any seafood))
1 stalk lemongrass (, white part only, bruised them sliced into pieces easy to pick out later (Note 1))
2 garlic cloves (, finely chopped or minced)
2 tbsp lime juice
2 tbsp fish sauce ((Note 2))
1 tbsp soy sauce ((all purpose or light, NOT dark soy))
2 tbsp brown sugar
1 tbsp vegetable oil
1/4 cup fish sauce ((Note 3))
4 tbsp rice vinegar
2 tbsp white sugar
1/2 cup water
2 garlic cloves (, finely chopped)
1 red birds eye chilli (, finely chopped (Note 4))
3 tbsp lime juice
1/2 tbsp oil
200 g / 7 oz vermicelli noodles (, dried)
2 carrots (, julienned)
2 cucumbers (, julienned (optional: remove seeds))
5 cups iceberg lettuce (, finely sliced)
3 cups bean sprouts
Handful of mint leaves
Handful of cilantro/coriander
Sliced red chilli ((for garnish - optional))
Lime wedges ((to serve - optional but recommended))

Steps:

  • Combine Chicken and Marinade ingredients and set aside for at least 1 hour, up to 24 hours. (Note 4)
  • Heat 1/2 tbsp oil in a fry pan over medium heat (or heat the BBQ). Remove chicken from marinade, shaking off large bits of lemongrass (small bits should fall off during cooking).
  • Place chicken in the pan and cook each side until dark golden brown and chicken is just cooked through - about 6 to 8 minutes in total.
  • Remove from pan, shaking off any remaining bits of visible lemongrass and set aside to rest for 5 minutes. Then slice into thin pieces.
  • Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside for at least 20 minutes.
  • Soak the vermicelli noodles in hot water for 3 minutes (or according to packet instructions), then drain and rinse under cold water to stop the noodles from sticking together.
  • Individual servings: Place noodles in bowl. Top with vegetables and herbs, and sliced chicken pieces. Drizzle with a few tablespoons of Nuoc Cham Sauce (be generous, ~ 4 tbsp per serving) and serve with lime wedges.
  • DIY (my preferred way): Place chicken, vegetables, herbs, noodles and sauce in separate bowls / piled on platters. Then let everyone make their own bowls!

2 tablespoons canola oil
2 tablespoons finely chopped lemongrass
1 tablespoon lemon juice
2 teaspoons soy sauce
2 teaspoons light brown sugar
2 teaspoons minced garlic

1 ½ pounds chicken thighs, or more to taste, pounded to an even thickness

Steps:

  • Mix canola oil, lemongrass, lemon juice, soy sauce, brown sugar, garlic, and fish sauce together in a mixing bowl until the sugar is dissolved; add chicken and turn to coat in the marinade.
  • Marinate chicken in the refrigerator for 20 minutes to 1 hour.
  • Preheat grill for medium heat and lightly oil the grate.
  • Remove chicken thighs from the marinade and shake to remove excess marinade. Discard the remaining marinade.
  • Grill chicken until no longer pink in the center and the juices run clear, 3 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Marinade: Grilled Chicken With Lemongrass & Chilli image

We were on holidays at Surfers Paradise in Queensland Australia. We were out at different restaurants every night. One night we tried Vietnamese. My husband ordered 'Grilled Chicken with lemongrass & Chilli' (Ga nuong xa ot). It was quite a surprise when I sampled his chicken, it was mouth-watering. When we got back home I did some research and attempted to make it. Although I didn't find the exact recipe this version is still yummy. I used chicken thigh fillets instead of breast fillets because the meat is juicer and less fibrous (the restaurant served their dish using thighs). They also used the marinade on Beef, Pork, Prawns, Scallops, Squid, Fish Fillets and Vegetables. To prepare the lemongrass, trim and discard the roots. Use a vegetable peeler to whittle the stalks into thin partial slices. I used half freshly whittled lemongrass and half grated lemon grass. I taste the recipe before I placed the meat in and it's so yummy that I would also use it as a dipping sauce.

1/4 cup lemongrass, see above
6 slices lemon zest, strips fresh (optional)
3 garlic cloves, minced crushed
2 -3 shallots, minced
2 red chilies, minced
2 teaspoons light brown sugar (more or less, to taste)
3 tablespoons fish sauce (nam pla)
3 tablespoons lime juice, freshly squeezed
2 teaspoons hot sauce (Vietnamese) or 2 teaspoons Tabasco sauce
1 kg fish fillets or 1 kg vegetables

Steps:

  • Combine all ingredients in a large bowl.
  • To prepare the chicken, cut it 7 cm by 7 cms and cut several small incisions across the chicken to soak up the marinade.
  • Combine marinade and meat (or vegetables) then toss.
  • You can either place it in a zip lock bag or just use a bowl with cling wrap.
  • Refrigerate for about 2 hours, turning occasionally. (I marinated mine overnight).
  • Remove meat from the marinade and grill until cooked and brown. Discard leftover marinade (if there are any of the ingredients left on the meat or vegetables as it may taste bitter if you decide to leave them on).
  • Traditionally it's grilled on an outdoor grill so that the coals are white-hot but I used our barbeque.
  • Serve on a bed of lettuce with Vietnamese fish sauce to dip. Side dish of rice or salad.

2 tablespoons minced shallot
2 tablespoons gluten-free tamari or soy sauce
1 1/2 tablespoons granulated sugar
1 1/2 tablespoons Asian fish sauce
1 fat or 2 thin (1 oz) lemongrass stalks (peeled and minced*, or 2 teaspoons grated lemon zest, preferably organic)
1 tablespoon mild vegetable oil
1/2 teaspoon Asian chile sauce
1/2 teaspoon kosher salt
1 1/2 pounds skinless, boneless chicken thighs
1 1/2 cups water
1 1/2 tablespoons fresh ginger (minced)
1/8 teaspoon kosher salt
1 cup uncooked brown basmati or jasmine rice
2 teaspoons gluten-free tamari or soy sauce
Chopped scallions (for garnish)

Steps:

  • In a medium bowl, mix the shallot, tamari, sugar, fish sauce, lemongrass, oil, chile sauce, and salt. Cut any excess fat from the chicken. Add the chicken to the bowl and toss to coat. Let the chicken marinate while preparing the rice.
  • In a small saucepan, bring water, ginger, and salt to a boil. Add the rice and return to a boil. Reduce the heat to low, cover, and cook until tender, 15 to 30 minutes. Turn off the heat and let stand at least 5 minutes. Fluff the rice with a fork, then mix in the tamari.
  • Meanwhile, prepare a grill for direct-heat cooking over high heat. Clean and oil the grill grates.
  • Remove the chicken from the marinade and place on the grill rack, cover, and cook until springy to the touch and cooked through, with an internal temperature of 165°F (74°C), 4 to 7 minutes per side.
  • Divvy the rice among 4 warmed plates. Top with the chicken, sprinkle with scallions, and serve immediately.

This Vietnamese Lemongrass Chicken recipe is made with the best citrusy lemongrass marinade, and can be grilled, baked or sautéed.

1/4 cup lime juice, plus extra lime wedges for serving
3 tablespoons fish sauce
2 tablespoons maple syrup (or brown sugar)
2 tablespoons avocado oil (or any neutral-flavored oil)
1 tablespoon low-sodium soy sauce
4 small garlic cloves
2 stalks lemongrass, tender white parts only, roughly chopped (see below)
1 medium shallot, peeled and halved (or half of a small red onion)
2 pounds boneless chicken breasts or thighs, cut into 1-inch pieces

Steps:

  • Combine the lime juice, fish sauce, maple syrup, oil, soy sauce, black pepper, garlic, lemongrass and shallot in a blender or food processor. Puree until smooth.
  • Combine the chicken and marinade in a large bowl. Toss until the chicken is evenly coated. Cover the bowl and let the chicken marinate for 30 minutes.
  • Preheat the grill to medium-high heat. (If using wooden skewers, soak them in water for 15 minutes before using.) Thread the chicken evenly onto the skewers.
  • Once the grill is hot, place the chicken kabobs evenly on the grill. Cook for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through (no longer pink on the inside).
  • Transfer the kabobs to a clean plate, and loosely tent with aluminum foil. Let the chicken rest for at least 5-10 minutes.
  • Then serve warm while the chicken is hot and juicy, sprinkled with an extra squeeze of fresh lime juice (plus some thinly-sliced green onions) if desired. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

8 whole skinless, boneless chicken thighs
1 cup Private Selection Spicy Lemongrass Marinade
red chili pepper, sliced into thing rings, (for garnish, optional)
fresh cilantro leaves, (for garnish)
lime wedges, (for serving)

Steps:

  • Place chicken thighs and marinade in a large ziploc bag.
  • Close the ziploc bag and massage the marinade around the chicken.
  • Place in the fridge for 2 hours.
  • When ready to grill, heat an outdoor grill to medium-high.
  • Remove chicken from bag and discard ziploc bag and marinade.
  • Transfer chicken to grill and cook for about 4 minutes per side, or until golden brown.
  • Remove from grill and let rest about 5 minutes.
  • Garnish with chilies and cilantro.
  • Serve with lime wedges.
  • If cooking on a grill pan, heat 1/2 tablespoon of olive oil in a grill pan over medium-high heat. Cook chicken thighs for about 3 to 4 minutes per side, or until golden brown.

6 large stalks lemongrass
4 teaspoons Asian fish sauce (nam pla)
4 teaspoons soy sauce
4 teaspoons sugar
4 teaspoons minced garlic
1 tablespoon fresh lemon juice
1/4 cup vegetable oil
4 boneless, skinless whole chicken breasts, (about 4 pounds), split
Stir-Fried Garden Vegetables, for serving (optional)

Steps:

  • Trim lemongrass to 5 inches from base; remove and discard bad outer leaves; cut remaining lemongrass into 1/2-inch lengths. In a food processor, process lemongrass to a hairlike texture. Place in a bowl; add remaining ingredients except chicken.
  • Remove tenderloins (small piece of meat attached to each breast) from chicken. Pound breasts to 1/8 inch thick; add, with tenderloins, to marinade, turning to coat. Marinate, refrigerated, 30 minutes to 8 hours.
  • Brush a grill or grill pan with oil; heat until medium hot. Grill chicken until cooked through and juices run clear when pierced, 3 to 4 minutes on each side. Serve.

1 1/2 lbs . boneless skinless chicken breasts
Fresh cilantro (for garnish)
Lime wedges (for garnish)
Fresh green onions (sliced, for garnish)
MAKE THE MARINADE:
1/4 cup green onions (sliced)
1/4 cup fresh lemongrass (sliced)
2 Tbsp lime juice
2 Tbsp vegetable oil
Splash of soy sauce
1 Tbsp fresh ginger (grated or finely minced)
5 cloves fresh garlic (minced)
MAKE THE TERIYAKI SAUCE:
1/2 cup soy sauce
1/2 cup brown sugar
1/4 cup cider vinegar
1 tsp garlic powder
1/2 tsp ground ginger
1/2 tsp salt
1/4 tsp black pepper
1 tsp sriracha
2 tsp cornstarch

Steps:

  • Add marinade ingredients to food processor or blender and pulse until a thin paste forms. To a bowl, pour marinade over trimmed chicken breasts, massage it into chicken. Cover and let sit for about 10-15 minutes.
  • Add teriyaki sauce ingredients in a mixing bowl and whisk to combine.
  • To a saucepan, pour in prepared teriyaki sauce and bring to a boil. Once it boils, reduce heat to a simmer and let the sauce simmer until slightly thickened. Set aside for glazing.
  • Preheat outdoor grill or indoor grill pan over MED heat (brush with a little vegetable oil right before adding meat), and grill chicken breasts for about 6-7 minutes per side, until meat is cooked through and juices run clear.
  • The last minute or so of cooking, brush chicken with teriyaki glaze.
  • Set chicken aside to rest for 10 min.
  • Brush with teriyaki glaze once more before serving.
  • Serve garnished with sliced green onions, minced cilantro, lime wedges and/or sesame seeds.

VIETNAMESE GRILLED LEMONGRASS CHICKEN THIGHS



Vietnamese Grilled Lemongrass Chicken Thighs image

1½ pounds boneless chicken thighs ((with or without skin))
¼ cup cilantro ((minced))
1 lime ((optional for serving))
4½ tablespoons lemongrass ((about 2 stalks))
2½ tablespoons fish sauce
1½ tablespoons garlic ((smashed and minced))
1½ tablespoons shallot ((finely minced))
1½ tablespoons vegetable oil
1 tablespoons light brown sugar
¼ teaspoon ground black pepper
4 ounces carrot ((peeled and cut into thin strips))
4 ounces daikon ((peeled and cut into thin strips))
¼ teaspoon salt
½ teaspoon plus 6 tablespoons sugar ((divided))
½ cup white vinegar
½ cup warm water

Steps:

  • For the lemongrass, trimmed off the bottom end and the mostly green upper part of the stalks. Peel off a few tough outer layers. Pound the lemongrass with a rolling-pin or meat tenderizer for a couple of times. Finely minced.
  • In a small bowl, combine the marinade ingredients. Transfer to a large Ziploc bag.
  • Rinse and dry the chicken with paper towels. Place them in the Ziploc bag with the marinade and coat the chicken really well. Seal the bag and transfer to the fridge. Marinate for 24 hours.
  • For the pickled vegetables, in a medium bowl, combine the carrot and daikon. Sprinkle with ¼ teaspoon of salt and ½ teaspoon of sugar. With your hands, mix everything together until the vegetables are soften, about 3 minutes. Rinse under cold water and drain. Transfer to an airtight glass container.
  • In a medium heatproof bowl, combine the remaining sugar, white vinegar, and warm water. Stir and mix until the sugar has dissolved. Pour over the vegetables. Let it brine in the fridge for at least 1 hour before using.
  • 30 minutes before grilling, remove the chicken from the fridge. Wipe off the marinade from the chicken. Discard the remaining marinade. Place the chicken thighs on a plate.
  • Preheat the grill over medium heat, lightly grease the grill with oil. Grill the chicken, skin side down for about 2 minutes, and then rotate the chicken 90 degrees to create the crosshatch pattern. Grill the chicken for another 2 - 3 minutes. Flip the chicken and grill for another 4 - 5 minutes with lid on or until cooked through. Transfer to a large plate. Cover with foil and let it sit for 5 minutes. Transfer the chicken to serving plates. Sprinkle with minced cilantro. Serve with steamed white rice, pickled vegetables and lime (if using).

Add oil, soy sauce, salt, sugar and Five-spice and optional chili garlic sauce and process into a paste, scraping down sides as needed. Process for a couple of minutes, until lemongrass is really chopped up finely and it looks like a paste. See photo.
  • Coat all sides of the chicken with the paste. You can do this ahead and refrigerate up to 48 hours. Or grill right away.
  • Oil the grill well. Grill chicken over medium-high, or medium heat, until deep grill marks appear, 3-4 minutes. The grill marks help naturally release the chicken from the grill, so wait for them. Do not move chicken around too much or you will lose the lemongrass. I like to use a thin metal spatula to flip. Then cook 3 more minutes, check for grill marks, then lower heat way down, cover with lid, and cook all the way through. You can also finish in a 350 F oven, uncovered.

  • Toast coriander seeds and cumin seeds in a dry small skillet over medium heat, shaking often, until spices are very fragrant and slightly darkened in color, about 3 minutes. Transfer to a spice mill or mortar and pestle and let cool. Finely grind, then transfer spice mix to a small bowl.
  • Place chicken, skin side up, on a cutting board. Using your palms, press firmly on breastbone to flatten breast; you may hear a crack. This means you’re doing it right. Set chicken, skin side up, on a large rimmed baking sheet. Season generously on both sides with salt, then sprinkle spice mix all over, getting in every nook and cranny. (You may have a little spice mix left over.) Tuck wings underneath the breast. Chill, uncovered, at least 4 hours and up to 2 days.
