4 salmon fillets (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 medium onion, sliced
4 garlic cloves, sliced
4 fresh dill sprigs
1 tablespoon minced fresh basil
1 medium lemon, sliced

Steps:

  • Prepare campfire or grill for medium heat. Spread butter in the center of each of 4 pieces of a double thickness of foil (about 12 in. square). Place 1 salmon fillet in the center of each; sprinkle with salt and pepper. Top with onion, garlic, dill, basil and lemon. Fold foil around fillets; seal., Place packets on a grill grate over a campfire or grill. Cook until fish just begins to flake easily with a fork, 8-10 minutes. Open carefully to allow steam to escape.

1 1/2 pound side of salmon (skin off or on)
1 small bunch of fresh dill (divided)
1 medium lemon (plus additional for serving)
2 tablespoons melted unsalted butter (or canola oil or olive oil)
3 cloves minced garlic
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove the salmon from the refrigerator and let stand at room temperature for 10 minutes while you prepare the other ingredients. Preheat an outdoor grill to medium (about 375 degrees F). Line a rimmed baking sheet (large enough to hold your piece of salmon) with a large piece of aluminum foil. If you prefer your food not to touch the foil directly, lay a piece of parchment paper on top (be sure none of it pokes out when the packet is sealed).
  • Lightly coat the foil with baking spray. Then, arrange a few sprigs of dill down the middle. Cut the lemons into thin slices and arrange half of the slices down the middle with the dill. Place the salmon on top.
  • Drizzle the salmon with the melted butter. Sprinkle with the salt and pepper. Scatter the garlic over the top, then lay a few more springs of dill and the remaining lemon slices on top of the salmon. Chop a tablespoon or so of the remaining dill and reserve for serving.
  • Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed. If your piece of foil is not large enough, place a second piece on top and fold the edges under so that it forms a sealed packet. Leave a little room inside the foil for air to circulate.
  • Carefully slide the wrapped salmon onto the grill. Close the grill and grill the salmon for 14-18 minutes, until the salmon is almost completely cooked through at the thickest part. The cooking time will vary based on the thickness of your salmon side. If your piece is thinner (around 1-inch thick) check several minutes early to ensure your salmon does not overcook. If your piece is very thick (1 1/2 inches or more), it may need longer.
  • Open the grill, and carefully open the foil so that the top of the fish is completely uncovered (be careful of hot steam). Close the grill, and continue grilling until the fish is cooked through completely, about 3 minutes more. Watch the salmon closely to make sure it doesn't overcook. Remove the salmon from the grill (I like to use the foil to lift it right back on top of the baking sheet). If it still appears a bit underdone, you can wrap the foil back over the top, and let it rest for a few minutes. Do not let it sit too long-salmon can progress from "not done" to "over done" very quickly. As soon as it flakes easily with a fork, it's ready.
  • To serve, cut the salmon into portions. Remove the topmost sprigs of dill and discard. Sprinkle with freshly chopped dill and top with an extra squeeze of lemon as desired.

2 tablespoons vegetable oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 medium lemon, cut into 1/8-inch slices (about 12)

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Place salmon piece on center of each sheet. Brush 1/2 tablespoon oil over both sides of each salmon piece. Sprinkle each piece with 1/8 teaspoon salt and 1/8 teaspoon pepper. Place about 3 lemon slices flat or overlapping on each piece.

Salt (to taste)
A generous pinch of Black Pepper
4 Fresh Small Dill Sprigs
4 Slices Lemon Dill Compound Butter (, see note 2)
4 Lemon Wedges (, optional)

Steps:

  • Heat your grill.
  • Place one salmon fillet onto a sheet of aluminum foil. Season it with salt and black pepper and top with 1 slice of lemon dill compound butter (see note 2) and a sprig of fresh dill. Wrap well so there are no holes. Repeat with the rest of the fillets.

1.25 pounds skin-on salmon fillet
1 lemon, sliced into thin rounds
1/4 cup unsalted butter, melted
1/4 cup honey
3 tablespoons lemon juice (from about 1 lemon)
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2 teaspoons finely chopped fresh parsley, optional for garnishing

Steps:

  • Preheat outdoor grill to medium-high heat. Alternatively, preheat oven to 425F.
  • Place salmon on a sheet of foil (with the longer side parallel with the longer side of the sheet pan) with the skin-side down. Raise the edges of the foil up about 2 inches (or enough so that when you pour the buttery mixture over the top it will be contained in the foil).
  • Nestle lemon slices underneath the salmon, spaced evenly around the fillet; set aside.
  • To a microwave-safe glass measuring cup or bowl, add the butter and heat on high power to melt, about 1 minute.
  • Stir in the honey and lemon juice. Pour or spoon about three-quarters of the mixture over the salmon; reserve remainder.
  • Evenly season salmon with salt and pepper.
  • Seal up the foil. Likely you will need to add another sheet of foil on top in order to seal it. Crimp or pinch the top and bottom pieces of foil together; get it as air-tight as possible but it doesn't have to be perfect.
  • If you have time, set aside to marinate for about 10 to 15 minutes (enhanced flavor).
  • Place foil pack on the grill and cook for about 7 minutes, or until done.
  • Optionally, if you want additional browning on the top of the salmon, set your oven to Hi broil.
  • Open the foil pack or remove the top piece of foil so the salmon is exposed but keep the edges raised to contain the buttery mixture.
  • Spoon the reserved buttery mixture over the salmon, if desired. Use your judgment and if there's already lots of juice you don't need to add it because you don't want it to start leaking. If you have extra buttery mixture, it's great served over the finished dish.
  • Broil salmon for about 5 minutes, or until salmon is as golden as desired. Tip - You don't have to broil on the top rack, you can use the second rack, and while it will take longer, there's less chance of it burning. Keep a close eye on it because all broilers are different and you don't want the salmon to burn. Exact broiling time will depend on the size and thickness of the salmon, climate and oven variances, and personal preference.
  • Optionally garnish with parsley and serve immediately.

1 red onion, halved lengthwise and very thinly sliced
1 lemon, very thinly sliced, seeds removed
1 clove garlic, sliced
Kosher salt and freshly ground black pepper
One 1 1/2-pound piece center-cut skinless salmon fillet
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon dried Italian seasoning

Steps:

  • Prepare a grill for medium-high heat.
  • Toss the onion, lemon and garlic with a generous pinch each of salt and pepper. Spread the mixture in the center of a 24-inch-long piece of heavy-duty foil. Put the salmon on top of the onion mixture, drizzle with the butter and sprinkle with the Italian seasoning and a generous amount of salt and pepper.   • Cut the salmon into 4 equal pieces and transfer to 4 plates. Evenly spoon the onions, lemons and collected juices over the salmon.

Juice of one lemon
Salt, pepper to taste

  • wash salmon and remove any skin if you don't like it. Lay the salmon on a suqare piece of aluminum foil with enough excess on each side to be able to fold as a handle. mix Hellman's Mayonaise and the juice of one lemon in a small bowl salt and pepper the salmon then with a spoon, dab the mayonaise and lemon mixture on the salmon and spread it until the fish is completely covered. (You will enjoy it if it is liberally spread on the fish) fold the foil into a package with the excess as a handle. Place on the grill (white hot coals) for 5 minutes, the set aside, open package, turn salmon over and pour remaining mayonaise and lemon juice on the uncooked side. Return to grill for another 3-4 minutes or until fish is flakey. It will be tender, tasty and MOIST!
