This grilled lemon-garlic chicken recipe is easy to make and full of flavor. It is a family favorite. Nothing like a bottle from the store; 100 times better.

1 cup olive oil
⅔ cup lemon juice
6 cloves garlic, minced
1 tablespoon onion powder
1 teaspoon ground black pepper
½ teaspoon salt
1 pound skinless, boneless chicken breasts, cut into strips

Steps:

  • Combine oil, lemon juice, garlic, onion powder, pepper, and salt in a large, gallon-sized, zip-top bag. Seal and shake well. Add chicken and shake again. Place in the refrigerator to marinate for at least 2 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place the chicken on the grill over indirect heat, baste with marinade, and cover. Grill for 10 minutes. Baste again, then turn over and baste the other side. Cover and continue to grill until no longer pink in the centers and juices run clear, about 10 minutes more.

Grilled Dijon Chicken Skewers with leeks, potatoes and Rosemary. A delicious, healthy meal perfect for summer nights on the patio!

8 oz small fingerling potatoes
2 small leeks ( 1 inch-1 ½ inch in diameter)
1 lb chicken boneless, skinless Chicken breast

4 T dijon mustard
4 T olive oil
3 garlic cloves- grated or finely minced
1 T chopped fresh rosemary
½ teaspoon salt and pepper

Steps:

  • Soak Skewers in hot water for 30 minutes. Blanch potatoes in a pot of salted simmering water, until fork tender, for about 15 minutes ( depending on the size). Drain.
  • Cut leeks into disks about ¾ inch thick and set leeks in a saute pan with ½ inch of water (coming up half way up the sides of the leeks) bring to a boil, turn heat down and simmer on low for 5 minutes, until tender, and vibrant green. Drain, carefully, so they stay intact.
  • Cut chicken into 1 inch cubes and generously salt and pepper.
  • In a small bowl mix mustard, oil, minced garlic and rosemary, salt and pepper until incorporated.
  • Preheat grill to med high. Assemble Skewers- place chicken, potato, leek ( through the side, not middle) a lemon slice folded in half, and repeat, chicken, potato, leek and finish with chicken on the end. Should have enough to make 8 skewers total. Brush each sewer with the dijon marinade on all sides, using up all the marinade.
  • On medium high grill , grease with spray oil, and place skewers on the grill. Cover and let cook about 4 minutes, or until there are good grill marks. Turn over. Turn heat to medium, cover and cook 4 more minutes. Rotate and grill the other two sides of the chicken, for a few minutes. Turn heat off and let chicken rest on the grill, covered, allowing it to continue to cook through until its done, about 5 minutes. Place on a platter and scatter lemon slices and rosemary sprigs around.

⅓ cup lemon juice
¼ cup olive oil
1 tablespoon Dijon mustard
2 large cloves garlic, finely chopped
2 tablespoons finely chopped red bell pepper
½ teaspoon salt
¼ teaspoon ground black pepper
4 skinless, boneless chicken breast halves

Steps:

  • In a bowl, mix the lemon juice, olive oil, Dijon mustard, garlic, red bell pepper, salt, and pepper. Set aside 1/4 cup of the mixture to use for basting. Place chicken in the bowl, and marinate at least 20 minutes in the refrigerator.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Drain and discard marinade from the bowl, and place chicken on the grill. Cook 6 to 8 minutes on each side, until juices run clear, basting occasionally with the reserved marinade.

1 lemon
3 garlic cloves, finely grated
1 1/2 teaspoons kosher salt
3/4 teaspoon smoked paprika
3 tablespoons olive oil, plus more for grill
3 boneless, skinless chicken thighs (about 1 pound), halved
2 leeks (about 8 ounces), quartered, white and light green parts cut into 3" pieces
1 large red bell pepper, cut into 2"-thick strips
1/2 pound baby new potatoes, halved
1 1/2 cups parsley leaves with tender stems
Special Equipment
A flat grill basket (about 13 1/2 x 8 1/2")

Steps:

  • Prepare a grill for medium heat. Zest 2 tsp. lemon zest off lemon and transfer to a large bowl. Cut off ends, then squeeze 1 Tbsp. lemon juice into bowl with zest. Slice remaining lemon into thin rounds.
  • Whisk garlic, salt, paprika, and 3 Tbsp. oil into lemon juice and zest. Add lemon slices, chicken, leeks, bell pepper, and potatoes and toss to coat.
  • Brush wires of grill basket with oil, then add chicken mixture. Arrange in an even layer and close basket. Place grill basket on grill, cover, and cook, turning once halfway through, until chicken is fully cooked through and vegetables are lightly charred, 20-25 minutes.
  • Transfer chicken mixture to a large bowl, add parsley, and toss to combine.

Juice of 1 lemon (approximately 3 tablespoons)
2 to 3 tablespoons olive oil
1 teaspoon minced garlic (about 2 medium cloves)
1 teaspoon salt (I use coarse, kosher salt)
1/4 teaspoon pepper
1/2 teaspoon dried oregano
1 to 2 pounds chicken breasts (see note)

Steps:

  • Whisk together all the marinade ingredients.
  • Place chicken in a ziploc bag or shallow dish and pour the marinade over chicken, tossing to coat the chicken evenly with the marinade. Refrigerate for at least 4 hours but up to 18 hours.
  • Preheat grill to medium- or medium-high (I use about 375 degrees on my pellet grill) and cook for 3-4 minutes on each side until an instant read thermometer registers 165 degrees at the thickest part of the chicken. (The chicken can also be cooked in a skillet on the stove or broiled in the oven.)

Baking pieces of chicken is one of the easiest ways to put a meal on the table for your family. This mustard-glazed chicken is roasted on a bed of sliced onions, leeks and garlic that you can serve alongside it.

2 cups thinly sliced onions
1 cup thinly sliced and washed leek, white and light green part only
4 cloves garlic, thinly sliced
3 tablespoons extra-virgin olive oil, divided
2 teaspoons fresh thyme leaves
¼ teaspoon salt
2 1/2-3 pounds bone-in chicken pieces (thighs, drumsticks and/or breasts), skin removed, trimmed (see Tip)
¼ cup Dijon mustard
2 teaspoons minced shallot
1 ½ teaspoons chopped fresh rosemary
1 teaspoon reduced-sodium soy sauce
¾ teaspoon freshly ground pepper

Steps:

  • Preheat oven to 400F.
  • Toss onions, leek, garlic, 2 tablespoons oil, thyme and salt in a large bowl until the vegetables are well coated. Spread the mixture in a nonreactive 9-by-13-inch baking dish (see Tip). Place the chicken pieces on the vegetables. Bake for 10 minutes.
  • Whisk mustard, shallot, rosemary, soy sauce and pepper in a small bowl; gradually whisk in the remaining 1 tablespoon oil.
  • After 10 minutes, brush the chicken with the mustard glaze. Continue baking until an instant-read thermometer inserted into the thickest part of a leg or breast (without touching bone) registers 165 degrees F, 30 to 45 minutes more. Serve the chicken with the vegetables.
