CEDAR PLANK-GRILLED SALMON WITH GARLIC, LEMON AND DILL

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill image

Cooking a lemon and dill seasoned whole salmon fillet on a smoldering cedar plank adds a touch of smoke to a beautiful fish!

Provided by USA WEEKEND Pam Anderson

Categories     Seafood     Fish     Salmon

Time 1h5m

Yield 8

Number Of Ingredients 7

1 (3 pound) whole filet of salmon, skin on, scored (up to but not through the skin) into serving pieces
6 tablespoons extra-virgin olive oil
4 large garlic cloves, minced
¼ cup minced fresh dill
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon lemon zest, plus lemon wedges for serving

Steps:

  • Soak an untreated cedar plank (or planks) large enough to hold a side of salmon (5 to 7 inches wide and 16 to 20 inches long) in water, weighting it with something heavy, like a brick, so it stays submerged 30 minutes to 24 hours.
  • When ready to grill, either build a charcoal fire in half the grill or turn grill burners on high for 10 minutes. Meanwhile, mix oil, garlic, dill, salt, pepper and lemon zest; rub over salmon and into scored areas to coat.
  • Place soaked cedar on hot grill grate, close lid, and watch until wood starts to smoke, about 5 minutes. Transfer salmon to hot plank, move salmon off direct charcoal heat or turn burners to low, and cook covered until salmon is just opaque throughout (130 on a meat thermometer inserted in the thickest section) 20 to 25 minutes or longer, depending on thickness and grill temperature. Let sit 5 minutes; serve with lemon wedges.

FISH GRILLED ON FENNEL OR DILL

Fish Grilled On Fennel Or Dill image

Provided by Mark Bittman

Categories     dinner, main course

Time 30m

Yield 4 servings

Number Of Ingredients 6

4 to 6 fennel or dill stalks, each at least 6 inches long
4 6-ounce halibut fillets or 1 1/2 pounds of any white fish fillet, like striped bass, monkfish or cod
Salt and cayenne pepper to taste
1 teaspoon fennel or dill seeds
1 lemon
2 teaspoons extra virgin olive oil

Steps:

  • Preheat a charcoal or gas grill (for broiling instructions, see the variation below). The fire should be quite hot and the grill rack should be about 4 inches from the heat source.
  • When the grill is ready, make a bed of the fennel or dill stalks. Sprinkle the fish lightly with salt and pepper, and lay it (skin side down, if there is a skin side) directly onto the fennel or dill. Close the grill if possible, and cook, without turning, until the fish is done; it will be just about opaque all the way through and offer no resistance to a thin-bladed knife in about 10 minutes.
  • While the fish is cooking, mince or grind the fennel seeds. Cut about 1 inch off each end of the lemon, and juice those pieces; slice the remaining lemon thinly.
  • When the fish is done, remove it from the grill, leaving as much of the stalks behind as possible (some of the burned fronds will adhere to the fish; they are fine to eat in tiny quantities). Sprinkle the fish with the fennel or dill seeds, then decorate it with the lemon slices. Drizzle with lemon juice and olive oil, and serve.

GRILLED SWORDFISH WITH LEMON, DILL & CUCUMBER SAUCE

Grilled Swordfish with Lemon, Dill & Cucumber Sauce image

Delicate and light, this sauce has a loose texture that's somewhere between a vinaigrette and a salad. It complements most any grilled fish, so feel free to substitute salmon, tuna or halibut steaks for the swordfish.

Provided by Maria Helm Sinskey

Categories     Main Course

Yield Yields 2 cups sauce.

Number Of Ingredients 11

1 medium English cucumber, peeled and finely diced to yield 2 cups
2 Tbs. fresh lemon juice
1/2 tsp. granulated sugar
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
2 Tbs. minced fresh dill
1 Tbs. minced shallot
2 tsp. minced fresh mint
1-1/2 Tbs. olive oil; more for brushing the grill
Six 1-1/4-inch-thick swordfish steaks (6 to 8 oz. each)
1 tsp. kosher salt

Steps:

  • Put the cucumber in a medium bowl. Add the lemon juice and the sugar, toss to combine, and season with salt and pepper to taste. Stir in the olive oil, dill, shallot, and mint, and add more salt and pepper if necessary. Let sit for 30 minutes to allow the flavors to marry. Taste for seasoning again just before serving and adjust if necessary.
  • Clean and oil the grates on a gas grill and heat the grill to medium high, or prepare a medium-hot charcoal fire.
  • Meanwhile, generously coat both sides of the swordfish with the oil and season both sides with salt. Let the fish sit at room temperature for 15 minutes (while the grill heats). Grill the swordfish steaks directly over the heat source (covered on a gas grill, uncovered on a charcoal grill), without touching, until they have good grill marks, 2 to 4 minutes. Flip the steaks and grill until the second sides have good grill marks and the fish is done to your liking, another 2 to 4 minutes. (Check for doneness by slicing into one of the thicker pieces.) Serve immediately, topped with the cucumber sauce.
