SIMPLE GRILLED LAMB CHOPS

Provided by Sam Sifton

Categories     dinner, easy, quick, weekday, main course

Time 30m

Yield Serves 6

Number Of Ingredients 4

6 to 8 loin lamb chops
4 cloves garlic, peeled and smashed
Kosher salt
Freshly ground black pepper to taste

Steps:

  • Preheat a grill or cast-iron grill pan over high heat. If using a charcoal grill, build the fire so that one side of the grill has more coals than the other - a "hot" side. If using a grill pan, preheat the oven to 400 degrees.
  • Rub the lamb chops with the garlic and season aggressively with salt and pepper. If grilling, place on the hot side for 2 minutes per side. Move the chops to the cooler side of the grill to cook through, an additional 6 to 7 minutes. If using a grill pan, grill one side for 2 minutes to sear, then turn over the chops and place the pan in the oven for 5 to 6 minutes. Remove from the grill or oven and allow to sit 5 minutes before serving.

HOW TO COOK LAMB CHOPS IN THE OVEN

How To Cook Lamb Chops In The Oven image

The complete guide for how to cook lamb chops in the oven! This lamb chop recipe (+ simple marinade!) is the best way to make perfect baked lamb chops at home.

Provided by Maya Krampf

Categories     Main Course

Time 55m

Number Of Ingredients 9

6 tbsp Olive oil ((divided into 5 tbsp and 1 tbsp))
1 tbsp Lemon juice
6 cloves Garlic ((crushed))
1 tbsp Fresh rosemary ((chopped))
1 tbsp Fresh thyme
1 tsp Dried oregano
2 tsp Sea salt
1/2 tsp Black pepper
8 large Lamb chops ((~3.5 pounds))

Steps:

  • In a large bowl, whisk together 3 tablespoons of olive oil with the remaining lamb chop marinade ingredients: lemon juice, crushed garlic, rosemary, thyme, oregano, salt, and pepper. Add the lamb chops. Turn them to coat in marinade and press the marinade into the chops. Cover with plastic and marinate at room temperature for 30-60 minutes. (Alternatively, marinate in the refrigerator for a few hours or overnight, but let lamb chops sit at room temperature for 30 minutes before cooking.)
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a tablespoon of olive oil in a large cast iron grill pan over medium-high heat for about 2 minutes, until screaming hot and shimmering. Add the lamb chops in a single layer, fat side down. Sear for 2 minutes, until browned on the bottom, then flip and sear for 2 more minutes until browned on the other side. If making 8 lamb chops as written, you'll need to do a batch of 4 on the stovetop and then the oven (below), then repeat stovetop and oven with the remaining 4.
  • Immediately transfer the skillet to the preheated oven. Roast lamb chops for about 2-5 minutes for medium-rare to medium doneness, or about 5-8 minutes for medium-well to well done. (However, cooking above medium is not recommended, as it may taste gamey.)
  • Remove lamb chops from the oven and transfer to a plate (do not let them sit in the pan or they will overcook).
  • Repeat the sear and oven combination with the remaining lamb chops. (It's best to wipe out the pan in between batches.)
  • Tent with foil and rest for 5 minutes per serving. (Temperature will rise an additional 5-10 degrees.)

GARLIC & HERB GRILLED LAMB CHOPS (VIDEO)

Garlic & Herb Grilled Lamb Chops (video) image

Juicy grilled lamb chops seasoned with garlic and fresh herbs! Plus, a creamy tzatziki sauce for serving!

Provided by tatyanaseverydayfood

Categories     Dinner

Number Of Ingredients 15

1 rack of lamb
coarse salt and ground black pepper
2 tbsp olive oil
1 tbsp fresh rosemary (finely chopped)
1 tbsp fresh thyme leaves
4 to 5 garlic cloves (pressed)
2 to 3 tbsp balsamic vinegar
1/4 cup red wine
1 1/2 cups greek yogurt (higher fat content)
1 English cucumber (or 4 cocktail cucumbers)
4 garlic cloves (pressed)
2 tbsp olive oil
2 tbsp fresh chopped dill
1 tbsp fresh chopped mint
salt and pepper (to taste)

Steps:

  • This recipe is great for scaling up for more servings! Increase the marinade ingredients for each additional rack. First, carefully portion the rack of lamb into single chops using a large, sharp knife. Turn the rack towards yourself to see the bones for easier portioning. Place the portioned chops into a casserole dish. Watch my video recipe to see how it's done.
  • Drizzle a the olive oil over the lamb chops, then season generously with coarse salt and black pepper; I recommend using Maldon salt flakes or kosher salt. Season both sides of the lamb chops. Next, sprinkle the fresh herbs over the chops. Gently press the pressed garlic into the chops so it sticks better to the meat. Drizzle the vinegar and wine over the chops and turn them to ensure they are well coated. Marinate the chops for 30 minutes in the refrigerator, turning after 15 minutes to marinate the meat evenly.
  • While the lamb chops are marinating, prepare your choice of dipping sauces and side dishes. Check out my recommendations above in my recipe post! Once the lamb is marinated, preheat an outdoor grill to 500F for 5 minutes, until the grill grates are extra hot. Reduce the flame to medium and add the lamb chops, spacing them 3 to 4 inches apart.
  • Grill the chops for 2 to 3 minutes per side, more for thicker chops. Once both sides are grilled, transfer them to the top rack of the grill, or to the side. Finish cooking the lamb with indirect heat for another 2 to 3 minutes. These instructions are for medium-done chops. Grill for 1 minute less per side for medium-rare doneness. Ensure that the temperature reaches 145F. Remove the chops from the grill and let the meat rest for 5 minutes before serving.
  • For the tzatziki sauce: gently peel the cucumber(s) and remove large seeds, if desired. Grate the cucumber(s) into a bowl lined with a cheesecloth; you'll need approximately 1 1/2 cups of grated cucumber. Season the cucumber lightly with salt and let it stand for 5 minutes to release water. Wring the cucumbers of excess water as much as possible. Place the grated cucumber into a large bowl with the greek yogurt, pressed garlic, chopped dill and mint. Add the olive oil and season to taste with salt and pepper. If desired, add also 1 tablespoon of lemon juice.

PAPA WOLF'S GRILLED LAMB SHOULDER CHOPS

Papa Wolf's Grilled Lamb Shoulder Chops image

My first try at cooking lamb shoulder chops. A friend served lamb at a party and the meat was tender and juicy, but the taste was gamy and bitter. I put together this recipe to see if I could improve the taste and very pleasantly surprised myself. If you've tried lamb and didn't like the taste, as I did, try this recipe. I love it and think you will too. I served this with my Bacon Caesar Roasted Potatoes (you can find the recipe in my recipe box here).

GRILLED LAMB CHOPS

Grilled Lamb Chops image

My favorite thing to cook on the beach is grilled lamb chops (also one of my favorite things to eat, come to think of it). Now, that may sound a bit odd at first, but think about it: They're small, they cook quickly, and they're easy to eat out of hand. Yeah, that's right, no need for a knife and fork here. Just grab one by the bone and go for it.
