14 oz (400 g) Pork Kiełbasa Sausage
1 tbsp Mustard

Steps:

  • Heat up the grill. If it's electric/gas, set it on medium/high.
  • (Optional step) Place kiełbasa on the cutting board and slit the casing on both sides.
  • Grill kiełbasa, turning halfway through, until lightly charred. This can take anything from 5 up to 10 minutes.
  • Serve with bread and a dip of your choice.

½ cup sauerkraut, drained
1 (13 ounce) package kielbasa ring (such as Hillshire Farm®)

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Grill kielbasa ring on one side for 4 minutes. Transfer to a cutting board, grilled side up.
  • Cut a slit down the length of the kielbasa, leaving an inch on both ends. Be careful not to cut all the way through as you are just making a pocket. Stuff sauerkraut into the pocket.
  • Carefully place the kielbasa back on the grill, stuffed side up. Grill for 4 minutes more. Slice into serving portions and serve.

1 loaf round rustic bread, halved crosswise
2 tablespoons olive oil
1 ring kielbasa (about 1 pound), top scored in 1-inch increments
3 tablespoons hot, spicy Bavarian-style or horseradish mustard
2 cups best-quality jarred sauerkraut, drained and rinsed

Steps:

  • Preheat a grill to medium-high (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Using your hands, remove about 1/2 cup bread from each side of the loaf. Brush hollowed-out sides of bread with oil.
  • Grill kielbasa, flipping once, until browned and heated through, 8 to 10 minutes. Grill bread, flipping once, until lightly marked by grill, about 3 minutes.
  • Transfer kielbasa and bread to a cutting board. Halve kielbasa crosswise. Spread hollowed-out sides of bread with mustard; top each with half of the sauerkraut and a halved kielbasa ring. Cut each into 4 wedges. Serve immediately.

1 tablespoon butter
3 tablespoons sugar
1 onion, sliced
3 cups sauerkraut, drained
3 tablespoons fresh parsley leaves, freshly chopped

Steps:

  • Preheat grill. Preheat oven to 400 degrees F.
  • Cut kielbasa into 3-inch lengths and butterfly lengthwise. Place on hot groll and cook for 4 to 5 minutes on each side turning frequently, charring all sides. Remove from grill. transfer kielbasa to a baking sheet and place in oven to cook for another 5 to 6 minutes.
  • In a large skillet over medium-high heat, add butter and sugar. Allow sugar to cook to a golden brown color. Add onions and cook until caramelized. Stir in the sauerkraut and cook for 5 to 6 minutes until onions and sauerkraut are wilted and colored.
  • Remove kielbasa from oven and cut into 1-inch pieces. Add to pan of sauerkraut and onions. Toss together and cook for 1 minute. Transfer to a platter, garnish with parsley and serve with your favorite mustard dipping sauce.

2 tablespoons butter
3 tablespoons sugar
1 onion, sliced
3 cups sauerkraut, drained
3 tablespoons freshly chopped parsley leaves
Honey Mustard Dipping Sauce, recipe follows
1/4 cup yellow mustard
1/4 cup honey
1/4 cup Dijon mustard
1/2 teaspoon cayenne
1 tablespoon prepared horseradish
Pinch salt
Pinch cracked black pepper

Steps:

  • Preheat grill. Preheat oven to 400 degrees F.

2 (16 ounce) packages sauerkraut, drained
2 heads cabbage, cored and sliced into long, thin shreds
5 links kielbasa sausage, cubed

Steps:

  • Cook fatback in a large pot over low heat until the drippings render out, about 45 minutes, stirring often. Stir sauerkraut and cabbage into the pork drippings, bring to a simmer, and cook until cabbage is very tender, about 3 hours. Stir occasionally. Mix kielbasa into the cabbage and kraut; cook 45 minutes to 1 hour to blend flavors.
