GARLIC HERBED GRILLED TUNA STEAKS
Grilled tuna steak recipes aren't limited to restaurants. After enjoying yellowfin tuna in southwest Florida, I came up with this recipe so I could enjoy the flavor of my favorite fish at home. -Jan Huntington, Painesville, Ohio

- In a large resealable plastic bag, combine the lemon juice, oil, garlic and thyme. Add the tuna; seal bag and turn to coat. Refrigerate for up to 30 minutes, turning occasionally., Remove tuna from bag; sprinkle with salt and pepper. Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. , Grill tuna, covered, over medium-hot heat or broil 4 in. from the heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center.

GRILLED JALAPENO TUNA STEAKS
Steps:
- Whisk olive oil, lime juice, jalapeno pepper, garlic, salt, and pepper together in a flat baking dish. Place the tuna steaks in the dish, turning to coat entirely in marinade; cover the dish with plastic wrap and refrigerate for 20 minutes.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Cook steaks on the preheated grill until beginning to firm and hot in the center, 5 to 7 minutes per side.

- To grill the tuna, get a charcoal or stove-top cast-iron grill very hot. Brush the fish with olive oil, and sprinkle with salt and pepper. Grill each side for only 2 to 2 1/2 minutes. The center should be raw, like sushi, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes and serve.
GRILLED TUNA STEAK
Steps:
- Prepare grill for two zone or direct/indirect grilling. Target the temperature between 500 and 600 degrees over direct heat. Ours was at 550.
- Pat dry the tuna with a paper towel.
- Combine the salt and pepper in a small dish and season the tuna steaks.
- Place the seasoned tuna steaks over direct heat and grill for approximately 3 minutes. Flip to the other side and cook an additional 3 minutes. The internal temperature should be between 125 and 130 degrees F for a medium rare steak.
- Remove from the grill. Slice the tuna into pencil thin slices and serve with the dipping sauce. Tuna is best served warm.

- Combine all ingredients of the marinade and whisk together with a fork.
- Place tuna steaks in a gallon zip-lock bag and add marinade, reserving 1 tablespoon. Let marinade for 15 minutes - 2 hours.
- Add cooking oil to a heated skillet set to medium-high heat.
- When oil is heated and shimmering add tuna steaks. Cook for 2-3 minutes per side, aiming to sear the exterior while the interior remains pink.
- Remove from skillet and let rest for 5 minutes, spoon over the remaining tablespoon of marinade if desired, sprinkle with sesame seeds, then serve.

- Drizzle both sides of the tuna steaks with oil, then squeeze half of the lemon's juice on top. Rub the garlic, basil, salt, and pepper on both sides of the steaks, seasoning to your taste.
- Grill, covered, or broil for 4-5 minutes on each side or until done to your preference. (I like a little bit of pink in the center so it doesn't get too dried out.)
- Serve with the other half of the fresh lemon.
