Slow Cooker Italian Chuck Roast with Peppers and Onions image

Slow-cooked Italian beef for sandwiches. Provolone, Swiss, and Cheddar cheese are all delicious with this. My kids had hot Italian sandwiches on hoagies; I prefer mine over veggies like spaghetti squash or zoodles. Really, any veggies would work, as would mashed potatoes, rice, or grits. Don't forget to add the cheese on top if you're not doing sandwiches...it's absolutely heavenly without the bread, as well.

1 (3 pound) beef chuck roast
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
3 tablespoons olive oil
2 cups beef broth
1 tablespoon Worcestershire sauce
1 cup crushed tomatoes
10 pepperoncini peppers plus a splash of their juice
4 cloves garlic, chopped
1 tablespoon Italian seasoning, or more to taste
3 green bell peppers, chopped
1 onion, chopped
12 hoagie rolls, split lengthwise
12 slices provolone cheese, or as needed

Steps:

  • Season roast liberally with onion powder, garlic powder, salt, and pepper on all sides.
  • Heat a pan over medium-high heat until scorching hot. Add olive oil. Sear beef until brown on all sides, holding up roast to get all edges, 5 to 10 minutes. Transfer roast to the slow cooker. Deglaze the pan by pouring in broth and scraping up browned bits. Add Worcestershire sauce. Pour mixture over the roast in the slow cooker.
  • Add tomatoes, pepperoncini peppers and their juice, garlic, and Italian seasoning to the slow cooker. Turn roast over a few times to coat. Cover slow cooker and cook on High power for 4 hours.
  • Add green bell peppers and onion to the slow cooker, tossing to incorporate. Continue cooking on High power 1 more hour.
  • Shred beef and season with salt and pepper to taste. Let beef and sauce sit in the slow cooker on Warm until ready to serve.
  • Meanwhile, toast hoagie rolls, if desired. Top rolls with shredded beef and add provolone cheese to each.

This recipe is my personal favorite for pot roast. It tenderizes the toughest meats and produces a wonderful, flavorful gravy. It's best when cooked in a cast-iron Dutch oven. This is a whole meal in one pot, my favorite kind of meal.

1 tablespoon vegetable oil
1 (3 1/2) pound boneless beef chuck roast
salt and ground black pepper to taste
1 large onion, finely chopped
1 clove garlic, chopped, or to taste
2 ½ cups beef stock
1 (16 ounce) can diced tomatoes
¼ cup red wine vinegar
1 tablespoon brown sugar
2 bay leaves
¾ pound carrots, cut diagonally into 1-inch-thick slices
1 pound small red potatoes, quartered lengthwise
1 (6 ounce) jar mushrooms, or more to taste
1 ½ tablespoons cornstarch
1 ½ tablespoons cold water
1 pinch celery salt, or to taste
1 pinch dried basil, or to taste
1 pinch dried thyme, or to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat vegetable oil in a large, heavy pot or cast-iron Dutch oven over medium heat. Brown chuck roast in the hot oil completely, 5 to 8 minutes per side; season with salt and black pepper and transfer to a platter. Reserve oil in pot.
  • Cook and stir onion and garlic in the oil until onions are golden, about 15 minutes. Stir beef stock, tomatoes, red wine vinegar, brown sugar, and bay leaves into onions and garlic; bring to a boil and place chuck roast into the mixture. Cover pot.
  • Cook in the preheated oven until meat is very tender, 4 to 4 1/2 hours. Scatter carrot slices around the beef and bring to a boil over medium heat; return to oven for 30 more minutes. Distribute potatoes around the beef and vegetables, bring to a boil again over medium heat, and bake until potatoes are tender, about 30 more minutes.
  • Transfer beef to a serving platter, cover loosely with a tent of aluminum foil, and set aside to rest for 10 minutes.
  • Stir mushrooms into pan drippings; bring to a simmer over low heat. Whisk cornstarch into cold water in a small bowl and stir into the drippings. Season with celery salt, basil, and thyme. Simmer until thickened, about 5 minutes. Remove and discard bay leaves. Slice beef; serve on a platter surrounded by vegetables. Pour gravy over beef.

1 to 2 tablespoons olive or vegetable oil
1 envelope (0.7 ounce) Italian dressing mix

Steps:

  • If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
  • Brush beef with oil; sprinkle evenly with dressing mix (dry). Insert barbecue meat thermometer so tip is in thickest part of beef.
  • Cover and grill beef over drip pan or over unheated side of gas grill and 4 to 5 inches from medium heat 1 hour 30 minutes to 2 hours or until thermometer reads 140°F (medium-rare). 1/4 cup balsamic vinegar
1/4 cup olive oil
1 shallot (minced)
2 tablespoons garlic (minced)
2 tablespoons parsley (minced)
2 tablespoons dijon mustard
1 tablespoon sugar
1 teaspoon beef bouillon
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon meat tenderizer
2 to 3 pound boneless chuck roast
Optional: Chimichurri sauce , for serving

Steps:

  • Gather the ingredients.
  • Whisk the balsamic vinegar, olive oil, shallot, garlic, parsley, Dijon, sugar, beef bouillon, salt, pepper, and meat tenderizer in a bowl. Add 1/2 cup of water and stir again.
  • Score the chuck roast with a sharp knife making 6 or 7 large cuts all over one side of the meat.
  • Add the marinade to a plastic bag and then add the steak. Seal the bag and massage the marinade into the steak. Place it on a plate to catch any drips or leaks and refrigerate for at least 6 hours, ideally overnight. You can even marinate for up to 24 hours. Since the meat is so thick it will not break down easily.
  • Prepare a gas or charcoal grill for indirect heat. Adjust the heat on the active burner to medium-high heat (400 F to 475 F). Sear both sides of the meat over the hot side of the grill, flipping halfway through cooking time, about 10 minutes total.
  • Move the meat to the cooler side of the grill, close the lid, and continue to cook to your liking or until the meat registers 130 F to 140 F (medium-rare) on an instant thermometer or probe, 20 to 30 minutes longer. You can also throw in a few wood smoke chips on top of the burners or charcoal for a nice smoky flavor.
  • Remove the roast from the grill and allow to rest loosely covered with foil, about 10 minutes. Slice against the grain (do the best you can, the grains can change across the meat due to the configuration of the muscle). Serve with your favorite sauce like chimichurri . Enjoy.

1 3 pound boneless chuck roast
2 Tbsp oil
3 Tbsp all purpose flour
1 c water
1 c buttermilk
4 tsp instant beef soup boullion (or use 1 cup good beef stock instead of water and bouillon)
1/2 tsp crushed thyme leaves
1/4 tsp pepper
4 medium carrots, peeled and cut into 1-inch pieces
2 medium onions, cut into wedges
3 c frozen broccoli flourets, thawed (i use 1 crown of fresh broccoli)
2 c frozen cauliflower flourets, thawed (1/2 head of fresh cauliflower)

Steps:

  • 1. Preheat oven to 325°F.
  • 2. In a large skillet, brown roast in oil. Place in 3-quart roasting or baking pan. (I use a baking pan and wrap roast tight in foil) Add flour to drippings; cook and stir until browned. Add buttermilk, water, bouillon, thyme and pepper. Cook and stir until bouillon dissolves and mixture thickens slightly, about 5 minutes.
  • 3. Place onions around meat; spoon sauce over meat. Cover; bake 2 hours.
  • 4. Add carrots and continue to bake for 2-3 hours more or until roast is tender. Add remaining vegetables; bake 15-20 minutes longer or until vegetables are tender.

4 carrots, coarsely chopped, divided
4 stalks celery, coarsely chopped, divided
2 tbsp flour (or 2 tsp cornstarch or arrowroot for gluten-free)
2-1/2 to 3 lb boneless chuck shoulder pot roast, at room temperature (either a flat 7-bone or rounded style chuck roast will work)
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 tsp garlic powder
1 tsp onion powder
1/2 cup low-sodium beef broth
1/4 cup dry red wine, optional
2 tsp Worcestershire sauce
1 tbsp English Prime Rib Rub spice blend (from Penzey's Spices or your favorite local brand), optional
1 tbsp dried finely chopped rosemary leaves
1 tbsp dried thyme leaves
4 large shallots, peeled and quartered
2 medium onions, peeled and sliced thickly lengthwise (from root to tip)
1 medium red bell pepper, coarsely chopped
4 to 6 medium Yukon Gold or red-skinned potatoes, halved
1 bay leaf
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat grill to medium-high heat. Place half the chopped carrots and celery in the center of a roasting pan (with a lid) large enough to hold the roast and vegetables, creating a base for the roast to sit on. Using a wire sieve, sprinkle vegetables with the flour (or other thickener), toss vegetables, and set pan aside. (The flour will help thicken the broth slightly, making a sauce to serve with the meat.) Using a sieve or strainer makes sure there are no lumps when you add it to the pan. Season both sides of the beef roast with salt, pepper, garlic, and onion powder. Place over direct heat on the grill and cook until well browned (without burning) on first side, about 10 minutes. Using tongs, flip over and cook second side until well browned, about 10 minutes more. Transfer to prepared roasting pan, setting on top of the carrots and celery. Preheat oven to 300°F. In a measuring cup, blend the beef broth, wine and Worcestershire sauce. Pour over roast in pan. Combine English Rub and thyme leaves; sprinkle half over roast. Sprinkle with salt to taste. Cover with lid and cook for 15 minutes. Reduce heat to 275°F and cook for 2-1/2 hours. Remove roast from the oven; carefully lift off the lid and place the remaining carrots and celery, the shallots, onions, bell peppers and potatoes around the roast. Tuck bay leaf between the veggies and roast. Sprinkle vegetables with remaining herb mixture and season to taste with kosher salt and pepper. Add 1 cup water if needed to keep the roast and vegetables moist and make a pan sauce. Cover pan and return to the oven. Continue cooking for another 1 to 1-1/2 hours or until the vegetables are soft and the meat is fork tender. If it isn't done, put it back in the oven and go read a book for awhile ???? Transfer vegetables to a medium bowl. Move pot roast to cutting board, tent with foil and let rest for 15 minutes. Carve into slices. Serve with roasted vegetables and pan juices.

Notice that you need to marinate it the night before, I have not included the marinading time in the preparation time. Because charcoal grilling varies with temperature of coals, size of grill, weight of meat, etc. I urge you to use your meat thermometer to get it to your own family's preference.

3 lbs chuck roast, 2 to 2 1/2 inches thick
1/3 cup Italian dressing
1/4 teaspoon salt
1/4 teaspoon pepper

  • Grill roast at MEDIUM on grate, hood down, until beef is well seared, about 20 minutes, turning over at least once.
  • Meanwhile prepare a large aluminum roasting pan lined with foil large enough that later you can cover the meat).
  • Place the seared meat into that foil container, sprinkle with the salt and pepper.
  • Pierce the potatoes.
  • Arrange potatoes, second onion, and carrots around meat.
  • In a small bowl, mix beef broth, garlic, pepper, and rosemary); pour this over the meat and vegetables.
  • Cover all with foil.
  • Grill covered at MEDIUM heat until roast is tender, possibly up to 1 1/2 hours. Recently, made a 2 1/4 pound roast and it only took 1 hour and 15 minutes after the initial searing. Use your meat thermometer to gauge doneness level I would start checking after 1 hour and 15 minutes.
  • Allow resting time of 10 minutes.

  • Place the lid on the Dutch oven and transfer to the grill. Close the lid and braise until the meat is very tender, 4-5 hours.
