Rib-Eye Steak with Horseradish and Mushroom Cream image

This is a quick sauce with horseradish, mushrooms, and sour cream that you can whip up in a few minutes to enhance steaks on the grill.

2 boneless rib-eye steaks
4 green onions, chopped
2 cloves garlic
3 tablespoons oil
1/2 lb mushroom, sliced
1/2 cup beef stock
1 tablespoon cornstarch
2 tablespoons horseradish
1 teaspoon thyme
1/4 teaspoon pepper
1/4 cup sour cream

Steps:

  • Broil steaks.
  • Cook onions and garlic in oil; when soft, add mushrooms.
  • Combine stock and cornstarch.
  • Add stock to skillet along with horseradish, thyme, and pepper.
  • Bring the sauce to a boil and cook 1-2 minutes.
  • Add the sour cream and remove from heat.
  • Serve over steak.

1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon vegetable oil
2 cups mushrooms, halved
1 garlic clove, minced
1 teaspoon thyme, dried
1 (6 ounce) bag Baby Spinach
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/4 cup light mayonnaise
2 tablespoons 1% low-fat milk
2 tablespoons horseradish, prepared
salt, to taste

Steps:

  • STEAK:.
  • Season steak with salt and pepper.
  • Cook until medium-rare - approx 8 min - and place on cutting board and tent with foil. Let stand for 10 minute Slice thinly accros the grain.
  • DRESSING:.
  • Whish mayo, milk, horseradish, salt and pepper.
  • SALAD:.
  • Heat oil in skillet and saute mushrooms, garlic, thyme and a bit of salt and pepper until mushrooms are golden - approx 5 minute.
  • Place spinach on platter, add steak, mushrooms, red onion, cherry tomatoes on top and drizzle with dressing.

2 tablespoons Dijon mustard, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1 beef top sirloin steak (1-1/2 pounds)
1 pound sliced fresh mushrooms
1/4 cup red wine vinegar
1 medium bunch romaine, torn

Steps:

  • In a small bowl, whisk 1 tablespoon oil, 1 tablespoon mustard, salt and pepper; set aside. , Grill steak, covered, over medium-hot heat for 4 minutes. Turn; spread with mustard mixture. Grill 4 minutes longer or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, in a large skillet, cook mushrooms in 1 tablespoon oil until tender.
