Tilapia is a mild, white fish that is flaky and yummy. You can take this recipe for grilling it in foil packets and alter it to your own liking. The tilapia is very forgiving.

½ teaspoon dried dill weed
¼ teaspoon kosher salt
freshly ground black pepper to taste
10 chives, cut in half
1 ½ tablespoons butter, cut into pieces

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Cut a piece of heavy duty aluminum foil large enough to make an airy foil pouch to hold tilapia fillets.
  • Place fillets on top of the foil and season with dill, salt, and pepper. Place chives on top of fillets, followed by butter. Seal up pouches loosely.
  • Cook fillets on the preheated grill until they flake easily with a fork, 10 to 15 minutes.

This foil pack version of the Southern classic low country shrimp boil brings together andouille sausage, corn on the cob and baby red potatoes.

1 lb small red potatoes, halved
4 pieces frozen mini corn on the cob, thawed, cut in half
2 teaspoons oil
2 teaspoons Old Bay™ seasoning
1 lb uncooked peeled deveined extra-large shrimp (16 to 20 count)
12 oz fully cooked andouille sausage, sliced
1 lemon, cut into 8 wedges
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.
  • Place potatoes in microwavable bowl. Microwave uncovered on High 5 to 6 minutes or until potatoes are just tender. Add corn to potatoes; drizzle with 1 teaspoon of the oil, and sprinkle with 1 teaspoon of the seasoning; mix until evenly coated. Place shrimp in medium bowl; toss with remaining 1 teaspoon oil and remaining 1 teaspoon seasoning; mix until evenly coated.
  • Place equal amount of sausage on center of each sheet of foil. Dividing evenly, arrange potato and corn mixture around sausage. Divide shrimp evenly over sausage. Squeeze 1 wedge of lemon over each pack.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packs on grill over medium heat. Cover grill; cook 6 minutes. Rotate packs 1/2 turn; cook 5 to 7 minutes longer or until shrimp are pink and sausage is heated through. Remove packs from grill, cut large X across top of each pack. Carefully fold back foil; sprinkle with parsley, and top with remaining lemon wedges.

1/2 teaspoon grated lemon peel
1/8 teaspoon white pepper
3 tablespoons butter or margarine, melted
2 tablespoons lemon juice
4 cups hot cooked pasta or rice

Steps:

  • Heat gas or charcoal grill. Spray 1 (18x18-inch) sheet of heavy-duty foil with cooking spray.
  • Arrange scallops, fish pieces and shrimp on foil, placing shrimp on top. Sprinkle with marjoram, lemon peel and white pepper. Drizzle with butter and lemon juice. Bring corners of foil up to center and seal loosely.

1 tablespoon grated fresh lemon peel
32 clams in shell, scrubbed
32 uncooked shrimp, deveined but with shells
32 sea scallops
8 ears corn on the cob, cut into quarters
32 large cherry tomatoes
8 12x12-inch squares aluminum foil
1 tablespoon chopped fresh chives

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Mix the butter with lemon peel in a bowl.
  • Spread out the sheets of foil onto a flat work surface, and place 4 clams, 4 shrimp, 4 scallops, 4 pieces of corn on the cob, and 4 cherry tomatoes in the center of each piece of foil. Drizzle 1 tablespoon of lemon-butter mixture over the seafood and vegetables. Bring two opposite ends of a foil sheet together and fold over several times to seal. Leave room for steam. Fold the remaining ends over several times to seal the packet completely.
  • Place the foil packets on the preheated grill, cover the grill, and bake until the clams are open and the shrimp are pink and opaque, 15 to 20 minutes (open a packet a little to take a peek).
  • To serve, place a foil packet on a plate, cut a diagonal X through the foil, and peel back the foil. Garnish each packet with about 1/2 teaspoon of chives.

2 pounds large raw shrimp (peeled and deveined)
1/4 cup extra virgin olive oil
4 cloves garlic (minced)
1 whole lemon (juice and zest)
1 tablespoon dijon mustard
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh basil
1 pint cherry tomatoes (halved)
2 tablespoons unsalted butter (cut into pats)
Reynolds Wrap Parchment Paper (for packets)

Steps:

  • Preheat oven to 425F.
  • Place shrimp in a large ziploc bag; add oil, garlic, lemon, mustard, parsley and basil. Add tomatoes, seal the bag, and shake it up. Let rest for about 10 to 12 minutes.
  • Tear off four 16-inch sheets of parchment paper and place over rimmed baking sheet, one parchment paper at a time.
  • Using a slotted spoon, arrange 1/4 of the shrimp mixture in the middle of the parchment paper.
  • Top with a tablespoon of the marinade that's inside the ziploc bag and couple pats of butter.
  • Seal the packet by folding over one end to meet the corners of the other; continue to tightly fold the open edge of the paper so to form a seal.
  • Repeat to make the remaining 3 packets and arrange the packets on a rimmed baking sheet.
  • Bake for 20 minutes.
  • Remove from oven and let rest 5 minutes before opening the packets. Be careful of the hot steam!
  • Serve over rice, pasta, or as is.

2 pounds extra-large shrimp, peeled and deveined, tails intact
1 pint grape tomatoes, halved
4 scallions, sliced
1 red jalapeno pepper, seeded and chopped
1/2 cup bottled clam juice
2 tablespoons unsalted butter
1 baguette, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F. Whisk the olive oil, minced garlic, lemon zest and juice, anchovies, basil, parsley, paprika and 1 teaspoon salt in a large bowl. Add the shrimp, tomatoes, scallions and jalapeno; toss.
  • Tear off eight 16-inch sheets of parchment paper. Make the packets (see photo gallery), using a double layer of parchment for each packet: Arrange about one-quarter of the shrimp mixture on a double layer, using a slotted spoon. Top with 2 tablespoons clam juice, 1/2 tablespoon butter and one-quarter of the liquid from the bowl. Seal as directed. Repeat to make 3 more packets; divide between 2 baking sheets.
  • Transfer to the oven and bake until the parchment puffs and the shrimp are just cooked through, about 20 minutes. Let rest 5 minutes before opening.

Four 6-ounce tilapia fillets
1 cup grape tomatoes, halved
1/4 cup capers, drained
1 teaspoons fresh thyme (about 3 sprigs)

Steps:

  • 1. Preheat the oven to 400 degrees F. Whisk together the white wine, olive oil, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • 2. Place each tilapia fillet on a separate 14-by-12-inch piece of nonstick foil. Drizzle one-quarter of the white wine mixture over each fish fillet and top with one-quarter of the tomatoes, capers and thyme. Fold the foil up over each piece of fish and seal to create a packet. Put the packets on a sheet pan and bake until the fish becomes fragrant, 20 to 25 minutes depending on the thickness of the fillets; let cool for 3 minutes.
