GRILLED HAWAIIAN CHICKEN
This is a family favorite! Every time I serve this chicken, I get rave reviews! I serve this over coconut rice garnished with green onions. It makes a beautiful presentation. To make coconut rice, simply replace half of the water with coconut milk and cook rice as directed. This recipe makes a lot of marinade. If I am serving more people I will increase the amount of chicken and keep the recipe for the marinade the same. Goes really well with steamed broccoli or edamame.

Steps:
- Whisk water, soy sauce, coconut milk, brown sugar, green onions, white onion, sesame oil, and garlic together in a large glass or ceramic bowl. Add chicken thighs and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 4 hours to overnight.
- Preheat grill for medium heat and lightly oil the grate.
- Remove chicken from marinade and discard the marinade.
- Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

GRILLED PORK TENDERLOIN WITH A HAWAIIAN-STYLE SAUCE
Steps:
- In a saucepan, add broth, brown and yellow mustard, honey, horseradish, ketchup, brown sugar, and garlic. Simmer on low and reduce the mixture until it takes on a barbecue sauce consistency.
- Preheat the grill to medium heat. Season pork with salt and black pepper. Grill pork tenderloin until the outside is darkened with grill marks, turning often to prevent burning.
- Reduce heat to low and brush sauce over the meat every 10 to 15 minutes of cooking time. Close the lid but keep a close eye on the tenderloin to making sure that pork doesn't burn.
- Grill pork tenderloin up to 1 hour or until internal temperature reaches 140 F (60 C). Cover pork and allow to rest for 10 minutes.
- Grill pineapple during last 5 to 10 minutes of the cooking time and serve with the meat.

- Place the steaks in a single layer in a deep, nonreactive dish. Or if you're short on refrigerator space, divide them between a couple of gallon-sized plastic freezer bags.
- In a large liquid measuring cup, whisk together the pineapple juice, soy sauce, apple cider vinegar, brown sugar, garlic, and ginger.
- Pour the marinade over the steaks, making sure the meat is coated on all sides.
- Cover and refrigerate for at least 40 minutes, or overnight. (If you're marinating the steaks in Ziploc-style bags, squeeze out as much excess air as possible before sealing the bags).
- Preheat the grill and oil the grate . Remove the steaks from the marinade, and place on the grill. Discard any excess marinade.
- Grill the steaks to your desired level of doneness. (Cooking times will vary based on the thickness of the steaks, and the heat of your grill, but figure about 5 minutes per side for a 1- to 1 1/2-inch steak cooked to medium.) GRILLED HAWAIIAN PIZZA

- Preheat a grill to medium. Shape each piece of pizza dough into a ball. Drizzle 1 tablespoon olive oil on each of 2 rimmed baking sheets, place 1 dough ball on each baking sheet and turn to coat in the oil. Place a metal cooling rack upside down on the grill perpendicular to the grill grates (or use a grill basket); brush the rack with the remaining 1 tablespoon olive oil. Working in batches, grill the pineapple, scallions and ham, turning as needed, until lightly charred, 5 to 8 minutes per batch; transfer to a plate as each batch is done. Cut the ham slices in half, if desired. Using tongs, remove the cooling rack from the grill. Pat and stretch or roll each dough ball into an approximately 8-by-12-inch oval. Carefully place each piece of dough directly on the grill and cook until marked and golden, about 5 minutes. Flip the crusts and top evenly with the cheese, ham, scallions and pineapple. Continue grilling until the cheese melts and the crust is cooked through, about 6 more minutes. (If the crust is browning too quickly, slide the pizzas to the outer edge of the grill.) Transfer the pizzas to a cutting board and cut into pieces.

- Heat a large skillet over medium-high heat. Spread butter onto one side of each slice of bread. Place up to 4 of the slices of bread, butter side down in the skillet. Top each piece with one slice of cheese, two slices of ham, and about 2 tablespoons of the crushed pineapple. Place remaining slices of bread on top with the butter side up. When the bottom of the sandwich is golden brown, flip sandwiches, and cook until browned on the other side, about 1 minute.
