- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Drizzle the olive oil over the cut sides of the tomatoes, and sprinkle with garlic, salt, and black pepper.
- Place tomatoes, cut sides up, onto the preheated grill, and grill until the tomatoes start to sizzle and show blackened grill marks, about 4 minutes. Flip the tomatoes over and grill until the garlic turns golden brown, about 3 more minutes.

GRILLED EGGPLANT, PEPPERS AND ONIONS
The happy mix of eggplant, peppers and onions is found throughout the Mediterranean. Cooking the vegetables over hot coals adds a welcome smokiness, but even a stovetop grill gives a hint of smoky flavor, so don't fret if you can't grill outside. This salad is meant to be served at room temperature. Feel free to make it up to 2 hours ahead.

- Prepare a bed of hot coals in a charcoal grill, or heat a stovetop grill to medium-high. Arrange eggplants, onions and peppers on a baking sheet. Paint vegetables lightly on both sides with olive oil.
- Working in batches, grill all vegetables on both sides until softened and lightly charred, about 5 to 6 minutes per side. When all vegetables are cooked, chop them into rough chunks and place in a mixing bowl. Drizzle with 3 tablespoons olive oil and the vinegar. Season well with salt and pepper and toss to coat. Add capers and toss again.
- Transfer mixture to a serving dish and sprinkle with oregano and crushed red pepper. Serve at room temperature.

GREEN TOMATOES ON THE GRILL
These green tomatoes on the grill are probably the easiest way of putting those end-of-summer green tomatoes to use.

- Wash and dry the tomatoes.
- Cut a thin slice at the top and the lower part of each tomato, so that you will not have any rounded slices.
- Slice the tomatoes, about 0.25 cm/ ¼ inch thick.Combine the olive oil, grated garlic cloves, chili flakes, some salt and pepper in a bowl.
- Add the tomato slices and stir well to coat. If you have the time, you can marinate the tomatoes for 15 to 30 minutes, but it is not mandatory.
- Heat a grill pan on medium heat.
- Add the tomato slices to the pan. If there is some leftover marinade in the bowl, reserve it.
- Grill the tomatoes for about 3 minutes on one side. Flip using tongs and grill for further 2-3 minutes on the other side. They should have nice char marks and become softer, but not be too soft or mushy. They should still hold their shape.
- Place the grilled tomatoes on a serving plate and pour the reserved marinade on top.
- Finely chop the red onion. Place it in a small bowl.
- Add the Greek yogurt, mustard, 1 teaspoon honey, vinegar, paprika powder, salt and pepper, and most of the chives. Stir well.
- Adjust the taste with more honey, if necessary. Sprinkle the remaining chives on top.
- Serve the grilled green tomatoes with the yogurt sauce and some fresh basil leaves.

GRILLED GREEN ONIONS
Last summer during a BBQ, my friend put this together and threw it on our grill. Everyone loved it. I'm not an onion fan, and even I like this one. The onions get sweet from the butter, and it's so easy. Can be eaten alone or great as a garnish over burgers or potatoes. The cook time is approximate, as it can be kept warm on the grill until all the food is ready.

- Place whole onions on a sheet of foil.
- Place the butter over the onions.

- Brush tomato and onion slices with oil and grill over medium-low heat turning once or twice, until lightly charred and soft.
- Cover bottom of shallow dish with grilled tomato slices in overlapping rows.
- Separate grilled onion slices into rings and scatter over tomatoes.
- In saucepan heat vinegar with water, sugar, caraway seeds, salt and hot pepper flakes, stirring, just until sugar is dissolved.

GRILLED SHRIMP PO' BOY WITH PICKLED GREEN TOMATOES
I love a shrimp po'boy. For this version, instead of frying the shrimp, I thought it would be nice to lighten things up and grill them instead. The natural sweetness of the Carolina shrimp really comes through when it's paired with the pickled green tomatoes and tangy aioli.

- For the quick pickled green tomatoes: Combine the vinegar, sugar, pickling spices and 1 cup water in a small saucepan. Bring to a boil and cook until the sugar dissolves, about 3 minutes. Keep warm.
- Place the tomatoes in a 1-quart sterilized glass jar. Pour the vinegar mixture over the tomatoes and seal the lid. Refrigerate until ready to serve. (These can be enjoyed right away but are best refrigerated overnight.)
- For the spicy lemon-dill aioli: Stir together the mayonnaise, onion, House Seasoning, dill, lemon zest and juice, hot sauce and sugar in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
- For the grilled shrimp: Preheat a grill or grill pan to medium-high heat.
- Sprinkle the shrimp with the House Seasoning. Grill until the shrimp are cooked through, 1 to 2 minutes on each side.

- Put your onions in a medium/large skillet pan over medium heat. Cover and cook, only stirring occasionally, about 15 minutes. Add the oil and a pinch of salt and reduce the heat to medium low. Continue to cook, stirring occasionally, until the onions are caramelized to your liking. It can take 5 minutes or another 45 minutes, depending on how deeply caramelized you like them.
- (Tip: if you like caramelized onions a lot, double or triple this batch so you have some extra to keep in the refrigerator. They taste great on everything!)
- When your onions are ready, you are ready to make your sandwich. Start by buttering the outside of your bread pieces and adding a little butter to a skillet over medium heat. Add enough cheese to cover your bread slice, then add enough tomato slices to also cover the area of the bread. Top with half of the caramelized onions and the final piece of bread.
- Place the sandwiches in the skillet and cook for about 2-3 minutes on one side. Carefully flip the sandwich and cook another 2-3 minutes. If your cheese is not melted (sometimes I slice my cheese a little too thick…) add about a tablespoon of water to the skillet, not too close to the sandwich so it gets your bread wet, and cover the skillet. The cheese should melt quickly. Enjoy!
