These green tomatoes on the grill are probably the easiest way of putting those end-of-summer green tomatoes to use.

Grilled green tomatoes:
450 g/ 1 lbs green tomatoes (about 3-4 medium)
2 tablespoons olive oil
2 garlic cloves
¼ teaspoon red chili flakes (more or less to taste)
fresh basil leaves
fine sea salt and freshly ground black pepper
Sauce:
½ small red onion
250 g/ 8.8 oz/ 1 cup Greek yogurt
1 teaspoon Dijon mustard
1-2 teaspoons runny honey (to taste (See note))
1 tablespoon cider vinegar
¼ teaspoon sweet paprika powder
2 tablespoons chopped chives
fine sea salt and freshly ground black pepper

Steps:

  • Wash and dry the tomatoes.
  • Cut a thin slice at the top and the lower part of each tomato, so that you will not have any rounded slices.
  • Slice the tomatoes, about 0.25 cm/ ¼ inch thick.Combine the olive oil, grated garlic cloves, chili flakes, some salt and pepper in a bowl.
  • Add the tomato slices and stir well to coat. If you have the time, you can marinate the tomatoes for 15 to 30 minutes, but it is not mandatory.
  • Heat a grill pan on medium heat.
  • Add the tomato slices to the pan. If there is some leftover marinade in the bowl, reserve it.
  • Grill the tomatoes for about 3 minutes on one side. Flip using tongs and grill for further 2-3 minutes on the other side. They should have nice char marks and become softer, but not be too soft or mushy. They should still hold their shape.
  • Place the grilled tomatoes on a serving plate and pour the reserved marinade on top.
  • Finely chop the red onion. Place it in a small bowl.
  • Add the Greek yogurt, mustard, 1 teaspoon honey, vinegar, paprika powder, salt and pepper, and most of the chives. Stir well.
  • Adjust the taste with more honey, if necessary. Sprinkle the remaining chives on top.
  • Serve the grilled green tomatoes with the yogurt sauce and some fresh basil leaves.

2 tablespoons dried thyme

¾ teaspoon white pepper
5 teaspoons olive oil
2 Roma (plum) tomatoes, halved lengthwise

Steps:

  • In a small bowl, mix together basil, thyme, salt, and white pepper. Mix in 5 teaspoons olive oil to make a spreadable paste. Spread paste on cut side of each tomato half.
  • Heat remaining 2 tablespoons olive oil in small skillet over medium-low heat. Place tomatoes herb-side down in skillet, and cover. Simmer for 5 minutes; tomatoes should be hot but not stewed. Serve immediately.

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Drizzle the olive oil over the cut sides of the tomatoes, and sprinkle with garlic, salt, and black pepper.

1 pint grape tomatoes, halved
1 tablespoon olive oil, plus more for grill grates

2 strip steaks (about 1-inch thick), about 1 1/2 pounds total, trimmed of excess fat and halved
Chimichurri sauce, recipe follows
1/2 small garlic clove
1 tablespoon red-wine vinegar
1/4 cup fresh herbs, such as parsley, mint and cilantro
1 tablespoon extra-virgin olive oil
1 tablespoon water
Kosher salt and freshly ground black pepper

Steps:

  • Place a double layered piece of heavy-duty foil on a tray or cutting board; fold and gather edge to form a rim. Toss the green beans and tomatoes on foil with 1 tablespoon olive oil; season with salt and pepper.
  • Preheat a grill to medium. Lightly oil the grill grates and season the steak with salt and pepper. Slide the foil tray onto the grill; cook, tossing occasionally, until the beans char slightly and cook through, about 15 minutes.

olive oil (cold pressed)
fresh oregano (finely chopped, or marjoram)

Steps:

  • Rinse the tomatoes and cut in half. Brush with a little oil, place cut side up on a gas grill grate or charcoal grill and grill until golden brown, a few minutes.
  • Mix 4 tablespoons of oil with the oregano and garlic and season with salt and pepper. Top the cut surface of the hot tomatoes with the mixture. Season with a little salt and serve hot.

This is a low carb alternative to fried tomatoes that is easy to make and tastes great. Good for the unripe tomatoes that fall off the vine before it's time (you know when you weed and knock them off)or the end of the harvest. I did make with red too and they came out just as good. The green are firm and tangy and the red are soft and sweet. A nice side, place in a sandwich or top pasta. Oh and great on a pizza!But there goes the carb watching! Take note that the fat in the marinade is not all used so the calculations are off.

6 green tomatoes, cleaned and stems removed
4 tablespoons olive oil
1 pinch hot red pepper flakes
1/2 teaspoon sugar
salt and pepper
2 minced garlic cloves
1 -2 teaspoon fresh minced marjoram
1 -2 teaspoon fresh minced oregano
3/4 cup grated cheese (goat cheese is great on these as well) (optional) or 1 cup cheese, alternative (optional)

Steps:

  • Cut tomatoes crosswise into 1/2-inch-thick rounds.
  • In a large zip lock bag, gently mix tomato slices, olive oil, Tabasco or hot pepper flakes, sugar, salt and black pepper, garlic, oregano and the marjoram. Add salt and pepper to taste.
  • Seal and chill at least 30 minutes or overnight.
  • Remove tomatoes from marinade (discard or make a dressing by adding vinegar to taste!) and lay on an oiled grill over medium heat (you can hold your hand at grill level only 4 to 5 seconds) cover gas grill.
  • Cook, turning once, at this point you can top with cheese if you are using until tomatoes are nicely browned, 6 to 10 minutes total.
  • For Vegan omit the cheeses.

freshly ground Black pepper (to taste)
3 Tbsps extra virgin olive oil
3 cloves garlic cloves (peeled and minced)

3 sprigs fresh Basil (washed and dried)
Oil (for grill grate)

Steps:

  • Season the tomato halves with salt and pepper. Set aside.
  • Heat the oil in a small skillet over medium-high heat. Add the minced garlic, cook until golden brown and fragrant, about 1 to 2 minutes. Pour the oil and garlic into a small bowl. Set aside.
  • Prepare the grill for direct grilling. Preheat to high heat.
  • When ready to cook. Lightly oil the hot grill grate. Place the tomatoes cut side down on the hot grate. Grill for 3 to 5 minutes, or until nicely browned. Using tongs, turn the tomatoes over. Brush or spoon the sauteed garlic on top of the tomatoes; reserving some oil for the rosemary and basil. Continue cooking for 3 to 5 minutes. Brush the rosemary and basil with remaining garlic oil and arrange on grill a minute before the tomatoes are done.
  • Transfer tomatoes and herbs to a serving dish or pan. Check seasoning. Serve immediately.

2 large red bell peppers, cut into 2-inch-wide strips
6 slices country-style-French bread
Additional olive oil
10 cups mixed baby greens
4 large tomatoes, sliced
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives or green onions
1 tablespoon chopped fresh majoram
3/4 cup chilled fresh mild goat cheese (such as Montrachet), crumbled (about 3 ounces)
1/2 cup freshly grated Pecorino Romano cheese (about 2 ounces)

Steps:

  • Prepare barbeque (medium-high heat). Whisk 3/4 cup oil and vinegar in medium bowl to blend. Place onion, beets, zucchini, eggplants, and red bell pepper on baking sheet. Brush both sides with some of vinaigrette. Sprinkle vegetables with salt and pepper.
