1 pound fresh green beans, trimmed
2 tablespoons butter
1 small shallot, minced
1 garlic clove, minced
1/2 cup grated Parmesan cheese

Steps:

  • In a 6-qt. stockpot, bring 4 quarts water to a boil. Add beans; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water., In a small skillet, melt butter over medium-high heat. Add shallot; cook and stir until lightly browned, 2-3 minutes. Add garlic; cook 30 seconds longer. Remove from heat. Drain beans and pat dry., In a large bowl, combine beans, shallot mixture and cheese; toss to coat. Transfer to a piece of heavy-duty foil (about 18 in. square) coated with cooking spray. Fold foil around beans, sealing tightly., Grill, covered, over medium heat or broil 4 in. from heat until cheese is melted, 7-9 minutes. Open foil carefully to allow steam to escape.

3 cups green beans cut into 2 to 3-inch pieces
1 1/2 cups carrots julienne, cut into 2 to 3-inch pieces
1 (15-ounce) can garbanzo beans, drained
1 cup cucumber, peeled and diced
4 teaspoons harissa spice
1/4 cup lemon juice
1/4 cup olive oil
1/4 cup white wine vinegar

Steps:

  • Bring a pot of water with a pinch of salt to a rapid boil. While the water heats, fill a large bowl 3/4 full with ice and add enough cold water to just cover ice. Add the green beans, carrots and garbanzo beans to boiling water in small batches to ensure the water does not lose its boil. Boil the vegetables for 3 to 4 minutes, strain and submerge into ice bath as quickly as possible. Remove vegetables from the ice bath as soon as they are no longer warm.
  • In a small bowl, whisk together harissa spice, lemon juice, olive oil and white wine vinegar; set aside.
  • Place green beans, carrots, garbanzo beans and diced cucumbers in a serving dish and toss with harissa dressing. Serve cold or warm by slightly heating in a saucepan.

1 small red bell pepper (about 7 ounces) or 1 roasted red pepper from jar
3 red jalapeños or Fresno chiles
3 garlic cloves, minced
1 teaspoon kosher salt plus more for seasoning
3 tablespoons olive oil, divided
2 tablespoons fresh lemon juice
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
Freshly ground black pepper
2 pounds green beans, ends trimmed
1/4 cup roasted unsalted almonds, coarsely chopped

Steps:

  • Char bell pepper (if using fresh) and jalapenños directly over a gas flame or under a broiler until soft and charred all over, 12-15 minutes. Transfer to a medium bowl; cover with plastic wrap. Let steam for 15 minutes.
  • Peel, seed, and mince bell pepper and jalapenños. Combine peppers, chiles, garlic, and 1 teaspoon salt in a food processor. Pulse, scraping down sides of bowl, to make a coarse paste. Pulse in 1 tablespoon oil, lemon juice, coriander, and cumin. Season harissa with salt and black pepper.
  • Place beans in a medium bowl; drizzle with remaining 2 tablespoons oil. Season with salt and black pepper and toss to coat. heat a large cast-iron skillet or other large heavy skillet over high heat. 1/2 head of garlic
1/2 cup extra-virgin olive oil
1 Tbsp. harissa paste

Steps:

  • Place a rack in middle of oven and preheat to 350°F. Toss green beans, garlic, oil, harissa, cumin seeds, and salt in a shallow 2-qt. baking dish to combine.
  • Turn garlic cut side down, then roast vegetables, tossing 2 or 3 times, until golden brown and very tender, 60-70 minutes. Let cool slightly, then add vinegar and toss to coat.

1 lb green beans, trimmed
2 Tbsp safflower oil (or most any oil that can tolerate high heat)
1 Tbsp red wine vinegar (white balsamic, apple cider vinegar will work as well)
1 stick extra virgin olive oil
1 tsp harissa, to taste (homemade is best!)
pinch salt

Steps:

  • 1. Steam the green beans briefly-about 2-3 minutes. Set aside.
  • 2. Meanwhile, preheat a grill or large grill pan to high.
  • 3. Place the steamed green beans in a large prep bowl and toss with the vegetable oil. Using tongs, arrange the beans in a [single layer] on the grill and cook until lightly charred, about 3-5 minutes.
  • 4. In a small, non-reactive prep bowl whisk together the vinegar, olive oil, harissa (to taste) and salt. Note: I added 2 teaspoons of harissa.
  • 5. Arrange the grilled green beans on a serving platter.
  • 6. Pour the vinaigrette over the green beans. Serve warm or at room temperature. A garnish of fresh parsley (or cilantro) and/or crispy shallots would not be out of place.
