GRILLED GRAPEFRUIT PALOMA COCKTAIL
Here's a fired up twist on a traditional Mexican cocktail. You'll grill the grapefruit and lime to caramelize the fruit and give the juice a subtle smoky edge. Stir it up with tequila or mescal and top with club soda for a refreshing drink that's perfect all summer long.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cut limes in half widthwise. Cut 1 half into 3 wheels.
- Pour sugar into a shallow bowl. Dip lime halves, 2 of the lime wheels, and grapefruit into sugar to coat thoroughly.
- Place limes and grapefruit cut-side down on the hot grill. Cook, turning lime wheels occasionally, until browned and grill marks form, 5 to 10 minutes. Transfer to a rimmed baking sheet to cool.
- Rub remaining lime wheel over the rim of 2 highball glasses. Dip rims in kosher salt. Fill glasses with ice.
- Juice grilled lime halves and grapefruit into a small pitcher. Pour in any juices that accumulated on the baking sheet. Stir in tequila and simple syrup. Divide mixture between glasses and top off with club soda. Garnish with grilled lime wheels.

GRILLED PALOMA
The Paloma is Mexico's most popular cocktail. This version is made with grilled grapefruit and grilled lime to give the drink a slightly smoky edge.

Steps:
- Light a grill and arrange it for direct heat or preheat a grill pan. Grill the grapefruit and the limes over high heat until well browned on the bottoms, 4 to 5 minutes. Let cool slightly.
- Arrange some salt on a small plate. Moisten the rims of 2 high ball glasses and coat with salt.
- For each cocktail: Fill a shaker with ice and add 2 ounces of squeezed grapefruit juice, 1 ounce of squeezed lime juice, 2 ounces tequila and ½ ounce agave nectar. Close the shaker and shake well. Fill one of the prepared glasses with ice and strain the drink into the glasses. Top with 1 ounce of club soda and serve. Fill the shaker with clean ice to make the second cocktail.

- Set a charcoal grill up for direct heat. After the charcoal has ashed over, dip the grapefruit halves in sugar making sure to coat the surface, and grill over charcoal (this is how you get the smokiness) until char marks have formed.
- After the grapefruit have cooled slightly, juice them. (I have been using the Rose Gold Zulay Citrus press, it is awesome! If you drink a lot of citrus, I recommend).
- Add ice to your glasses. Next, pour in the tequila. Add juice from one entire grapefruit to the cocktail. Next, add soda water. Add 1 tbsp of honey (or to taste), use rosemary as swizzle stick to stir in the honey.

- Moisten the edge of your glass with a grapefruit wedge and rim in the cinnamon salty sugar. Fill the glass with crushed ice.
