GRILLED FIGS WITH GOAT CHEESE AND PROSCIUTTO
This dish combines the best of the sweet, smoky, and savory flavors.

Steps:
- Combine goat cheese, rosemary, and a pinch of salt and pepper in a small mixing bowl, and stir.
- Make a small slit in bottom or side of each fig. Fill a pastry bag fitted with a small plain tip with cheese mixture. Pipe cheese into each fig through slit. Fill figs with just enough cheese so they expand slightly.
- Tear or cut the prosciutto slices into long strips. Wrap a strip of prosciutto around each fig, and skewer 4 figs on each rosemary sprig. Brush figs with olive oil, and season with salt and pepper.
- Place figs on a moderately hot grill, rotating skewers until figs are very hot and cheese starts to ooze, about 6 minutes. Remove from grill; serve immediately with a drizzle of olive oil and good bread.
GRILLED FIGS STUFFED WITH GOAT CHEESE RECIPE

- Cut off the stem of each fig, then cut two slits from the top of the fig to 3/4-way down in an X-pattern, creating a pocket in the middle of the fig. Stuff each fig with about 1 teaspoon of goat cheese.
- Light one chimney 3/4 full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Lightly brush figs with olive oil and place on grill. Cover and cook over medium heat until figs are softened and brown slightly, about 5 to 8 minutes.
- Remove figs to serving tray; drizzle with balsamic vinegar and sprinkle with rosemary. Serve immediately.

- Heat grill to medium high.
- Cut a slit in the side of each fig and gently pull the fig open. Push a spoonful of goat cheese into each fig.
- Wrap each fig securely with a piece of prosciutto, making sure the prosciutto covers the opening where the cheese is. You can use a toothpick to secure the prosciutto if you want to be extra sure it stays in place...if you do, use wooden ones (not plastic) and soak them in some water ahead of time so the grill doesn't make them catch fire.
- Grill the figs about 1-2 minutes per side until the prosciutto starts to get a little crispy.
- Mix the vinegar and honey together, drizzle over the grilled figs and serve!

- Preheat grill to medium temperature
- Set cut figs onto a platter or a baking sheet
- Stuff goat cheese into each fig
- Wrap bacon around the entire fig encasing the stuffed fruit
- Secure through with a round toothpick
- Grill stuffed figs on medium heat to prevent flare-ups or the cheese melting and oozing out
- Cook around five minutes each side, approximately, until bacon is fully cooked all around

- Use two 100g goats cheese rounds for this recipe.
- Place the goats cheese on a lightly oiled baking tray. Drizzle a little olive oil on top of each cheese.
- Cut the stem part off each fig and discard.
- Now slice each fig into about 3 slices.
- Place on the baking tray with the goats cheese and drizzle a little balsamic vinegar onto the figs (not onto the cheese).
- Place under a hot grill for just a couple of minutes until the cheese starts to bubble.
- Serve as a starter. Yum Yum!
- **PS: If I manage to get my photo on here for this recipes you will see I've slightly cooked the cheese too long. Not that it matters but it doesn't look as nice on the plate as it should do. Ooops!

BAKED FIGS & GOAT'S CHEESE WITH RADICCHIO

- Preheat the oven to fan 160C/conventional 180C/gas 4. Unless the baking sheet is non stick, line it with foil, then brush the foil lightly with oil.
- Cut the figs into quarters, from the top almost to the base, and arrange on the foil. Slice the goat's cheese and arrange in the centre of the figs. Bake for 10-15 minutes until the cheese is melted and tinged brown.
- Meanwhile, whisk the dressing ingredients with some seasoning. Put a couple of good radicchio leaves on each serving plate. Remove the figs from the oven and place on the radicchio leaves. Scatter the walnuts on top. Drizzle with the dressing and serve warm or at room temperature.

- Preheat grill for medium heat.
- Make a small incision in the bottom of each fig (large enough to hold pastry bag tip). Place goat cheese in pastry bag with plain tip. Fill figs with goat cheese by squeezing a small amount of cheese into the bottom of each fig. The figs will plump up when filled. Wrap each fig with a grape leaf, and skewer 2 to 3 figs on each skewer.
- Lightly oil the grill grate. Place fig skewers on hot grill. Cook for 2 to 3 minutes, turning once. Drizzle with honey, and serve.
