This is a truly flavorful dish with a lovely plate presentation. My mom and I experimented and made this for lunch. It came out so good I promptly went to the fish market so I could make it for my dinner guests that night. YUMMY!

- Preheat grill for high heat.
- In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
- In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.
- Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.

PAN-FRIED SEABASS WITH GARLIC LEMON BUTTER SAUCE AND SPRING VEGETABLES
Steps:
- Melt the butter in a large frying pan. Fry sea bass, turning once halfway through cooking time. Cook until opaque and moist on the inside, 4 to 8 minutes.
- In a small saucepan, gently melt the butter. When it starts sizzling add the garlic and let it sizzle for a minute or two, allowing the garlic to infuse the butter. Lower the heat to the minimum setting, add the lemon juice, stir and let it heat through. Season to taste. Drizzle over the fish fillets when it is served.

PAN-ROASTED SEA BASS WITH GARLIC BUTTER | LODGE CAST IRON
These flaky pan-roasted sea bass fillets topped with chive garlic compound butter will impress your dinner guests every time.

- In a medium bowl, with an electric mixer, beat the butter until light and fluffy.
- Add the chives, garlic, and salt and mix until thoroughly combined. Spoon the mixture in the shape of a log onto a piece of wax or parchment paper.
- Fold the paper over itself. Using your hands, shape the butter into a cylinder about 1 ½ inches wide (almost like making a Tootsie Roll). Once it is shaped, twist the ends to seal it.
- Place in the freezer to set, about 20 minutes. Refrigerate until ready to serve or up to a month.
- When ready to serve, slice the roll into ¼-inch-thick rounds and remove the parchment. (Only 4 slices of compound butter are need for this recipe.)
- Preheat the oven to 375 degrees Fahrenheit.
- Generously season the sea bass with salt and pepper. In a large cast iron skillet over medium heat, warm the oil until a few water droplets sizzle when carefully sprinkled in the skillet. Sear the sea bass, skin side up, until it is well browned and easily releases from pan, about 4 minutes. Flip over and cook until seared, about 1 minute. Transfer the pan to the oven and roast about 5 minutes or cooked to the desired degree of doneness.
- Serve each fillet with a slice of compound butter on top.
GRILLED GARLIC BUTTER SEA BASS

- Preheat grill for medium-high heat.
- To prepare butter sauce: combine butter, lemon juice, garlic and parsley in a small saucepan. Remove from heat once the butter has melted; about 2 minutes on the stove top.

- Instructions In a small bowl mixed together all the seasonings and set aside. Melt 4 of the 5 Tbsp's of butter in a small sauce pan. In a blender, blend on chop setting the olive oil, garlic and parsley slightly course (you can also mince by hand, but mama don't got time for that). Transfer this garlic blend into sauce pan with the melted butter and stir to blend together. Simmer on low for a couple of minutes then turn off heat. Heat your cast iron grill, or skillet, to medium heat and melt the remaining tbsp of butter. Sprinkle then seasoning over the sea bass filets with a spoon on each side until well coated. Place fish on the heated grill or pan and cook on each side for about 5-7 minutes. While each side is cooking, coat with a spoonful of the butter sauce. Cook fish until easily penetrated with fork in the center. Plate the fish and then top with the rest of the butter sauce. Top with capers if you choose.

- Gather the sauce ingredients.
- Combine the butter, lemon juice, garlic, and parsley in a small saucepan over medium-low heat.
- Cook until the butter has melted. Set aside.
- Gather the remaining ingredients.
- Preheat the grill to medium-high heat. Combine the garlic powder, paprika, onion powder, and salt in a small bowl.
- Sprinkle the seasoning mixture on both sides of the fish.
- Right before placing the fish on the grill, make sure to clean and oil the grill grates to keep the fish from sticking during the cooking process. This can be achieved by using a large pair of tongs, folded paper towels, and a high smoke point oil (canola oil, peanut oil, or sunflower oil; olive oil will work in a pinch). Dip the paper towel into the oil and run it across the grates at least 3 times to create a nonstick surface.

GRILLED CHILEAN SEA BASS
Our Grilled Chilean Sea Bass is marinated in garlic, fresh thyme, and olive oil, then grilled to perfection! This simple, clean eating recipe adds a wonderful flavor without overpowering the beautiful, silky texture and delicate taste of this fish. - Remove any large bones from the Chilean sea bass, and slice into 4 fillets (about 6 ounces each - see Note #2). In a large Ziploc freezer bag (or medium glass bowl), add olive oil, sliced garlic, and chopped thyme leaves, and mix to combine (see Note #1). Place the fish in the Ziploc freezer bag (or mixing bowl), and seal the bag well. Smoosh the marinade around to coat each piece (or use tongs to turn the fish over in the marinade, and cover the bowl with plastic wrap). Refrigerate for 2 hours.
- Remove the fish from the fridge about 10 minutes before you are ready to grill, and transfer the fish to a plate (discard the marinade). Brush off excess bits of garlic (see Note #3), then season both sides of the fish with salt and pepper. Loosely cover with plastic wrap and leave at room temperature for a total of 5-10 minutes before grilling.
- Clean and prepare the grill on medium heat (to medium-high based on your grill), then place each fillet over indirect heat, and grill with the lid closed for about 3-4 minutes on each side (depending on thickness - See Note #4). Remove fish to a clean plate, and loosely cover with foil (about 5 - 10 minutes) while you plate your other side dishes. Serve on its own with a sprig of fresh thyme, and with our Fresh Roasted Red Pepper Sauce (or your sauce of your choice).
