Grilled Summer Fruit With Sweet Yogurt Dip image

1/4 cup light brown sugar
1 tablespoon water
1 large banana, cut diagonally into 1/2-inch pieces
2 plums, cut in half and pitted
4 rings pineapple
2 apricots, cut in half and pitted
1/8 teaspoon ground cinnamon
1 cup fat-free cherry vanilla yogurt

Steps:

  • Preheat grill. Mix together sugar and water in a small glass bowl. Heat in microwave until sugar dissolves. Brush syrup on fruit. Place fruit on a clean, medium-hot grill. Grill, basting with syrup occasionally, until slightly soft with markings from the grill, about 3 to 5 minutes. Turn fruit and grill other side until quite soft, about 1 minute more (see note). Remove fruit from grill and sprinkle with cinnamon. Serve with a small bowl of yogurt for dip. Note: Grill time depends on ripeness of fruit. Keep your eye on it and remove each piece as it is done.

1 cup pineapple (about 4 rings)
2 apricots or 2 peaches, cut in half and pitted (or both)
1/8 teaspoon ground cinnamon
1 cup fat-free cherry vanilla yogurt

Steps:

  • Preheat clean grill, (Spray with pam).
  • Mix together sugar and water in a small bowl; heat in microwave until sugar dissolves; Brush syrup on fruit.
  • Place fruit on medium-hot grill; Grill, basting with syrup occasionally, until slightly soft with markings from grill, about 3 to 5 minutes.
  • Turn and grill other side until quite soft, about 1 minute more, (NOTE: Grill time depends on ripeness of fruit, Keep your eye on it and remove each peice as it is done).
  • Remove fruit from grill and sprinkle with cinnamon; serve with a small bowl of yogurt for dip.

1 cantaloupe
1 lb large strawberry
4 tablespoons balsamic vinegar
1 tablespoon lime juice
1 cup plain yogurt
1/2 ounce bittersweet chocolate
1 ounce ouzo
1 tablespoon brown sugar

Steps:

  • Cut cantaloupe in half vertically and take seeds out and cut the cantaloupe in 2 inch wedges. Hull and rinse the strawberries.
  • Mix the balsamic, and lime juice together and put in a large zip lock. Place the fruit in the bag a little at a time coating them thoroughly and put on a plate till all fruit is covered.
  • Take the 1 ounce of ouzo and brown sugar and heat to a boil. Shut off heat and remove from burner. Place the 1/2 ounce bittersweet chocolate into the pan and allow to melt stirring constantly so it wont stick to bottom. Cool 5 minutes and then add to 1 cup yogurt in a small bowl. Mix thoroughly. Put in fridge till fruit is done.
  • Heat up the grill and place cantaloupe wedges on a medium flame for 3-4 minutes a side or until well caramelized. Do the same with the strawberries.
  • Remove the cantaloupe from the rind and cut two inch pieces and arrange fruit on a serving plate and place dip in middle.
  • Have toothpicks handy to handle the fruit.

1 lb large strawberry
1 cantaloupe
1 honeydew melon
4 tablespoons balsamic vinegar
2 tablespoons lime juice
1 cup plain yogurt
1 teaspoon vanilla
2 teaspoons sugar

Steps:

  • Hull and wash strawberries.
  • Cut melons vertically and remove seeds. Cut each half of melons in half and then make 2 inch wedges from them.
  • Mix the vinegar and lime juice in a bowl and place melon wedges in a large bag and coat evenly and cook wedges on a med flame grill for 4 mins each side or carmelized nicely. With left over marinade put strawberries in the bag and coat evenly and cook each for 3 mins each side.
  • After removing fruit from grill remove the rinds from the melon and cut in 2 inch pieces.
  • Leave the strawberries whole.
  • Mix the yogurt vanilla and sugar in a serving bowl. Have some toothpicks handy to grab the fruit. Dip and enjoy.
