Pizza dough made from scratch is topped with mozzarella cheese, sauce, and your choice of savory toppings, then grilled to perfection for a fun outdoor treat.

- Start charcoal fire or preheat gas grill to medium-high heat.
- Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute. Gradually add enough flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic but not sticky, about 5 minutes.
- Divide dough into 8 portions. Pat or roll dough on a well-floured counter to about 8-inch circles; they do not need to be perfect.
- Brush both sides of crust with additional oil. Using hands, lift each crust carefully and place on grill. Cook for 3 to 4 minutes until bottom is lightly browned and top looks set. Using long handled tongs, remove crust from grill, grilled side up, to a platter or baking sheet.
- Lightly add sauce and top the grilled side of each pizza crust. Excess sauce or toppings makes the pizza hard to handle. Repeat with remaining pizzas.
- Carefully slide each pizza onto the grill. Cook an additional 3 to 4 minutes until bottom of crust is browned and cheese is melted. Remove from grill and serve immediately.

- 1. For a charcoal or gas grill, place one homemade pizza crust on a grill rack over medium-low heat. Cover and grill for 1-2 minutes or until dough is puffed in some places and starts to become firm. (if crust is frozen, grill for 2-3 minutes). 2. Spread crust with mascarpone cheese and top with 2 cups total of some or all of these grilled fruits (sliced strawberries, mangoes, peaches, watermelon, oranges, and/or pineapple). 3. Top with fresh blueberries and fresh basil leaves. 4. Drizzle with honey. Grilling times: Pineapple: Peel and core, then cut into 1/2" slices. Halve slices after grilling. 4-5 minutes. Watermelon: Cut into 1/2" slices and remove rind. 3-4 minutes. Oranges: Peel and slice into 1/2" thick slices. Remove any seeds. 1-2 minutes. Strawberries: Hull and halve. If large enough place directly on grill. 1-2 minutes. Mangoes: Seed and peel firm mangoes. Slice into wedges. 1-2 minutes.
GRILLED FRUIT PIZZA
Steps:
- Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
- In a mixing bowl, combine softened butter, cream cheese, sugar, and almond extract. Beat with hand mixer on low speed until smooth and creamy. Set aside.
- Combine honey and water in a small bowl. Stir until honey is dissolved. Set aside.
- Unroll pizza dough onto hot oiled grill. Cook for 4 minutes on each side. (TIP: use a cookie sheet as a big spatula when flipping the crust and removing from grill.) Brush with honey mixture and cook for 2 minutes more. Remove crust from grill. Spread with cream cheese mixture and arrange fruit on top.
- INDOOR: Preheat oven to 425 degrees F. Lightly spray baking sheet with cooking spray; set aside. Carefully unroll dough and place on prepared baking sheet. Press out dough with fingers to form 13 by 9-inch rectangle. Brush dough with honey mixture and bake in preheated oven for 8 to 10 minutes or until crust turns golden brown. Remove crust from oven and top as directed.
PIZZA ON THE GRILL I
Even with a baking stone, a conventional oven is no match for a professional oven when it comes to making pizza. At home, or rather in your backyard, the grill is the way to go. The heat of a hot grill is perfect, and makes it possible to make incredible pizza at home. Use your favorite toppings, but keep in mind not to overload the pizza. Keep it light. Try it - everything is better on the grill!

- In a bowl, dissolve yeast in warm water, and mix in sugar. Proof for ten minutes, or until frothy. Mix in the salt, olive oil, and flour until dough pulls away from the sides of the bowl. Turn onto a lightly floured surface. Knead until smooth, about 8 minutes. Place dough in a well oiled bowl, and cover with a damp cloth. Set aside to rise until doubled, about 1 hour. Punch down, and knead in garlic and basil. Set aside to rise for 1 more hour, or until doubled again.
- Preheat grill for high heat. Heat olive oil with garlic for 30 seconds in the microwave. Set aside. Punch down dough, and divide in half. Form each half into an oblong shape 3/8 to 1/2 inch thick.
- Brush grill grate with garlic flavored olive oil. Carefully place one piece of dough on hot grill. The dough will begin to puff almost immediately. When the bottom crust has lightly browned, turn the dough over using two spatulas. Working quickly, brush oil over crust, and then brush with 2 tablespoons tomato sauce. Arrange 1/2 cup chopped tomatoes, 1/8 cup sliced black olives, and 1/8 cup roasted red peppers over crust. Sprinkle with 1 cup cheese and 2 tablespoons basil. Close the lid, and cook until the cheese melts. Remove from grill, and set aside to cool for a few minutes while you prepare the second pizza.

- For the cookie crust: Preheat the oven to 350 degrees F.
- In a large bowl, cream the granulated sugar, butter, vanilla and lemon and lime zests thoroughly. Add the eggs and beat until light and fluffy. Add the milk and mix. In a medium bowl, sift together the flour, baking powder and salt. Blend the flour mixture into the butter and sugar mixture. Divide the dough in half, flatten into discs and wrap with plastic wrap. Refrigerate for 1 hour or freeze for 20 minutes.
- Roll out the 2 pieces of dough and put each one on a baking sheet. Bake until the cookie dough is cooked and golden brown but not overly crisp, 8 to 10 minutes. Allow to cool completely.
- For the topping: Using a mixer with the whisk attachment, whip together the cream cheese, powdered sugar, vanilla and lemon zest in a medium bowl until light and fluffy.
- For the apple jelly glaze: Mix the apple jelly and 3 tablespoons water together in a bowl.
- For the grilled fruit: Heat a grill pan to medium-high heat and oil with the coconut oil. Thread the strawberries, kiwis, peaches and pineapple slices separately onto skewers (there should be about 2 skewers per type of fruit) and lay them onto a plate. Brush with apple jelly glaze. Turn the skewers over and brush the other side with more glaze.
- Grill the fruit, turning once, until grill marks appear, 2 to 3 minutes. Remove the fruit from the skewers, placing each type of fruit into individual bowls.
- Serve the cooled crusts with the cream cheese topping, bowls of grilled fruit and the remaining apple jelly glaze. Let everyone build their own pizza by spreading the topping onto the crust, decorating with as much fruit as desired and finishing with a final brushing of apple jelly glaze for gloss!
