Four 1 1/2-inch-thick slices French bread
1 cup marshmallow creme
1 cup chocolate-hazelnut spread
1/2 cup semisweet chocolate chips
1/4 cup half-and-half
1 tablespoon honey
1 teaspoon ground cinnamon
3 large eggs
Nonstick cooking spray, for the grill pan
12 strawberries, halved
1 jar caramel, for serving
Bittersweet chocolate, for shaving
Warm maple syrup, for serving

Steps:

  • Preheat a grill pan or grill on medium heat.
  • Make a pocket in each slice of bread and set aside. In a medium bowl, mix together the marshmallow creme and hazelnut spread until smooth, then stir in the chocolate chips. Fill each pocket with some of the spread.
  • Whisk together the half-and-half, honey, cinnamon and eggs in a shallow dish. Dip each bread slice in the batter and set aside.
  • Lightly spray the grill pan with cooking spray. Grill the French toast until well-marked and crisp, being careful not to burn it, 2 to 3 minutes on each side.
  • Meanwhile, place the strawberries cut-side down on the grill pan and grill until slightly cooked, 1 to 2 minutes. Set aside.
  • Transfer the French toast to individual plates, drizzle with caramel, shave over chocolate, top with grilled strawberries and serve alongside the warm syrup.

Grilled Peach Toast With Pimiento Cheese image

Sweet peaches, spicy pimento cheese spread, and smoky grilled bread combine in this ultimate summer toast.

2 firm-ripe peaches, halved and pitted
2 tablespoons plus 1 teaspoon blended oil
1 medium-size ripe avocado
4 (1⁄2-inch-thick) slices multigrain boule-style bread
Smoky Pimiento Cheese With Bacon
2 tablespoons extra-virgin olive oil
1⁄4 cup thinly sliced red radishes (about 3 ounces)
1 bunch watercress
1 teaspoon gray sea salt
1⁄2 teaspoon coarsely ground black pepper

Steps:

  • Preheat a grill to medium-high (450°F).
  • Brush the peach halves with 1 tablespoon of the blended oil, and place on the grill grates, cut sides down. Grill, uncovered, until grill marks appear and the juices begin to release, about 3 minutes. Remove from the grill, and slice. Set aside.
  • Cut the avocado in half lengthwise, pit, and brush cut sides with 1 teaspoon of the blended oil. Place halves, cut sides down, on the grill grates. Grill, uncovered, just until the avocado is charred and begins to soften, about 5 minutes. Remove from the grill.
  • Brush the bread slices with the remaining 1 tablespoon oil, and place on the grill grates. Grill until the bread is toasted, about 2 minutes per side. Remove from the grill.
  • Spread Pimiento Cheese onto 1 side of each piece of toast. Cut each piece into 4 equal rectangles, keeping the pieces together.
  • Scoop the avocado from the peel into a medium bowl and mash with 1 tablespoon of the extra-virgin olive oil until it is chunky and spreadable. Spoon onto the toast, and top with sliced peaches.
  • Top the toast slices with radish slices and watercress leaves. Drizzle the remaining 1 tablespoon extra-virgin olive oil over the toast slices, and sprinkle with gray sea salt and black pepper.

Croissant French Toast Stuffed With Grilled Peaches image

4 eggs
1 cup heavy cream
1 tablespoon vanilla extract
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 peaches
2 tablespoons butter, melted
1 lemon, juiced
2 tablespoons sugar
4 croissants, sliced in 1/2 lengthwise
Bourbon Pecan Maple Syrup, recipe follows
Fresh mint sprigs, for garnish
1/4 cup butter
1/2 cup bourbon
1 cup maple syrup
1/2 cup chopped pecans

Steps:

  • Prepare coals on a grill and let heat reduce to a moderate heat.
  • In a blender, combine eggs, cream, vanilla, cinnamon, and nutmeg. Blend until the ingredients are smooth. Set aside.
  • Slice peaches in half and remove the pit. Brush the flesh side of each half with melted butter. Place the peaches on the grill for 5 minutes, or until the flesh side is evenly caramelized and begins to soften. Remove the peaches from the grill and dice them. Transfer to a bowl and add lemon juice and sugar, to taste. Set the peach mixture aside.
  • Pour the egg batter into a pie plate. Dip the croissant halves into the batter, making sure that each side is coated. Place the croissants on the grill, flat side down. Grill for 1 to 2 minutes, or until the batter appears cooked and the croissant begins to darken; watch carefully, as they will cook quickly. Flip the croissants and grill on the other side for 1 to 2 minutes. Remove the croissants from the grill.
  • Place the bottom half of 1 croissant on a plate. Add 1/4 of the peach mixture and place the top half of the croissant over the peaches. Pour Bourbon Pecan Maple Syrup over the top and garnish with fresh mint. Repeat with remaining croissants.
  • Melt butter in a medium saucepan over medium heat. Once the butter begins to brown, remove the pan from heat and add bourbon. Flambe the mixture until the alcohol has burned off and then add the syrup and pecans. Return the pan to the heat and simmer for 10 minutes.

  • Prep. Take the chill off the syrup by putting it in a coffee cup and letting it sit at room temp or heat it in the microwave for 20 seconds or in a saucepan on low for 5 minutes. Select your toppings and get them ready.

Check after two minutes. Use a spatula rather than tongs. Depending on the heat of your grill, they can go from beautifully golden to burnt in a minute or two. They are ready when GBD (Golden Brown and Delicious) and the surface no longer looks wet. Don't let them get too hard.
