½ cup orange juice
½ lime, juiced
1 tablespoon honey
1 teaspoon crushed red pepper flakes
4 (6 ounce) skinless, boneless chicken breast halves
1 tablespoon chopped fresh cilantro

Steps:

  • Whisk together the orange juice, lime juice, honey, and red pepper flakes in a bowl, and pour into a resealable plastic bag. Add the chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 30 minutes.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade. Place the chicken on the grill and cook the chicken breasts until no longer pink in the center and the juices run clear, about 6 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Top with cilantro and serve.

Number Of Ingredients 12

1 1/4 pounds skinless, boneless chicken breasts, thinly sliced
2 fresh limes, juiced
1 teaspoon of salt
1 teaspoon ground cumin
2 Haas avocados, peeled and cut into 2 inch dice
2 medium size ripe mangoes, peeled and cut into 2 inch dice
4 carboy or 2 waxed cucumbers, seeded and cut into thin half moons
1/3 cup vegetable oil
2 cups (packed) cilantro leaves, washed
1 scallion (green onion) trimmed
2 tablespoons white wine vinegar or 4 tablespoons or Verges
Freshly ground black pepper

Steps:

  • Trim the chicken of all fat and, if pieces are thicker than 3/8 of an inch, pound them between sheets of plastic or waxed paper until they are more uniformly even. Combine half of the lime juice with the ground cumin and salt and rub this over the chicken. Preheat the broiler or grill. Start to grill the chicken and cook for about 6 minutes a side or until just cooked through. Combine the avocados with the mangoes, cucumbers and remaining lime juice. Season with salt and pepper. When the chicken is cooked through, remove the pieces to a cutting board to cool slightly and, in a blender or food processor, puree the vegetable oil, cilantro, scallion with white wine vinegar or Verges and season well with salt and pepper. To serve, cut the chicken, across the grain, on a diagonal, into thin slices. Spoon about 1 1/2 cups of mango and avocado mix on each dinner plate. Center the chicken slices over the mango salad and spoon the cilantro vinaigrette over the chicken. Serve at room temperature.

This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

1 c white vinegar
1/2 c Wesson oil (canola oil is fine)
2 Tbsp salt
3 tsp poultry seasoning
1/2 tsp ground black pepper
4 large chicken breasts for grilling (can use quarters as well)

Steps:

  • 1. Mix all ingredients.
  • 2. Place in a leak-proof Ziploc gallon bag or covered glass dish. Marinate chicken overnight in the refrigerator.
  • 3. Grill over hot coals or gas grill turning and brushing chicken with marinade until done. Depending on the size of the chicken it could take about an hour.
