My Asian Style Grilled and Marinated Flank Steak is full of flavor, texture and that mmmmmm savory umami balance on your palate that makes you beg for more and more.

3 pounds flank steak
1/4 cup vegetable oil or peanut oil
1/2 cup LOW sodium soy sauce (I always use Kikkoman)
1/2 cup balsamic vinegar
1/4 cup teriyaki sauce
1/4 cup honey
juice of 1 lime
a few squirts of siracha (depending on how spicy you like it)
Thumb sized piece of ginger (minced on a microplaner)
5 garlic cloves minced on a micro planer.
4 scallions sliced thinly

Steps:

  • Combine soy sauce, balsamic vinegar (this is what gives that tangy, savory flavor) honey, teriyaki sauce, ginger, lime, garlic, a few squirts of siracha, vegetable oil and scallions into a bowl and mix to combine all the flavors.
  • Then throw all the ingredients in a zip lock bag along with the steak. Shake, shake, shake. Make sure it's all covered.
  • Place in the fridge for at least an hour and up to 24 hours.
  • If you live in the not so warm parts...like me... you can cheat a bit. Take a large oven proof frying pan and place it into a 500-degree oven for about 10 minutes. Or you can place it in there as the oven preheats.
  • Remove your steak out of the bag and place it on a paper towel, dabbing the moisture off of the steak.
  • Once the pan is heated, place the steak directly onto the pan. You will see it shrink up immediately from the high heat. Close the oven and allow to cook for 5 minutes then flip it and cook it for 2 minutes.
  • For me, this is the ultimate way to sear a steak nicely without clouding my house up with smoke.
  • Place the steak on a sheet pan and cover with foil. Let the meat rest for 10 minutes.
  • Slice into it on a bias, against the grain, as we previously discussed.
  • Sprinkle with scallions and grab some chop sticks! Dinner is served.

1 1/2 lb flank steak
1 tsp sea salt
1 tsp pepper, freshly cracked
1/2 cup olive oil
1 tsp italian herb mix
1/4 cup diced garlic
2 oz lemon juice
1 tbsp garlic powder
zest of 1 lemon

Steps:

  • Lay flank steak out flat, trim any extra fat or silver skin.
  • Generously season steak with salt and pepper.
  • Add olive oil, herbs, lemon zest and juice, and diced garlic to a large bowl or (preferably) a large plastic bag and mix well.
  • Add steak to bag and let marinate for 40 minutes up to two hours.
  • Heat grill or start charcoals - aiming for high heat (about 400 degrees).
  • Remove steak from bag, and sprinkle with garlic powder.
  • Cook steak on very hot grill, flipping every 4-5 minutes.
  • Wipe a little olive oil on the grill's grates before adding steak.
  • For medium rare steak, the steak will cook for about 10 minutes (this will vary depending on your grill, how hot it is outside, if it is windy, etc so be sure to check your steak and how quickly it's cooking).
  • For a steak that is medium all the way to well done, cook the steak directly over the heat, flipping twice, for 10 minutes as listed above - and then move slightly away from the heat (to a higher rack, or spot where the flames aren't directly underneath) so it will continue to cook to your preferred doneness without becoming too charred.
  • Remove from grill when steak is at your preferred doneness.
  • Place a small piece of foil over the steak to "tent" it and let it finish carryover cooking as it rests for 10 minutes.
  • When steak has rested for at least 10 minutes (don't rush - if you cut it right off the grill the steaks juices will all run out), slice it width-wise (so you have lots of thin strips instead of just a few long strips) against the grain - which is essential to keeping the steak from being too chewy or tough.
  • Serve immediately and enjoy!

This is a recipe that I got from my oldest son when he was a student at Purdue University in their Hospitality and Tourism program. This is the flank steak recipe that is served in the restaurant at the Student Union. Marinating time not included. This also works well on other cuts of steak.

1/4 cup fresh lime juice
1/4 cup gluten-free soy sauce
2 tablespoons water
1 teaspoon garlic, minced

1/3 cup vegetable oil
¼ cup minced red onion
¼ cup maple syrup
1 tablespoon minced garlic
1 tablespoon minced ginger

Steps:

  • In a medium-sized bowl whisk together soy sauce, vegetable, red onion, maple syrup, garlic, ginger, cilantro, salt, fish sauce, sriracha, and black pepper.
  • In a small bowl add ¼ cup of the marinade mixture and lime juice, set aside.
  • Add flank steak to a baking dish or large resealable plastic bag.
  • Pour the marinade over the steak, cover and refrigerate for 30 minutes.
  • Flip steak over, cover, and marinate 30 minutes in the refrigerator.
  • Remove the flank steak from the marinade and pat dry with paper towels to remove excess moisture from the surface.
  • Preheat grill over high heat.
  • The chamber temperature should be between 400 to 450ºF.
  • Add a small amount of oil on a folded piece of paper towel, and then carefully grease the cooking grid with the oil.
  • Once the grill reaches the recommended temperature, place the steak on the grill and close the lid.
  • Cook the steak until charred marks appear, 4 minutes.
  • Flip over and cook covered until desired doneness is reached, about 2 to 4 minutes. For medium rare (120 to 125ºF) or 130 to medium 135ºF (50 to 57ºC) internal temperature.
  • Transfer steak to a cutting board and tent with foil for 10 minutes before slicing.
  • Slice the grilled flank steak against the grain.
  • Pour reserved marinade over the steak or serve on the side with lime wedges.

1 lemon, juiced and zested
1 cup orange juice
¼ cup rice vinegar
¼ cup soy sauce

1 1/2 cups balsamic vinegar
2 tablespoons canola oil
1 small onion, coarsely chopped
1 large clove garlic, coarsely chopped
1/2 cup ketchup
1 tablespoon ancho chile powder
1 1/2 teaspoons paprika
2 teaspoons dijon mustard
1 1/2 teaspoons red wine vinegar
1 1/2 teaspoons Worcestershire sauce
1 small chipotle chile in adobo sauce, chopped
1 1/2 teaspoons packed dark brown sugar
2 teaspoons honey
2 teaspoons molasses
Kosher salt and freshly ground pepper
2 pounds flank steak
1 French baguette, halved lengthwise and cut into 4-inch pieces
Extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup grated monterey jack cheese
Sliced scallions, for serving

Steps:

  • Make the sauce: Bring the balsamic vinegar to a simmer in a small saucepan over medium heat and cook until reduced by about half, 15 to 20 minutes. Set aside. Heat 1 tablespoon canola oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onion and cook until soft, 3 to 4 minutes. Add the garlic and cook 1 minute. Add the ketchup and 3 tablespoons water and bring to a boil. Reduce the heat to a simmer and cook 5 minutes. Add the reduced balsamic vinegar, the chile powder, paprika, mustard, red wine vinegar, Worcestershire sauce, chipotle chile, brown sugar, honey and molasses. Simmer until thickened, stirring occasionally, 10 minutes. Puree with an immersion blender or transfer to a blender and puree until smooth. Season with salt and pepper. Pour the sauce into a bowl and let cool to room temperature. (The sauce will keep for 1 week refrigerated in a sealed container. If it gets too thick, stir in 1 to 2 tablespoons water.)
  • Let the steak sit 30 minutes at room temperature before grilling. Meanwhile, preheat a grill to high. Brush the steak with the remaining 1 tablespoon canola oil and season liberally with salt and pepper. Grill over direct heat until browned on one side, about 3 minutes, then turn over and grill until the other side is browned, about 3 more minutes. Move to a cooler part of the grill, away from direct heat. Baste with the sauce and continue grilling, turning several more times, until medium rare, about 5 more minutes. Transfer to a cutting board and loosely tent with foil. Let rest 10 minutes.
  • Meanwhile, make the cheesy bread: Brush the cut side of each piece of bread with olive oil and season with salt and pepper. Grill on both sides. Remove from the grill and top each piece with a mound of grated monterey jack cheese. Put the bread on a piece of aluminum foil and return to the grill to melt the cheese. Transfer to a serving platter.
  • Thinly slice the steak against the grain. Arrange the steak slices on the bread and garnish with sliced scallions.

1/4 cup red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon chopped garlic
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh rosemary
Few dashes of Worcestershire sauce
Kosher salt and freshly ground pepper
2 pounds flank steak

Steps:

  • Make the marinade: Combine the canola oil, vinegar, mustard, garlic, oregano, parsley, rosemary and Worcestershire sauce in a food processor; season with salt and pepper. Pulse until the garlic and herbs are incorporated in the oil.
  • Place the steak in a resealable plastic bag. Pour the marinade over the steak and marinate in the refrigerator at least 30 minutes or overnight.
  • Make the sauce: Remove the steak from the bag and pour the marinade into a small pan. Bring the marinade to a boil, then reduce the heat to a simmer and cook until thickened, 2 to 3 minutes.
  • Preheat a grill to high and oil the grates. Grill the steak 3 to 5 minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 7 minutes, then slice against the grain. Serve with the herb sauce.
