Grilled Steak Salad with Green Beans and Blue Cheese image

Number Of Ingredients 8

1 pound slender green beans, trimmed
6 cups arugula (about 6 ounces)
4 cups cherry tomatoes, halved
1 1/4 cups pitted Kalamata olives or other brine-cured black olives, halved
1/2 cup plus 1 tablespoon olive oil
3 tablespoons balsamic vinegar
3 8- to 9-ounce New York steaks
1 cup crumbled blue cheese

Steps:

  • Cook green beans in pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Transfer to bowl of ice water and cool. Drain.
  • Prepare barbecue (medium-high heat). Combine beans, arugula, tomatoes, and olives in large bowl. Whisk 1/2 cup oil and vinegar in small bowl.
  • Brush steaks with remaining 1 tablespoon oil; sprinkle with salt and pepper. Grill to desired doneness, about 4 minutes per side for medium-rare. Cut steaks crosswise into strips.
  • Toss salad with enough dressing to coat. Season to taste with salt and pepper. Divide among 6 plates. Top with steak strips. Sprinkle cheese over.

Grilled Watermelon and Pole Bean Salad image

Two of summer's quintessential foods are grilled together, then tossed with crisp spinach and fennel for a lovely seasonal salad.

Number Of Ingredients 12

1 small seedless watermelon (3 to 4 pounds)
8 ounces pole beans or green beans, stemmed
5 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons plus 1 teaspoon apple cider vinegar
2 teaspoons Dijon mustard
1 small shallot, minced
5 ounces baby spinach
1/4 cup sliced chives (1/2-inch pieces)
1 tablespoon chopped fresh tarragon
2 teaspoons nutritional yeast
1 small fennel bulb, cored and thinly sliced on a mandoline, plus 1 tablespoon chopped fronds

Steps:

  • Prepare a grill or grill pan for medium-high heat. If using an outdoor grill, heat over medium-high heat until a thermometer registers 500 degrees F. You want the grill or grill pan to be screaming hot so the watermelon chars quickly. If it takes too long it will turn mushy.
  • Cut the watermelon in half lengthwise. Cut each half into 1-inch-thick half-moon slices. Grill the watermelon slices, working in batches if using a grill pan, until just marked, about 2 minutes per side. Transfer to a colander placed over a large bowl to cool and collect the juices. Once cool enough to handle and you have about 1 tablespoon watermelon juice, slice the rind off the watermelon and cut the flesh into 1-inch cubes. Set aside.
  • Meanwhile, toss the beans with 2 tablespoons of the olive oil, 1/2 teaspoon salt and a few grinds of pepper and place onto the center of a large piece of foil so that most of the beans are flat but some are still overlapping. Roll up all 4 sides of the foil to create a tray, leaving the top open so you can still see the beans. Transfer the foil to the grill and cook, covered, until the beans are softened and charred, 7 to 8 minutes.
  • Whisk the vinegar, Dijon, shallot, reserved 1 tablespoon watermelon juice, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Whisking constantly, slowly drizzle in the remaining 3 tablespoons olive oil until emulsified.
  • Add the spinach, chives, tarragon, nutritional yeast and fennel with fronds to a large bowl. Fold in the watermelon, beans and dressing. Season with salt and pepper and serve immediately.

1/4 cup olive oil
1/3 cup balsamic vinegar
2 tablespoons orange juice
1 tablespoon minced garlic
1/2 teaspoon chili flakes
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/4 pound flank steak, trimmed of all visible fat
4 large portobello mushroom caps (about 3/4 to 1 pound), wiped clean with a paper towel
1 tablespoon water
2 teaspoons Dijon mustard
3/4 pound green beans, trimmed
1 (5-ounce) bag baby spinach leaves (5 cups baby spinach, lightly packed)
4 vine-ripened tomatoes (1 pound), each sliced into 8 wedges
1/2 small red onion, thinly sliced

Steps:

  • Make marinade:
  • Combine 2 tablespoons olive oil, 3 tablespoons balsamic vinegar, orange juice, 2 teaspoons minced garlic, chili flakes, and 1/4 teaspoon each salt and pepper in a bowl and whisk. Place steak and mushrooms in a glass baking dish or sealable plastic bag and pour marinade on top. Marinate in the refrigerator for at least 1 or up to 4 hours.
  • Make dressing:
  • Combine remaining 2 tablespoons olive oil, 3 tablespoons vinegar, 1 teaspoon minced garlic, water, mustard, and remaining 1/4 teaspoon each salt and pepper. Whisk until incorporated.
  • Place green beans in a steamer basket over a few inches of boiling water and steam until tender-crisp, about 3 minutes. Allow to cool in the refrigerator, or to cool quickly, drain and plunge in a bowl of ice water for 2 minutes. Drain and reserve.
  • Spray a grill or grill pan with nonstick cooking spray and heat over medium-high heat. Remove steak and mushrooms from marinade, and discard marinade. Grill steak until medium-rare and mushrooms until cooked through but still juicy, about 4 to 5 minutes per side for both steak and mushrooms. Remove to a cutting board and let rest about 10 minutes. Cut steak across the grain into 1/4-inch slices; cut mushrooms into 1/4-inch slices.
  • To assemble salad, toss steak slices, mushroom slices, spinach leaves, tomatoes, green beans and onions with dressing. Divide among 4 plates.
