Grilled Cod With Moroccan-spiced Tomato Relish image

EASY and quick dish, ideal for summertime. I can have this ready is almost no time so it's great for after-work. This recipe can also be made using walleye, sea bass or halibut. Serve over rice with a green salad.

4 (6 ounce) cod fish fillets
3 tablespoons olive oil
salt
fresh ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/8 teaspoon ground red pepper
1 clove garlic, minced
3 medium tomatoes, seeded and diced
2 tablespoons orange juice
1/2 teaspoon salt

Steps:

  • Lightly oil your grill then heat, or just heat your broiler.
  • Brush fillets with 1 tablespoon of the oil; season with salt and black pepper to taste; grill or broil fish until done, 8-10 minutes.
  • Heat remaining 2 tablespoons oil in a small skillet over high heat; add cumin, coriander and red pepper; cook until fragrant, 45 seconds; add garlic; cook, stirring constantly, 15 seconds.
  • Transfer spice mixture to a medium-sized bowl; add tomatoes, orange juice and salt to taste; stir gently to combine.
  • Top hot fish with tomato mixture.

Grilled Whole Fish, Green Tomato and Herb Vinaigrette and Charred Lemon image

1 cup olive oil
1/2 cup finely diced green tomatoes
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
1/4 cup chopped fresh tarragon
1/4 cup yuzu juice
1/8 cup rice vinegar
3 shallots, finely diced
2 cloves garlic, grated
2 lemons, halved
Four 1 1/2-pound whole fish, such as bronzino or snapper, gutted and scaled
Zest of 2 lemons
Salt and freshly ground black pepper
Sliced radishes, for serving
Fried slivered shallots, for serving

Steps:

  • For the green tomato and herb vinaigrette: In a small bowl, combine the olive oil, green tomatoes, mint, parsley, tarragon, yuzu juice, rice vinegar, shallots and garlic. Mix well. Set aside.
  • For the charred lemons: Preheat a grill or grill pan to medium-high. Set the lemon halves cut-side down on the grill. Cook, undisturbed, until charred, about 5 minutes. Set aside.
  • For the grilled fish: Rub the fish with the lemon zest and sprinkle with salt and pepper. Place on the grill and cook, flipping halfway through, until the skin is crispy and charred and the flesh is flaky and opaque, about 10 minutes.
  • Transfer the fish to dinner plates. Serve each with a charred lemon half and a small bowl of vinaigrette on the side.

Simply Grilled Basil-Rubbed Swordfish with Tomato-Green Olive Relish image

1 clove garlic
Kosher salt
2 anchovy fillets, patted dry, chopped
2 tablespoons sherry vinegar
Pinch red pepper flakes
1/4 cup extra-virgin olive oil
2 plum tomatoes, halved, seeded and finely diced
1/4 cup chopped green olives
1 tablespoon capers, rinsed and drained
1/4 cup fresh basil leaves, chopped, plus 8 basil leaves for rubbing
4 swordfish steaks, each about 1 1/2-inches thick
2 tablespoons canola oil
Freshly ground black pepper

Steps:

  • Smash the garlic, sprinkle it with salt, and mash and smear it to a paste using the flat side of a knife. Add the garlic paste to a medium bowl along with the anchovy, vinegar, pepper flakes and some salt. Whisk to combine, then slowly whisk in the olive oil until emulsified. Add the tomatoes, olives, capers and chopped basil and gently stir to combine. Let the relish sit at room temperature for at least 15 minutes to allow flavors to meld.
  • Heat a grill to high. Rub both sides of each swordfish steak with two of the basil leaves, leaving some of the now-bruised basil on top of each steak. Brush the steaks with the canola oil and sprinkle with salt and pepper. Grill, basil-side down, until charred, about 4 minutes. Turn and cook until opaque throughout, another 4 minutes. Remove to a platter and immediately spoon the relish over the fish.

1/2 cup finely chopped red onion
3/4 teaspoon salt
1 large tomato, seeded and chopped
4 teaspoons red-wine vinegar
1 teaspoon sugar
2 tablespoons chopped fresh dill
24 sea scallops (1 1/2 lb), tough muscle removed from side of each if necessary
Vegetable oil for brushing grill

Steps:

  • Prepare grill for cooking.
  • Make relish:
  • Soak onion in 1 cup water with 1/2 teaspoon salt 15 minutes, then drain. Stir together onion, tomato, vinegar, sugar, and remaining 1/4 teaspoon salt and let stand 20 minutes. Drain relish in a sieve, discarding liquid, then stir in dill.
  • Cook scallops while relish is standing:
  • Pat scallops dry and season with salt and pepper. Grill scallops in 2 batches on lightly oiled grill rack, turning once, until just cooked through, 4 to 5 minutes.
  • Serve scallops with relish.
