Grilled Butterflied Trout with Lemon-Parsley Butter image

Four 1-pound trout without head, scaled, gutted, and butterflied (skin on)
Olive oil or canola oil
Kosher salt and freshly ground pepper
Lemon-Parsley Butter, recipe follows
Parsley sprigs, for garnish
Lemon wedges, for garnish
1 stick unsalted butter, at room temperature
2 teaspoons finely grated lemon zest
2 tablespoons fresh lemon juice
3 tablespoons finely chopped fresh Italian parsley leaves
Salt and freshly ground pepper

Steps:

  • Heat grill to high. Brush trout on both sides with oil and season with salt and pepper. Grill, skin-side down, until slightly charred and crisp, 2 to 3 minutes. Carefully turn each fish over and continue cooking until just cooked through, 3 to 4 minutes longer. Remove from the grill and top each with 2 tablespoons Lemon-Parsley Butter. Garnish with parsley sprigs and lemon wedges and serve.
  • Mix all ingredients together in a medium bowl and season with salt and pepper, to taste. Cover and refrigerate for at least 1 hour before using.

500 grams fish fillets
1/2 teaspoon rosemary
2 tablespoon parsley
1/4 teaspoon lemon juice
0 As required salt
0 As required black pepper
9 Numbers clove
175 grams salted butter
1 teaspoon garlic
1/2 teaspoon sugar

Steps:

  • Place a pan over medium flame and sprinkle some olive oil in it. Once the oil is hot, place the fish fillets in it. Let the fillets cook and sprinkle salt, 1/4 teaspoon of sugar and black pepper and add lemon juice over it. Grill it on both sides and once the fillets turn crispy, transfer them on a plate.
  • For the sauce, place a pan over medium flame and add cloves in it. Roast them lightly and then transfer them to a grinder jar. Grind them to form a coarse powdered mixture. Now, place another pan over medium flame and add butter along with chopped garlic to it. Saute these well until the butter melts and then add ground cloves, remaining sugar along with salt and black pepper powder over it. Mix it well until the mixture turns aromatic.
  • Remove the sauce from the flame, pour over the grilled fish fillets. Garnish with chopped parsley and rosemary. Serve your homemade Grilled fish in Garlic Butter hot to enjoy!

800 g/1,7lbs White fish, boned ((Approximately 200g/7oz per person))
3 tbsp butter
4 garlic cloves (crushed)
3 tbsp fresh lemon juice
2 tsp dried oregano/thyme
salt and pepper (to taste)
asparagus (washed and trimmed)

Steps:

  • Pre-heat the oven to 200ºC/400ºF and line a sheet pan with parchment/baking paper.
  • Combine the butter, lemon, garlic and herbs in a saucepan and bring to a simmer. Cook for 2-3 minutes until fragrant then remove from the heat and set aside to cool slightly.
  • Place the fish and asparagus onto the lined sheet pan then season with salt and pepper.
  • Pour the lemon butter sauce over the fish and asparagus and top the fish with lemon slices (optional).
  • Place in the oven and bake for 10-12 minutes or until the fish and asparagus are cooked. Fish is cooked when it flakes easily and the flesh is opaque, white throughout.
  • Remove from the oven and serve.

1 teaspoon lemon zest, finely grated
1/2 teaspoon salt
1/2 teaspoon dried rosemary
6 (6 ounce) white fish fillets (white fish)
3 medium lemons, halved

Steps:

  • Preheat grill to medium-high heat.
  • Coat cold grill rack with cooking spray; place over heat.
  • Combine butter, parsley, lemon zest, salt and rosemary in small bowl; set aside.
  • Coat fish with cooking spray; place on grid.
  • Grill, uncovered, 3 minutes.
  • Turn; grill 2 to 3 minutes longer or until opaque in center.
