Steps:
- In a large bowl, mix sugar, yeast, salt and 1 cup flour. In a small saucepan, heat water and oil to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until almost doubled, about 45 minutes., Punch dough down. On a lightly floured surface, roll dough into a 10-in. circle. Transfer dough to a piece of heavy-duty foil (18x12-in. rectangle) coated with cooking spray; spritz dough. Refrigerate, covered, 10 minutes. Meanwhile, in a small bowl, beat cream cheese, 1/4 cup honey and cinnamon until smooth., Carefully invert dough onto grill rack; peel off foil. Grill, covered, over low heat 5 minutes or until lightly browned. Turn; grill 1-2 minutes longer. Remove from grill to a baking sheet. Spread with cream cheese mixture. Top with figs. Return pizza to grill; grill, covered, 5-7 minutes longer or until crust is lightly browned and toppings are heated through. Drizzle with remaining honey.

GRILLED DESSERT PIZZA WITH PEARS, FIGS, AND HONEY MASCARPONE
Pizza makes a fun dessert, and this one can be served for breakfast as well. It's topped with seasonal fruit and a dollop of honey-flavored mascarpone cheese, but you can serve it with vanilla bean ice cream instead, if you prefer. Try other grilled fruits such as peaches or nectarines on this pizza.
Yield makes 4 small pizzas; serves 8

Steps:
- Prepare a medium-hot fire (425° to 450°F) in a wood-fired grill.
- Place the pears and figs in a bowl and gently toss with the balsamic vinegar. Grill the pears until marked but not charred on both sides. Lightly grill the cut sides of the figs. Remove from the heat and toss with the 2 tablespoons turbinado sugar, then set aside to cool slightly. Cut the fruit into bite-sized pieces if desired.
- Combine the honey and mascarpone in a small bowl. Stir in the orange zest and set aside.
- Flour a wood pizza peel; shape each dough ball into an 8- or 10-inch round on the peel. Lightly brush the top of the rounds with olive oil. Take to the grill and flip the rounds, oiled side down onto the grill. Cover and cook until puffed and marked from the grill, about 5 minutes. Turn over, brush with orange olive oil, and top sparingly with the pears and figs. Sprinkle more turbinado sugar over the tops of the pizzas, including the edges. Cook for 5 minutes, until the crust is golden.
- Let cool for 5 minutes, then cut into wedges and serve topped with the mascarpone mixture.

- Place oil in a pan with sprig of rosemary. Simmer for 1-2 minutes on medium high to medium heat. Do not let the sprig burn. Remove pan from heat and let oil cool with rosemary sprig still in it; about 6-10 minutes. Remove sprig and throw away. The olive oil is now infused. Set aside for later.
- Wash and blot figs dry with paper towels. Cut off stems and slice in half, vertically. Carefully thread onto skewers lengthwise; about 4-5 fig halves each.
- Once grill comes up to temperature, oil the grill grates well. Use a large pair of tongs, folded paper towels, and oil to achieve this. Make at least 3 passes to create a good non-stick surface. - Spread 1 TBS jam on each slice of bread. Lay cheese slices on one piece of bread, on top of the jam. Sprinkle a few pinches of salt and pepper onto cheese. Place greens on top of cheese and press sandwich halves together, so the jam holds everything in place.
- Add 1 TBS oil to a skillet over medium-high heat. Place sandwich in skillet and press to insure full contact with the hot surface (it should sputter a bit when you add it in). To get a head start on melting your cheese, optionally place a lid on top of the skillet so that the cheese melts more quickly. Let cook for 3-5 minutes on each side. Drizzle some honey/agave on the outside of the sandwich before flipping (it will heat up and become crisp).
- Once sandwich is golden and brown on both sides, remove from the skillet, slice into triangles, and eat immediately!

- Start by making the crust. Preheat the oven to 350F. In a large bowl, whisk together the water, 2 tablespoons of olive oil, and apple cider vinegar. Add the pizza dough mix and mix until the dough is completely hydrated. Note: You may need to add 1-2 tablespoons of water if your dough is crumbly.
- Roll the dough out on a parchment lined baking sheet so that it is about 1/8 inch thick. Par-bake the crust for 15 minutes.
- While the crust is cooking, caramelize the onions. Thinly slice the onion. Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Cook the onions slowly, stirring them every few minutes. After 10 minutes, sprinkle with a pinch of salt and continue to cook for another 5-10 minutes until onions have reduced in size and are caramel in color. Remove from heat.
- Preheat your grill to 450. You can either use an outdoor grill or an electric grill. Brush walnut oil over both sides of the par-baked flatbread and grill on one side for 4-5 minutes. Flip the flatbread. Top it with an even layer of caramelized onions, figs, walnuts, and vegan cheese (if using). Cover the grill and cook for another 4-5 minutes. When the crust is cooked all the way through and the toppings are heated, removed from the grill.

- Wash and dry the fresh figs. Cut to remove any remaining stem and slice each in half, vertically.
- Start by assembling each sandwich. Use two slices of bread, 4 slices of cheese, and 2-3 fig halves per sandwich. Assemble so the figs are in the innermost layer between 2 slices of cheese on each side. See the image above.
- If you want hot honey inside the sandwich, you can also spread some on one of the inner sides of a slice of the bread. Bring the sandwich layers together. Butter both of the outsides of the bread and place on a heated flat griddle pan.
- Use medium-heat and a flat griddle pan to cook the sandwiches. Cook for 3 minutes each side, using a spatula to flip it over after the first side is done and golden brown.
