The Greek Feta Grilled Cheese Sandwich combines feta cheese with tomatoes, onions, and olives to turn this classic salad into a tasty grilled cheese sandwich.

2 slices of bread
3 ounces of feta cheese thinly sliced (or however much you need to cover each slice of bread)
2 slices of tomato
2 slices of red onions
5 black olives chopped
Optional: pinch of oregano
butter

Steps:

  • Heat the pan on medium.
  • Add a slab of butter to the pan and let it melt completely.
  • Assemble half of the cheese on one slice of bread. Layer on the tomato slices, onions, and olives, (plus the oregano if you want it) and top with the other half of your cheese. Feta usually comes in a somewhat thin block, so cutting it into thin strips works well for a sandwich like this.
  • Once the butter is completely melted, coats the whole pan, and starts bubbling a little, put the sandwich into the pan. Cook for 4-5 minutes on one side, checking to make sure it isn't burning.
  • Once the first side is golden brown, flip and cook the other side. Add a sliver of butter to the pan if needed.
  • When both sides are a crispy golden brown and the cheese is melty, your Greek feta grilled cheese sandwich is done and ready to eat.

4 small tomatoes
freshly ground black pepper to taste
1 tablespoon olive oil
1 (4 ounce) package garlic and herb feta cheese, crumbled

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Slice off the top of each tomato. Use a spoon to hollow out the inside. Sprinkle the cavities with pepper. Rub the olive oil onto the outside of the tomatoes, coating well. Fill each tomato evenly with the feta cheese.
  • Place tomatoes on preheated grill. Cook until tomatoes are soft and wrinkled, and cheese is hot, about 15 minutes.

4 slices crusty bread, from a dense loaf (like sourdough)
4 tablespoons olive oil, approximately
8 ounces feta (approximately)
1 large tomatoes
2 teaspoons finely chopped fresh oregano leaves (or 1 tsp dried)
fresh ground black pepper

Steps:

  • Brush both sides of each bread slice with some oil. Cut enough 1/4-inch-thick slices from feta to cover 2 slices of bread and cut tomato into 1/4-inch-thick slices. Assemble 2 sandwiches with feta and tomato slices, seasoning filling with oregano and LOTS of pepper.
  • In a 12-inch nonstick skillet heat 1 tablespoon oil over moderate heat until hot but not smoking and cook sandwiches until golden, about 2 minutes on each side.
  • Variation: Adding sliced or chopped Kalamata olives is a delicious addition.
  • Note: This is a grilled sandwich that is delicious served at room temperature too.

Many thanks to my dear friend Joanna who served these beautiful and oh-so-flavorful mushroom "steaks" for dinner the other night. I thought I had died and gone to Vegetarian Heaven! We had them as the main course, but they can also be served as an appetizer or on a sandwich/burger. Joanna made her own pesto with fresh basil, toasted pine nuts and extra virgin olive oil. Prepared pesto will work fine, but if you can, I suggest making your own for the best flavor. These are super easy and you can make them ahead of time and refrigerate till ready to grill. Serving size indicates number of mushrooms. As an appetizer, one mushroom per serving will do, but for a main course I would recommend 4 servings of 2 mushrooms each. The recipe originated in Vegetarian Times and I'm posting here for safekeeping.

1/2 cup pesto sauce
1/2 cup olive oil
8 large portabella mushrooms, stemmed
1 lb feta cheese, crumbled
2 cups fresh tomatoes, peeled, seeded and diced

Steps:

  • Stir together pesto and olive oil, set aside.
  • If desired, scrape off black gills under mushroom caps, and discard (the original recipe calls for this step but it is optional).
  • Spoon 2 tablespoons pesto mixture into each mushroom cap and spread evenly.
  • Gently mix feta cheese with diced tomatoes, and divide evenly to top each mushroom.
  • If making ahead, wrap the topped mushroom in plastic wrap, and chill till ready to grill.

1 tablespoon extra-virgin olive oil, plus more for brushing

½ cup crumbled feta cheese
1 teaspoon lemon zest
4 slices sourdough bread
1 large ripe tomato, thinly sliced

Steps:

  • Stir mayonnaise, feta cheese, and lemon zest together in a small bowl until well blended. Spread feta mixture evenly over bread slices.

1 1/2 pounds large shrimp (21 to 24), shelled and deveined
1 pint cherry tomatoes, trimmed
Canola oil, for brushing the skewers
Kosher salt and freshly ground black pepper
Greek extra-virgin olive oil, for cooking
3 cloves garlic, chopped
1 shallot, chopped
1/4 cup white wine
2 teaspoons smoked paprika
Pinch ground cinnamon
Pinch red pepper flakes
Clover honey, for sweetening
2 tablespoons finely chopped fresh mint, plus sprigs for garnish
1 tablespoon finely chopped fresh oregano
Finely grated fresh lemon zest
8 ounces Greek feta, patted dry and crumbled
6 pita breads, warmed, for serving
Special equipment: Wooden skewers, soaked in cold water for 2 hours

Steps:

  • For the shrimp: Prepare a charcoal grill for high direct heat. Skewer a few shrimp onto 2 skewers so the shrimp lay flat. Do the same with the tomatoes. Brush the skewers with canola oil and sprinkle with salt and pepper. Grill the tomatoes first, until slightly charred on both sides and soft, about 2 minutes each side. Reserve the shrimp skewers to the side.
  • Heat a few tablespoons of olive oil in a large saute pan over medium heat. Cook the garlic and shallots until soft, about 2 minutes. Add the grilled tomatoes, wine, paprika, cinnamon, red pepper flakes and sprinkle with salt and pepper. Bring to a simmer. Crush the tomatoes with a spoon. Cook until the sauce thickens. Taste; add some honey if the tomatoes aren't sweet. Sprinkle with salt and pepper. Stir in the mint, oregano and lemon zest.
  • Grill the shrimp until just cooked through and slightly charred, about 1 1/2 minutes each side. Remove the shrimp from the skewers and add to the tomato mixture. Toss the shrimp just to coat and transfer to a platter. Top the shrimp with the feta and mint sprigs and drizzle with olive oil. Serve with the pitas to dip in tomato juices.
