GRILLED EGGS
This is easily changed to fit your personal preferneces. Eggs on the grill in a muffin pan- easy for a low-carb side dish, breakfast, camping etc.. I've made these with parmesean and cooked asparagus, cheese and salsa as I describe here, with just a little salt and pepper- the possibilities are endless.

Steps:
- Preheat the grill to medium-high heat.
- Spray one muffin pan with cooking spray in each cup.
- Crack one egg in each cup, sprinkle with salt and pepper.
- Divide the peppers and cheese evenly among each cup.
- Place on the grill, cover, and cook fir about 2 minutes, or until desired doneness.
- Top with salsa and sour cream when ready to serve.

- Melt the brown sugar clumps for 15 minutes on low heat, just until it caramelizes.
- Once the sugar turns dark brown, pour the water into the saucepan and slowly stir to combine.

CHAR GRILLED PORK PADDIES WITH VIETNAMESE HERBS: BUN CHA

Steps:
- In a mixing bowl, combine the spring onions, garlic chives, shallots, garlic, black pepper, fish sauce and soy sauce.
- In separate bowl, combine half the marinade, minced pork, and egg and mix well.
- Add the sliced pork belly to the remaining marinade. Cover and marinate both meats in the refrigerator for 2 hours, or overnight for a better result.
- Form the pork mixture into small round balls with oiled hands, then slightly press down on each ball to form patties, about 2 inches/5 cm in diameter and 1/2-inch/ 1 cm thick.
- Heat a charcoal grill or barbecue to medium-high and grill the patties for 4 minutes on each side. Grill the pork belly for 2 minutes on each side or until brown.
- Place the noodles, herbs and patties on three separate platters.
- Transfer to 4 to 6 dipping bowls.
- For the dipping sauce: Add fish sauce, vinegar, sugar and water to a saucepan. Mix, then bring to the boil. Transfer to a dipping bowl and add chile, garlic and lime juice.

- 1. Preheat the grill to medium.2. When ready to cook, pierce a tiny hole in the end of each egg with an egg pricker or needle. Place the eggs on the grill and cook until the shell is browned and eggs are completely cooked, 10 to 12 minutes, turning often with tongs to ensure even cooking.3. Combine the fish sauce, lime juice, sugar, garlic, and chile in a small bowl and stir until the sugar is dissolved. Divide the sauce among 4 tiny bowls. - Preheat grill to medium.
- Pierce a tiny hole in the end of each egg.
- Place eggs on grill and cook until shell is browned and eggs are cooked through, 10-12 minutes, turning frequently with tongs.
- Combine fish sauce, lime juice, sugar, garlic and chile in a small bowl and stir until sugar is dissolved.
- Shell eggs and cut into quarters.
- To eat, place one egg quarter on a lettuce leaf with a sprig of mint and roll up. Dip in sauce.

Combine fish sauce, lime juice, sugar garlic, and chile in a small bowl. Stir until sugar dissloves. Divide sauce into 4 bowls. 3. Arrange lettuce and mint on a platter. 4.Serve the eggs in the shell. 5. To eat, shell the egg and cut in quarters, lengthwise. Each egg quarter, should then be wrapped in a lettuce leaf with a sprig of mint, dipped in sauce, and then eaten.
GRILLED CHICKEN WINGS WITH HONG KONG SPICES / SHEK O WINGS

- 1. Rinse the chicken wings under cold running water, then drain and blot dry with paper towels. Make 2 or 3 deep slashes, to the bone, in the meaty part of each wing. Set aside while you prepare the marinade.2. Combine the soy sauce, honey, ginger, garlic, scallions, and five-spice powder in a large bowl and whisk until the honey is dissolved. Set aside about half the marinade in a small covered bowl and refrigerate until ready to grill. Add the wings to the remaining marinade and turn to coat completely. Cover and let marinate, in the refrigerator, for at least 6 hours but preferably 24, turning the wings occasionally.3. Preheat the grill to medium-high.4. When ready to cook, drain the chicken wings, then thread each wing on a skewer, running the skewer through all three sections to hold the wing open as wide as possible. Oil the grill grate and arrange the wings on the hot grate. Grill, turning with tongs, until the thicker wing sections are no longer pink near the bone, 12 to 16 minutes in all, brushing the wings as they cook with the reserved marinade. Don't baste during the last 3 minutes of grilling.5. Transfer the wings to a serving platter and serve at once.Makes 12 whole wings serves 4 to 6 as an appetizer
