I use this marinade on grilled chicken drumsticks. I served it alongside homemade tortillas and guacamole, as well as Spanish rice.

Steps:
- Mix yellow onion, white onion, and garlic together in a bowl.
- Season chicken drumsticks with cilantro, oregano, cumin, thyme, garlic powder, salt, and pepper. Place chicken into the bowl with onion mixture. Squeeze lemon juice over the chicken, slice the rinds, and place into the same bowl. Cover and let sit in a refrigerator, 20 to 24 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 180 degrees F (82 degrees C), 30 to 45 minutes.

- Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.
- Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 165 degrees F (74 degrees C), 20 to 25 minutes. Remove from the grill and let sit for 5 to 10 minutes before serving.

- Preheat grill to 350°F.
- Sprinkle chicken drumsticks with salt and pepper so all sides are covered evenly.
- Lower the grill heat to low. It'll hover between 325°F-350°F.
- Place drumsticks on the grill in an interlocking pattern to ensure they are all relatively centered in the grill. Use two rows if necessary.
- Shut the grill cover and quarter turn the drumsticks every 10 minutes.
- Start basting the chicken with the barbecue sauce about 40 minutes in once all sides have been turned. Do this several times and continue to turn the chicken so all sides are covered. See Note.
- Use a digital thermometer to make sure internal temperature of the chicken reaches 165°F and serve warm.

- Heat the grill to 350F.
- Toss the chicken drumsticks in Steve's Basic BBQ Rub. Place on the grill and cook for 10 minutes. Keep the lid closed as much as possible, but watch for any flare ups. If there is a flare up, turn down the heat and more the chicken away from the flame.
- Use tongs to turn the drumsticks over and cook another 10 minutes.
- Brush with BBQ sauce and flip the drumsticks again. Cook for 5 more minutes, or until the internal temperature of the drumsticks is at least 165F (I prefer chicken drumsticks to have an internal temperature around 180F)
- Remove from the grill and brush one more time with BBQ sauce. Serve.

- In a bowl whisk together the beer, 3 tablespoons of the maple syrup, vinegar, mustard, rosemary, oregano, garlic, 1/4 teaspoon of the salt and the pepper. Transfer mixture to a large baggie or marinating dish - add chicken. Turn to coat and refrigerate for 4 hours or overnight.
- Spray grill rack with Pam and preheat grill to medium or prepare a medium fire in a charcoal grill.
- Drain chicken and discard marinade.
- Place chicken on grill, covered and turning occasionally for 30-40 minutes.
- 10 minutes before chicken is done, brush the chicken with the remaining maple syrup (2 T), turning frequently until chicken is browned and cooked through.

- Coat chicken in seasoning and oil and let vibe out on your counter, covered, for about 20-30 minutes.
- BAKE on a wire rack in a sheet pan at 350 for 40 minutes (give or take 5 depending on size). The wire rack helps circulate the air and get it crispy.
- With five minutes left to go, thinly coat in your favorite sauce.
- After the five minutes of baking with sauce on it, remove from oven and coat with sauce again.
- If grilling, grill chicken for 2 minutes on each side on medium heat to get them nice and CRISPY. If finishing in the oven, broil for 1-2 minutes on each side.

- In a saucepan over medium heat, melt butter and then add onion and sauté until soft (5 minutes). Add next 5 ingredients (ketchup - mustard)and 1/4 teaspoon pepper and chili powder. Reduce heat to medium low, and simmer for 15 minutes or until sauce thickens. Stir in bourbon and cook another 3-5 minutes. Remove from heat. Season with salt. (May be prepared up to one day ahead, covered and refrigerated).
- In a large baggie or paper bag add 1 1/2 teaspoons salt and 1/2 teaspoon pepper and then add chicken and shake well to coat.
- Let chicken stand at room temperature while preparing grill.
- Grill drumsticks for 20-30 minutes or until skin is crisp and chicken is done, brushing with sauce occasionally. When chicken is done brush with sauce again and cook until glazed (3-5 minutes).
- Serve with remaining sauce.
