Number Of Ingredients 8

3 plum tomatoes, peeled and roughly chopped, about 2 cups
3 tablespoons extra-virgin olive oil
1 medium onion, thinly sliced
2 medium green bell peppers, stem, seeds and ribs removed, roughly chopped
1/2 teaspoon salt
4 cloves garlic, minced
1 teaspoon sugar
1/2 teaspoon piment d'Espelette (or substitute hot paprika)

Steps:

  • Cut a small X into bottom of each tomato. Bring a pot of water to a boil, add tomatoes and cook until skin begins to wrinkle and peel at the edges of the cuts, about 30 seconds. Drain, rinse with cool water and peel off skin with your fingers. Roughly chop tomatoes and set aside.
  • In a 12-inch skillet over medium high heat, heat oil until hot but not smoking. Add onions, peppers and salt and sauté, stirring frequently, until onions are translucent and peppers have started to lighten in spots, about 10 minutes. Add garlic and continue to sauté for 1 more minute.
  • Stir in tomatoes, sugar and piment d'Espelette, reduce heat to medium, cover and cook until tomatoes are starting to fall apart and peppers are soft but still hold their shape, about 15 minutes. Remove cover and continue to cook, stirring frequently, until mixture thickens like a slightly runny relish, about 5 minutes more. Adjust salt.

¼ cup apple butter
2 tablespoons brown sugar
1 tablespoon ground black pepper

Kosher salt
1 tablespoon chili powder
1 tablespoon packed light brown sugar
1 teaspoon ground cinnamon
4, 1 1/2-inches thick double-cut bone-in pork loin chops (about 1 pound each)
2 large ripe peaches, quartered and pit removed
1 tablespoon vegetable oil
1/2 cup cherry tomatoes, halved
1/4 cup finely chopped red onion
Finely grated zest and juice of 1 lime
1 tablespoon chopped fresh herbs, such as chives, parsley, or mint)
Kosher salt and freshly ground pepper

Steps:

  • 1. For the pork: Preheat a grill to medium and lightly oil the grate. In a small bowl, mix 2 teaspoons kosher salt, chili powder, brown sugar, and cinnamon. Divide mixture evenly among chops and rub all over.
  • 2. Place the chops on hot grate over the flame and grill until marked and cooked halfway through, about 10 minutes. Turn the chops and move to a cooler area of the grill; cover and cook until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, about 10 minutes. Transfer chops to a cutting board and rest for 5 minutes.
  • 3. For the salsa: Meanwhile, brush the peach quarters with 1 teaspoon oil and place on the grill until marked and softened, 2 to 3 minutes. Roughly chop the peaches, about 3/4-inch pieces, and place in a medium bowl along with the tomatoes and red onion. Add 1/4 teaspoon zest to the bowl along with the lime juice, about 4 teaspoons. 4 double-thick rib or loin pork chops
2 tablespoons vegetable oil
Salt and freshly ground black pepper to taste
1 large yellow onion, peeled and diced
2 tablespoons minced ginger
2 tablespoons minced garlic
1/2 cup rum
1/4 cup red wine vinegar
1/2 cup ketchup
1/4 cup molasses
1 tablespoon allspice
Pinch of mace

Steps:

  • Build a small fire in one side of a covered cooker, using enough charcoal to fill a shoe box. It will take about 40 minutes for the charcoal to reach the right temperature.
  • Meanwhile, rub the chops lightly with 1 tablespoon of oil, sprinkle with salt and pepper to taste, and set aside.
  • In a small saucepan over medium heat, heat the other tablespoon of oil until hot but not smoking. Add the onions and saute, stirring occasionally, until transparent, about 5 to 7 minutes. Add the ginger and garlic, and saute, stirring, for 1 minute. Add the rum, vinegar, ketchup, molasses, allspice and mace, and bring to a boil. As soon as the mixture begins to boil, reduce the heat to low and simmer gently for 5 minutes, stirring frequently. Remove from the heat and set aside.
  • Place the chops on the grill directly over a hot fire and cook for 3 to 4 minutes a side. When they are nicely seared, move them to the side of the grill with no fire and let them cook slowly, uncovered, about 10 minutes a side. During the last minute of cooking, brush the chops with the sauce. Cut into one chop to make sure it is cooked through and just lightly pink at the center. Remove from the grill and serve drizzled with any extra sauce.

1/2 teaspoon thyme
1/4 teaspoon chipotle chile powder (or other red pepper)
1/2 teaspoon chili powder
1/2 teaspoon Cajun seasoning
1/2 teaspoon salt
1/8 teaspoon fresh black pepper (or to taste)
2 tablespoons extra virgin olive oil (to coat grill or rack)

Steps:

  • Gather the ingredients.
  • Combine seasonings-thyme, chipotle chili powder, chili powder, Cajun seasoning, salt, and pepper-and cover pork thoroughly. Let the chops stand at room temperature for about 10 to 15 minutes.
  • Coat the grill pan or broiler rack with olive oil.
  • Pan grill over medium heat or broil about 4 inches from the heat source for about 6 minutes.
  • Turn and grill for 6 to 8 minutes longer-until chops are cooked through.
  • Cook time depends on the thickness of chops, but check to make sure meat is at least 145 F in the center of the thickest chop. Use an instant-read thermometer to check the internal temperature of the chops.
  • Serve with potatoes and a leafy green vegetable or salad.

  • Marinade ... Add all the ingredients to a bowl or ziploc bag; then, either mix - or close the bag and shake. Then, add the pork (tenderloin or chops), and make sure it is well coated. Marinate 4-6 hours for individual chops/slices; or, over night for a whole tenderloin.
  • Once they have marinated, remove; pat dry; and, let them come to room temp. Brush lightly with olive oil, and season with plenty of salt and pepper on both sides.
  • This is grilled, so I like to use my outdoor grill. This works just as well on an indoor grill pan too. Grill until you get the donenesss you like. I prefer a nice pink medium for me. Remember, depending on what type of cut you are using, cooking times will vary. For company, I always use a tenderloin. But, for me, when the full loin goes on sale - pick one up. Cut it up and freeze. This is a great way to make 1-2 slices just for you.
  • NOTE ... I DO NOT brush the marinade on the pork as it cooks. I know, some boil the marinade, and re-use it ... I don't find it necessary; also, I don't like to take the chance, health concerns. If you are someone who likes a lot of sauce or glaze ... Double the marinade. Marinate in 1/2 of mix; and keep the other half as a glaze. Honestly, I think it has enough flavor just from marinating.
