Steps:
- Cut the cucumber in half and then slice each half down the middle lengthwise. Use the tip of a teaspoon to scoop out the center seeds. Cut each half into thin slices and place in a colander along with the red onion slices. Toss with salt and let sit in the sink for at least 30 minutes, until the water drains out.
- In the meantime, make the dressing: combine the sour cream, mayonnaise, white wine vinegar, dill, garlic, sugar and black pepper in a medium bowl and mix well.
- When the cucumbers and onions are ready, release any excess water by tapping the colander on the base of the sink, then use a large wad of paper towels to pat the vegetables dry. Add to the dressing and toss well. Cover and chill until ready to serve.
- Preheat the grill to medium-high heat. Clean the grill rack, then brush lightly with oil. Close the lid and let return to temperature. Rub the salmon with olive oil and season generously with kosher salt (about ¾ teaspoon) and pepper. Place the fillets skin side down and grill until golden brown and slightly charred, 4-5 minutes (resist the urge to peek or flip early; when fillets are nicely seared on the first side, they should release easily). Flip the fillets over and continue grilling until done, 2-3 minutes. Let cool slightly, remove the skin if desired, and serve with the cold cucumber-dill salad piled over top or alongside.

Steps:
- In a sauce pan, melt 1/2 cup butter over medium heat. Smash 4 garlic cloves with the flat side of a knife and add to saucepan with 1 tsp salt and 1/4 tsp pepper. Simmer 1 min or until fragrant. Add chopped dill and 2 Tbsp lime juice then immediately remove from heat.
- Arrange salmon fillets on a platter skin-side-down and spoon on 1/3 of butter sauce and brush over the tops. Let salmon marinate while preheating grill.
- Preheat grill to medium heat (350˚F to 400˚F). Oil the hot grates. Place salmon onto preheated grill, skin-side-up. Cover and grill over medium (350˚F) heat undisturbed, about 3 minutes on the first side.
- Carefully flip salmon over (it helps to have a spatula to loosen it and tongs to flip it over), brush on 1/3 of butter sauce then cover and cook another 2 minutes (or according to salmon grilling chart), until internal temperature reaches 140˚F (the temperature will continue to rise to an ideal 145˚F internal temperature off the grill).
- Transfer salmon to a platter and drizzle with remaining 1/3 of sauce in saucepan (if butter has hardened, heat on the stovetop just until melted). Garnish with fresh dill and serve with lime wedges to squeeze over salmon.

- When done, serve with dill sauce.

GRILLED SALMON WITH LEMON DILL SEASONING - HEY GRILL, HEY
From heygrillhey.com
- Preheat your grill for two-zone heat, meaning the high heat is on one half of the grill and the other half of the grill has no or very low heat. The overall temperature of the grill with the lid closed should be around 400 degrees F.
- Combine all ingredients for the lemon dill seasoning in a bowl and spread on all sides of the salmon filets, except for the skin.
- Place your salmon filets on the indirect heat side of the grill (no flames underneath) and close the lid. Cook for 8 minutes.
- Squeeze the fresh lemon juice over the salmon filets. If you want some char and grill marks, at this point, flip the salmon over and cook on the direct heat side of the grill for 2 minutes more, or until the internal temperature reads 145 degrees F. Or leave on the indirect side of the grill, close the lid again, and cook for 2-4 more minutes or until desired temperature is reached.

- Prepare the grill by brushing the cooking grates to clean and coat with oil or spray with nonstick cooking spray, close the lid and preheat to 450°F-500°F. A grill pan also works really well. If using a grill pan, preheat to high heat.
- Dry salmon well using paper towels. Generously brush olive oil on both sides of the salmon fillets. Rub seasoning mix evenly over the flesh side of the salmon. Squeeze 1 whole lemon over the top of the salmon.
- Grill the salmon flesh side down over direct high heat with the lid closed, for about 4-6 minutes or until or until salmon can easily be lifted off the grates. Use a spatula to flip the salmon and cook another 3-5 minutes. To ensure salmon is fully cooked, use an instant-read thermometer to measure the thickest part of the salmon. Depending on the desired doneness, target 125ºF for medium-rare, 140ºF for medium.
