1 cup dungeness crabmeat
3 tablespoons mayonnaise (or tartar sauce)
2 tablespoons minced onions
1/2 cup shredded gouda cheese (or use cheddar)
1/4 teaspoon fresh ground black pepper
1/4 teaspoon ground mustard
8 slices bread
3 -4 tablespoons butter, sofetened

Steps:

  • in a small bowl, mix crab, mayonnaise (or tartar sauce), onion, cheese, ground mustard and pepper.
  • Butter outside of sandwich of each slice of bread. Place 1/4 of the crab mixture on the unbuttered side of 4 slices of the bread and sandwich together with remaining 4 slices of bread (buttered sides out).
  • Heat large saute skillet to medium heat and cook sandwiches on both sides, until cheese is melted and bread is golden brown.

Way better than a Tuna Melt! Sometimes I add a slice of tomato to this sandwich before cooking, which makes it even more delicious.

2 cups crabmeat (Surimi works too if you can't afford or get fresh crab)
2 cups cheddar cheese
4 -5 tablespoons mayonnaise
2 green onions, minced
8 slices sourdough bread
5 tablespoons melted butter

Steps:

  • In a medium sized bowl place the crab or surimi and pick through to remove any bones or cartilage.
  • Stir in the cheese, green onions and just enough mayonnaise to hold it all together.
  • Spoon the crab on 4 slices of bread and top with remaining bread.
  • Heat a griddle to medium-low heat.
  • Brush tops of bread liberally with melted butter and place butter side down on hot griddle.
  • Cook slowly until golden and crisp on the bottom, about 2-3 minutes.
  • Brush tops with melted butter and turn to cook the other side, again slowly until bread is browned, 2 minutes more.
  • Cut in half and serve while still hot.

4 ounces cooked Maine lobster
4 ounces cooked blue crab meat
2 slices sweet bread
1/2 ounce whipped mayonnaise
2 slices American cheese
1 ounce shredded cabbage, plus for garnish
1 ounce diced tomato
1/2 ounce Lemon Beurre Blanc, recipe follows
1/2 ounce shredded cheese mix
1/2 ounce Lava Sauce, recipe follows
Paprika, for garnish
6 ounces shoestring fries, for serving
2 shallots, finely chopped
8 ounces white wine
2 ounces lemon juice
1 tablespoon heavy cream
12 tablespoons (1 1/2 sticks) cold unsalted butter, cubed
Salt and white pepper
4 cups mayonnaise
1/2 cup sambal
1 cup sweet Thai chile sauce
1/4 cup lemon juice

Steps:

  • Heat the lobster and crab meat.
  • Spread the bread slices evenly with mayonnaise and toast on a flattop grill. Repeat on reverse side.
  • Add the American cheese, lobster, crab meat, cabbage, tomato, Lemon Beurre Blanc and shredded cheese to one of the slices and form a sandwich. Toast until the cheese is melted.
  • To serve, cut the sandwich into four squares and place the exposed ends on top of fanned out cabbage. Using a squeeze bottle, drizzle Lava Sauce diagonally across the top of the sandwich. Sprinkle paprika across the entire plate. Serve with shoestring fries.
  • Combine the shallots, white wine and lemon juice in a non-reactive saucepan over high heat and reduce to 2 tablespoons.
  • Add the cream to the reduction. Once the liquid bubbles, reduce the heat to low. Add the butter, one cube at a time, whisking first on the heat and then off the heat. Continue whisking butter into the reduction until the mixture is fully emulsified and has reached a rich sauce consistency. Season with salt and white pepper. Store beurre blanc in a thermos until ready to serve.
  • Mix the mayonnaise, sambal, chile sauce and lemon juice in a bowl until well blended. Refrigerate until ready to serve.

*Vegtable Oil
*1/4 Cup Home Made Cheese Sauce
Slices of Sharp Cheddar (or whatever you have, a combo of sharp and creamy is good too)
*1Large Onion sliced
1 lb Dungeness Crab meat

Steps:

  • 1. Preheat a heavy based frying pan or grill pan. Add a little butter and a drop of vegtable oil, when hot add onions cook on high temp for a couple of minutes, turn down temp and cook until onions are a little carmellized. (about 8-10 minutes) 2. Warm up Cheese Sauce. 3. Prepare sandwiches: spread cheese sauce on a slice of bread. add onions, add 1/4th of the crab, on the other slice of bread layer cheese slices. (butter on the bread on the inside is optional)put bread slices together. Repeat until you have four sandwiches. 4. Using the same grill pan preheaed again, butter one side of sandwiches, place on grill pan butter side down. Butter the other side of the sandwiches, cook about 5 minutes, flip and cooke 3-4 more until bread is brown and cheese is melted. Serve with any soup, tomato is my favorite.
