- In a large bowl, combine the watermelon, cucumber, onion, peppers and herbs. Drizzle with honey and lime juice; gently toss to coat. , Refrigerate for at least 1 hour. Serve with chips.

WATERMELON AND CORN SALSA
Fresh summer flavors that make an excellent topper for salads or sides with a bbq meal. Add a little cilantro for an extra fresh pop if you like. You could also spice it up with some fresh jalapeno. I designed this recipe myself, and my family loved it. I truly hope that you will try it and love it too!

- Mix tomatoes, corn, and sweet onion in a bowl. Sprinkle lime juice over tomato mixture. Pour olive oil over tomato mixture. Fold watermelon into tomato mixture. Season with salt to serve. Let sit 5 minutes before serving.

Here's what you need: corn, watermelon, fresh cilantro, limes, red onion, large jalapeño, cumin, coriander seed, sea salt, cider vinegar

Steps:
- Shuck the corn and place on the grill, allowing each side to be blistered with grill marks before rotating until all areas are uniformly grilled with dark brown spots.
- Using a sharp chef's or kitchen knife, cut the kernels off the cob.
- Place all ingredients in a mixing bowl, taste and adjust seasoning. Add a splash of cider vinegar if you like your salsa to have a punch
- Serve alongside tortilla chips.
- Enjoy!

GRILLED WATERMELON SALSA - THE KITCHEN PREP BLOG

- Heat grill {or grill pan} to medium-high heat (about 400°F). Spray or brush the watermelon slices with olive oil to lightly coat. Sprinkle all slices with cayenne pepper and sea salt.
- Place watermelon slices on grill, about 1-2 minute per side until light grill marks are visible. Remove and set aside to cool.
- In the bowl of a blender or food processor, add grilled watermelon, shallot, jalapeno, cucumber, tomato, cilantro, and lime juice. Pulse until slightly processed and combined, but still chunky.
