1 (1 ounce) package McCormick® Grill Mates® Chipotle Pepper Marinade
1/4 cup water
1/4 cup olive oil
1/4 teaspoon McCormick® Cinnamon
2 lbs rib eye steaks

Steps:

  • Mix Marinade Mix, water, oil and cinnamon in small dish. Place steak in large resealable plastic bag or glass dish. Add marinade; turn to coat well.
  • Refrigerate 15 minutes or longer for extra flavor. Remove steak from marinade. Discard any remaining marinade.
  • Grill over medium-high heat 5 to 7 minutes per side or until desired doneness.

1 package McCormick Grill Mates chipotle pepper marinade mix or other spicy marinade mix
1/4 cup water
1/4 cup vegetable or olive oil
1/4 teaspoon ground cinnamon
2 pounds rib-eye steak

Steps:

  • Preheat the grill to medium-high heat. Whisk together the marinade, water, oil, and cinnamon. Add to a ziptop plastic bag. Add the meat to the bag, press out any excess air, and seal. Turn the bag to coat the ribeye in the marinade. If desired, refrigerate the steak for 15 minutes. Remove the ribeye from the marinade and discard the marinade. Place the steak on the grill and cook 5-7 minutes per side or until desired temperature is reached. Remove from the grill and let stand for 5 minutes before slicing and serving.

1/4 cup unsalted butter, softened
1 tablespoon minced canned chipotle chile in adobo
1 teaspoon brown sugar
1/4 teaspoon kosher salt
2 teaspoons kosher salt
1 1/2 teaspoons dried ancho chile powder
1 teaspoon coffee, finely ground (can sub ground espresso)
1/2 teaspoon ground black pepper
1/2 teaspoon packed brown sugar
4 rib eye steaks, each about 1-inch thick, trimmed of excess fat

Steps:

  • In a medium bowl mix the butter ingredients until evenly incorporated.
  • Prepare the grill for direct cooking over high heat (450° to 550°F).
  • In a small bowl combine the rub ingredients. Lightly brush the steaks on both sides with oil and season evenly with the rub, gently pressing the rub into the meat. Allow the steaks to stand at room temperature for 15 to 30 minutes before grilling.
  • Brush the cooking grates clean. Grill the steaks over direct high heat, with the lid closed as much as possible, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once or twice (if flare-ups occur, move the steaks temporarily over indirect heat). Remove from the grill and smear the butter on top. Let rest for 3 to 5 minutes.

1 canned chipotle chile in adobo, ribs and seeds removed, plus 1 tablespoon adobo sauce
1 1/2 teaspoons lime zest (from about 2 limes), divided
1/3 cup fresh lime juice (from about 3 limes)
2 tablespoons vegetable oil
1 1/2 teaspoons kosher salt, plus more
1 teaspoon freshly ground black pepper, plus more
1 1/2 pounds skirt or flank steak
Lime wedges (for serving)

Steps:

  • Blend chile, adobo sauce, 1 tsp. lime zest, lime juice, oil, 1 1/2 tsp. salt, and 1 tsp. pepper in a blender until smooth. Place steak in a large resealable plastic bag, pour marinade over, and toss to coat. Marinate, tossing occasionally, at least 30 minutes at room temperature, or chill overnight.
  • If chilled, let steak sit at room temperature 30 minutes. Prepare a grill or grill pan for medium-high heat. Remove steak from marinade; discard marinade. Grill steak until an instant-read thermometer inserted into the center of steak registers 120-125°F for medium-rare, 2-3 minutes per side for skirt; 3-4 minutes per side for flank. Let rest 10 minutes before thinly slicing against the grain (to make slicing easier for skirt steak, cut into 5-6" segments, then slice against the grain).
  • Transfer to a platter and top with remaining 1/2 tsp. lime zest; season with salt and pepper. Serve with lime wedges alongside.

4 rib eye steaks
1/2 cup soy sauce
3 tablespoons oyster sauce
2 tablespoons lime juice
4 tablespoons sesame oil
3 tablespoons crushed red pepper flakes
5 garlic cloves, minced
1/2 bunch fresh cilantro, chopped and halved
4 tablespoons honey or 4 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons prepared horseradish
1/4 cup Bourbon
1 tablespoon ground cumin
1 tablespoon ground black pepper

Steps:

  • Combine all marinade ingredients and whisk together. Lay steaks flat in a glass baking dish. Let steaks come to room temperature. Stab meat with a fork - about three times for each steak.
  • Pour marinade over steaks. Marinate briefly - 15 to 30 minutes. Turn steaks over in marinade to coat both sides.
  • Heat grill on high for 10 minutes. Quickly grill steaks on high heat to char - approximately 4 minutes on each side.
  • Take steaks off grill and let them rest at least 5 minutes before eating.
  • Sprinkle extra cilantro and black pepper on top and serve.
