GRILLED STEAK STACKED TEX MEX SALAD

Steps:
- Pat steak dry and brush with oil; season all over with salt and pepper. Cook in hot non-stick or cast iron fry-pan or grill over medium-high heat for 10 to 12 minutes turning twice or more for medium-rare doneness. Let steak rest for at least 5 minutes before carving into thin slices.
- While steak rests, make the dressing: mash avocado with potato masher until smooth. Stir in green onion, ¼ cup water, lime juice and mayonnaise. Season with salt and pepper to taste.
- Divide dressing evenly among four 1 L mason jars. Divide veggies and meat among the jars, layering in the following order: sweet peppers, tomatoes, onion, beans, corn, chips, cheese, beef and salad greens.
- Seal tightly and keep refrigerated for up to 3 days. Shake before serving or pour out into salad bowl to combine before eating.
CHIPOTLE LIME GRILLED FLANK STEAK
Chipotle Lime Grilled Flank Steak is marinated for hours and then grilled to perfection. The steak has so much flavor from a marinade of lime juice, cilantro, chipotle peppers, garlic, and a little honey.

Steps:
- Add first 8 ingredients to a blender and blend until smooth.
- Pour into a large ziptop bag. Add flank steak, coating it well. Seal and refrigerate for at least 8 hours and up to 24 hours.
- Let flank steak sit at room temperature for 30 minutes before grilling.
- Pour marinade into a small saucepan. Boil for 5 minutes, stirring occasionally so it doesn't burn on the bottom.
- Season flank steak with salt and pepper. Grill for about 8 minutes per side, or until desired degree of doneness. Drizzle marinade over steak and let it rest for 10 minutes. Slice thinly against the grain.
GRILLED FLANK STEAK AND CORN SALAD RECIPE BY TASTY

- In a medium bowl, drizzle the corn with 2 tablespoons of olive oil and season with salt and pepper to taste. Massage the corn until fully coated. Set aside.
- In a small bowl, combine the paprika, salt, brown sugar, chili powder, onion powder, cumin, garlic powder, chipotle powder, and black pepper and mix together.
- Sprinkle the dry rub all over both sides of the flank steak. Rub in the spices.
- On a heated grill or grill pan greased with canola oil, add the seasoned flank steak and cook until it begins to char slightly, about 3 minutes each side. Remove from the grill and let rest for at least 15 minutes to cool and keep the juices inside.
- Add the seasoned corn to the grill pan. Cook until charred slightly, 3-5 minutes per side. Remove the corn from the grill and set aside to cool.
- Set a small bowl upside-down inside a large bowl. Stand the corn cobs on the small bowl and cut off the kernels. Remove the small bowl.
- Add the chiles, avocado, red onion, cherry tomatoes, jalapeños, lime juice, honey, salt, pepper, and the remaining 2 tablespoons of olive oil. Mix to combine.
- Cut the meat into ½ inch (1 cm) slices.
- Top with the corn salad and serve.

TEX-MEX FLANK STEAK SALAD
Steps:
- Bring 1 cup broth and dried chilis to boil in heavy small saucepan. Cover and let stand 20 minutes. Stem and seed chilies. Rinse. Strain cooking liquid. Transfer chilis, garlic and cumin to blender. Blend until smooth. Remove 1/3 cup puree and reserve. Spread remaining puree over both sides of beef. Season with salt. Place in shallow baking dish. Cover and refrigerate overnight.
- Simmer remaining 1/4 cup broth, onion, fresh chilis and bell pepper in heavy medium skillet until tender, about 5 minutes. Transfer to bowl and cool. (Can be prepared 1 day ahead. Cover vegetables and chill.)
- Preheat broiler. Transfer beef to baking sheet. Broil 5 minutes, turn and broil 3 minutes. Let beef stand 10 minutes. Cut into thin slices. Add any accumulated juices and 1/3 cup salsa to reserved puree.
- For each plate, layer in order: lettuce, salsa, bell pepper mixture, corn, beef, chopped tomato, fresh cilantro, cheese and reserved puree. Garnish with tortilla chips and serve.
TEX-MEX GRILLED FLANK STEAK
Three ingredients is all you need for this melt in your mouth tender flank steak. This can be eaten on its own but I like to use it for tacos or grilled steak salads.

- Pour all 8 packets of sazon seasoning into a gallon-sized resealable plastic bag. Add beer, seal, and shake until sazon seasoning is dissolved. Add flank steak and refrigerate 8 hours or overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove steak from the bag and discard marinade.
- Grill steak on the hot grill for about 6 minutes on each side for medium or until desired doneness. Remove steak from gill and let rest 10 minutes. Slice against the grain.

GRILLED STEAK TACOS WITH CHIPOTLE CREAM AND CHIMICHURRI

- For the Chimichurri: While the steak rests, place the cilantro leaves, onion, 4 cloves garlic, juice of 1 lime, and 1/3 cup vinegar to a blender and puree until combined. With the blender on low speed, drizzle in the 1/4 cup olive oil in a low stream. Remove the sauce from the blender and stir in the red pepper flakes and salt to taste.
- For the Chipotle Cream: Combine the sour cream, chipotle pepper, adobo sauce, juice of 1/2 lime, and a pinch of salt.
- Place the steak, 3 cloves garlic, 2 tablespoons each olive oil and red wine vinegar, 1 teaspoons salt, 1/2 teaspoons black pepper, and dijon mustard in a resealable bag. Rub the ingredients into the meat and place in the refrigerator to marinate 2 hours.
- After 2 hours, remove the meat from the bag and pat dry to remove any excess moisture. Lightly season both sides with salt and pepper. Set aside.
- Spray an indoor, stovetop grill with nonstick cooking spray and preheat on medium-high heat. Place the steak on the preheated grill and grill about 6 minutes per side for medium rare. After grilling the steak, cover with tented foil and allow to rest for 10 minutes before thinly slicing across the grain.
GRILLED CHIPOLTE FLANK STEAK & TEX MEX SALAD

- Chipotle Rub In a food processor or blender, combine all ingredients and blend to a smooth paste. Spread the chopotle rub evenly over flank steak and let stand a room temperature for 30 minutes. Preheat the grill to meidium high and oil the grill. Place the steak over direct heat of the grill for 2 minutes per side. Move to indirect heat and close the lid of the grill. Continue for 8 to 10 minutes more or until desired doneness is achieved. Salad Dressing In a blender, combine all ingredients and blend until smooth. Salad In a large bowl, combine the lettuce, onion, jicama, tomatoes, and corn. Arrange the salad on chilled salad plates and place slices fo the beef and tortilla strips over the top. Serve with dressing.
