Yakitori is Japanese skewered chicken, cooked on a charcoal grill with either sweet soy sauce or just salt. You DO NOT marinate the chicken before cooking through. Yakitori is great for entertaining a big crowd as it is a kind of finger food. It is quite easy to make. (Watch the Video)In this recipe, I am sharing the two most common yakitori - negima (chicken and shallots/scallions yakitori) and momo (plain chicken thigh yakitori) with sweet soy sauce. I also included onion rings on skewers and bacon & asparagus on skewers.The recipe also includes different methods of grilling yakitori - on a yakitori grill/BBQ and using the oven grill/broiler.Cook time can vary a lot depending on how many skewers you can grill at once.

30 green onion pieces ((3cm / 1⅛" long, white and green firm parts only))
8 bamboo skewers soaked in water for 30 minutes ((Note 1))
4 small onions (, cut horizontally into 1.3-1.5cm / ½-⅝" thick (note 3))
10 bamboo skewers soaked in water for 30 minutes ((Note 1))
10 thick asparagus spears (, end trimmed (about 15cm / 6" long and 1.3-1.5cm / ½-⅝" in diameter, note 4))
40 thin streaky English bacon pieces ((7cm / 2¾" long, about 360g / 0.8lb, note 5))
185ml / 6.3fl oz soy sauce
185ml / 6.3fl oz mirin
2½ tbsp sugar

Steps:

  • Add Sauce ingredients to a pot and bring to a boil. Turn down the heat to medium or medium low and simmer for about 5 minutes to reduce the quantity by about a third. (Note 6).

10 wooden skewers
4 skinless, boneless chicken thighs, cut into 1-inch cubes
4 scallions, sliced into 1-inch pieces
½ cup sake
½ cup soy sauce
3 tablespoons mirin
2 tablespoons white sugar
1 teaspoon vegetable oil, or to taste

Steps:

  • Soak 10 wooden skewers in cold water for 15 minutes.
  • Thread chicken pieces onto the soaked skewers, alternating with scallions.
  • Combine sake, soy sauce, mirin, and sugar in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Reserve 1/2 of the sauce for dipping.
  • Heat a grill pan over high heat and lightly brush with vegetable oil. Add skewers and cook until chicken is no longer pink in the center, basting frequently with 1/2 of the sauce, 7 to 10 minutes per side.

1 pound chicken livers, gizzards or boneless thigh meat
1/2 cup dark soy sauce or tamari
1/4 cup mirin
2 tablespoons sake or dry sherry
1 tablespoon brown sugar
2 garlic cloves, peeled and smashed
1/2 teaspoon grated fresh ginger
Scallions, thinly sliced, for garnish

Steps:

  • Cut chicken into one-inch pieces and place in a shallow dish.
  • In a small saucepan, combine soy sauce or tamari, mirin, sake or sherry, brown sugar, garlic and ginger. Bring to a simmer and cook for 7 minutes, until thickened. Reserve 2 tablespoons sauce for serving. Pour remaining sauce over chicken, cover, and chill for at least one hour (and up to 4 hours).
  • If using wooden or bamboo skewers, soak them in water for one hour. Preheat grill or broiler. Thread chicken pieces onto skewers, and grill or broil, turning halfway, for about 3 minutes for livers, 10 minutes for gizzards and 6 minutes for thighs. Serve drizzled with reserved sauce and garnished with scallions.

1/2 cup light soy sauce
1/4 cup apple juice
2 tablespoons brown sugar
2 teaspoons grated ginger
1 teaspoon minced garlic
4 boneless chicken breasts

Steps:

  • Mix all marinade ingredients together.
  • Pierce each chicken breast with fork several times.
  • Marinate chicken breasts in marinade several hours.
  • Cook on greased grill over medium heat 10 minutes or until done.

YAKITORI (GRILLED CHICKEN KEBABS)

Yakitori is chicken and various other things (mainly chicken, as tori means chicken) skewered, brushed with a sweetish sauce, and grilled to perfection. My version utilizes a simplified sauce and is cooked under the broiler, although it can be grilled, too. Yakitori is best eaten fresh while still very hot. Try with a Japanese beer, if you drink beer. I like to serve it as a meal, but it's intended to be more of a snack. Besides the kebab ingredients here, you can also use chicken gizzards or livers, wing drummettes, little meatballs of minced chicken, shitake mushrooms, bell peppers, or gingko nuts. The skewers should be quite small--just enough for a bite or two each.

7 tablespoons sake
3/4 cup low sodium soy sauce
3 tablespoons mirin
2 tablespoons sugar
2 lbs boneless chicken thighs
5 thin leeks or 7 -8 green onions
short bamboo skewer, soaked in water

Steps:

  • To make sauce, combine all ingredients in a small saucepan. Bring to a boil, remove from heat, and set aside.
  • To prepare kebabs, cut thigh meat into bite-sized pieces. Cut thick parts of onions into 1-inch pieces, discarding the leaves. (See comments for additional suggestions for skewers.).
  • Thread pieces of chicken and onion alternately onto skewers, just 1-2 of each per skewer.
  • Dip each skewer into the sauce until well coated; place on a broiling pan.
  • Brush with additional sauce, and place under hot broiler, about 4-6 inches from heat.
  • Broil until the sauce begins to blacken around high points of skewers, about 4-5 minutes.
  • Brush again with sauce, flip and brush other side. Continue broiling for another 4-5 minutes or until just starting to char.
  • Repeat if necessary until chicken is cooked through.
  • Serve immediately. Discard any remaining sauce.

  • Peel and finely chop the garlic and ginger. Add them to a sauce pan over medium-heat and cook about two minutes. Add the soy sauce, water, brown sugar, mirin, and rice vinegar. Heat the liquid until it comes to a boil. Then, very quickly, lower the temperature and simmer for four minutes, stirring constantly. Remove from heat and let it cool.
  • Clean the chicken and cut it into cubes. Thread the chicken onto the skewers, stopping about halfway down the skewer to leave yourself a “handle” for cooking and eating.
