YAKITORI (JAPANESE SKEWERED CHICKEN)
Yakitori is Japanese skewered chicken, cooked on a charcoal grill with either sweet soy sauce or just salt. You DO NOT marinate the chicken before cooking through. Yakitori is great for entertaining a big crowd as it is a kind of finger food. It is quite easy to make. (Watch the Video)In this recipe, I am sharing the two most common yakitori - negima (chicken and shallots/scallions yakitori) and momo (plain chicken thigh yakitori) with sweet soy sauce. I also included onion rings on skewers and bacon & asparagus on skewers. The recipe also includes different methods of grilling yakitori - on a yakitori grill/BBQ and using the oven grill/broiler.Cook time can vary a lot depending on how many skewers you can grill at once.

YAKITORI (GRILLED CHICKEN KEBABS)
Yakitori is chicken and various other things (mainly chicken, as tori means chicken) skewered, brushed with a sweetish sauce, and grilled to perfection. My version utilizes a simplified sauce and is cooked under the broiler, although it can be grilled, too. Yakitori is best eaten fresh while still very hot. Try with a Japanese beer, if you drink beer. I like to serve it as a meal, but it's intended to be more of a snack. Besides the kebab ingredients here, you can also use chicken gizzards or livers, wing drummettes, little meatballs of minced chicken, shitake mushrooms, bell peppers, or gingko nuts. The skewers should be quite small--just enough for a bite or two each.

Steps:
- To make sauce, combine all ingredients in a small saucepan. Bring to a boil, remove from heat, and set aside.
- To prepare kebabs, cut thigh meat into bite-sized pieces. Cut thick parts of onions into 1-inch pieces, discarding the leaves. (See comments for additional suggestions for skewers.).
- Thread pieces of chicken and onion alternately onto skewers, just 1-2 of each per skewer.
- Dip each skewer into the sauce until well coated; place on a broiling pan.
- Brush with additional sauce, and place under hot broiler, about 4-6 inches from heat.
- Broil until the sauce begins to blacken around high points of skewers, about 4-5 minutes.
- Brush again with sauce, flip and brush other side. Continue broiling for another 4-5 minutes or until just starting to char.
- Repeat if necessary until chicken is cooked through.
- Serve immediately. Discard any remaining sauce.

- Peel and finely chop the garlic and ginger. Add them to a sauce pan over medium-heat and cook about two minutes. Add the soy sauce, water, brown sugar, mirin, and rice vinegar. Heat the liquid until it comes to a boil. Then, very quickly, lower the temperature and simmer for four minutes, stirring constantly. Remove from heat and let it cool.
- Clean the chicken and cut it into cubes. Thread the chicken onto the skewers, stopping about halfway down the skewer to leave yourself a “handle” for cooking and eating.
- Heat a grill to about 350 F. Lay the skewers across the grill, leaving the “handle” off the grill. Let them cook one minute, flip, let them cook another minute, allowing for grill marks to sear on the chicken.

- Combine all the ingredients in a small sauce pot over medium-high heat. Use a whisk to make sure everything is incorporated. Bring the sauce to a boil and lower to medium heat. Continue to cook for about 10-15 minutes or until the sauce thickens and coats the back of a spoon (or reduces in half).
- Heat your coals. I use a chimney starter, and let it heat up for 10-15 minutes. I like to flip the binchō-tan inside it midway so it heats more evenly. You know it’s done when all the coals are almost entirely covered in white ash. Arrange these coals into your yakitori grill, place the grate on and start grilling.

- Marinate: Get a plastic containers with lid or a plastic bag and place the chicken, Japanese long onion (negi ねぎ) and mushrooms inside . (Sometimes, I like to marinate them chicken and the onions separately from the mushrooms as the mushrooms like to soak up all of the oil but you can do it all together if you wish). Add the olive oil, garlic powder, basil, white pepper, bay leaves You may need more oil on mushrooms as they marinade. Marinate for at least 30m minutes of up to overnight.
- Pre-heat grill :You can use a traditional Yakitori grill as pictured below or any regular grill you have available. (If you have teenage boys like I do , trust me you want a bigger grilling surface)
- Place your meats and vegetables on the skewers. Put your marinated mushrooms on the grill. If the mushrooms are very dry just brush with a little extra oil before putting on the grill. I like to alternate and place a chicken cube, a Japanese scallion and then another chicken cube on the skewers.

- Lay foil-covered bricks about 4" (10 cm) apart on the grates of any type of grill to mimic the indirect heat of a yakitori grill (I used 3 bricks on each side). Set the middle burners on a gas grill to the medium-high setting, cover, and preheat for at least 15 minutes.
- If you like it spicy, serve the grilled vegetables and mushrooms with a sprinkle of shichimi togarashi. Enjoy!

- Make the tare: Place the chicken stock, soy sauce, mirin, sugar, scallion white, garlic, ginger, and lemon zest in a nonreactive saucepan and bring to a boil over medium heat.
- Make the yakitori: Cut the chicken into 1/2-inch cubes and thread it onto skewers. Fill each skewer only halfway; leave the other half bare as a handle.
- When ready to cook, brush and grease the grill grate (a piece of chicken fat or skin held in tongs works great for greasing). Keep the pot of warm tare on one corner of the grill.
- Grill the yakitori until the chicken is partially cooked (it will be white on the outside), about 2 minutes per side. Dip each yakitori in the sauce, then return it to the grate.
- Dip each grilled yakitori in the tare one more time and transfer them to a platter or plate. Sprinkle with sesame seeds and chopped scallion greens, if using, on top and serve at once.
