20 wooden skewers
6 each boneless, skinless chicken breasts, cut lengthwise into strips
6 tablespoons soy sauce
6 tablespoons tomato sauce
2 tablespoons peanut oil
4 cloves garlic, minced
½ teaspoon ground black pepper
½ teaspoon ground cumin
1 tablespoon peanut oil
¼ onion, finely chopped
1 clove garlic, minced
8 tablespoons peanut butter
3 tablespoons white sugar
2 tablespoons soy sauce
1 cup water
½ lemon, juiced

Steps:

  • Put wooden skewers in a shallow dish and cover with water. Let soak for 20 minutes.
  • Place chicken strips into a bowl. Combine soy sauce, tomato sauce, peanut oil, garlic, pepper, and cumin in a small bowl; mix to combine. Pour over chicken strips and mix so chicken is well coated on all sides. Marinate for 15 minutes.
  • Meanwhile, make the peanut sauce. Add 1 tablespoon oil to a hot skillet over medium-high heat. Add onion and garlic. Cook and stir until onion is soft and translucent, about 4 minutes. Add peanut butter, sugar, soy sauce, and water. Mix well. Cook until sauce has thickened slightly, about 5 minutes. Add lemon juice and remove from heat.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Thread each chicken strip onto a skewer.
  • Place skewers on the preheated grill and cook for a total of 10 minutes, flipping once halfway through cooking. Serve the satay skewers immediately with the peanut sauce for dipping.

The marinade for this chicken is true to the authentic Thai grilled chicken (Gai Yang). Traditional Gai Yang is served with a dipping sauce but I find chicken thighs so juicy that it doesn't need it. Instead, I incorporate the flavour into the Marinade. Traditionally this is cooked over charcoal which gives it a wonderful smokey flavour. But it really is fantastic even cooked on the stove or in the oven, though my preference is to cook it on the outdoor grill. The key ingredients are the lemongrass and fish sauce - don't omit or substitute these!

2 lb / 1 kg chicken thigh fillets ((skinless, boneless) (Note 1))
1 large lemongrass stalk (, white part only very finely chopped (about 2 tbsp) (Note 2))
6 cloves garlic (, minced)
2 tbsp lime juice
2 tsp finely chopped red chili ((optional but recommended))
3 tbsp fish sauce
2 tbsp Chinese cooking wine (, sherry or sake (Japanese cooking wine) (Note 4))
1 tsp sesame oil ((optional))
3 tbsp brown sugar or palm sugar
2 tbsp honey ((or 1 tbsp brown sugar))
1/2 tbsp black pepper ((adjust to taste - this adds spiciness))
Lime wedges
Red chili (, finely sliced (optional))
Cilantro / coriander leaves ((optional))

Steps:

  • Place Marinade ingredients in a large ziplock bag. Massage to mix.
  • Add the chicken into the ziplock bag and massage to spread the marinade over all the chicken. Marinate for a minimum of 3 hours, preferably overnight (up to 24 hours).
  • Remove chicken from the Marinade and discard the Marinade (unless baking in the oven - refer Note 3).
  • Heat the outdoor grill on medium high. Or heat 1/2 tbsp oil in a non stick pan over medium high heat on the stove.
  • Cook the chicken until golden brown - around 3 minutes each side.
  • Rest for a few minutes before serving with lime wedges on the side, and garnished with fresh chilies and cilantro, if using.

2 tablespoons reduced sodium soy sauce
2 1/2 teaspoons yellow curry powder
1 1/2 teaspoons turmeric
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon brown sugar
1 tablespoon fish sauce
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 tablespoon canola oil
Kosher salt and freshly ground black pepper, to taste
3 tablespoons creamy peanut butter
1 tablespoon reduced sodium soy sauce
1 tablespoon freshly squeezed lime juice
2 teaspoons brown sugar
2 teaspoons chili garlic sauce, or more, to taste
1 teaspoon freshly grated ginger

Steps:

  • To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12-15 minutes. 1/2 cup water
1/4 cup soy sauce
4 cloves garlic, pressed

Sriracha is available in most supermarkets; it has a vinegary, garlicky kick with a heat that's less pronounced than other fresh chile sauces. 1/4 cup brown sugar
2 tablespoons soy sauce
2 teaspoons chopped garlic
1 teaspoon ground cumin
1/2 orange, zested, reserve remainder for Grilled Fruit Skewer recipe
Kosher salt and freshly ground black pepper
2 pounds boneless, skinless chicken thighs, about 8 thighs
12 (10-inch) skewers
1/2 cup peanut butter
1 tablespoon hot sauce, or to taste
Canola oil, for brushing
1 (10-ounce) package couscous
1 green bell pepper
1 medium zucchini
1 medium red onion

Steps:

  • In a large bowl, combine the coconut milk, brown sugar, soy sauce, garlic, cumin, orange zest, and salt and pepper, to taste. Pour half of the marinade into a large resealable bag. Reserve 2 tablespoons of the remaining half of the marinade for the Online Round 2 recipe Sweet and Spicy Chicken Wraps. Reserve the rest of the marinade, for the dipping sauce, in a small bowl. Grill the vegetables until they are slightly charred and have softened a bit, about 2 to 3 minutes per side. Remove them from the grill and cut them into small pieces. 3 tablespoons tamari
2 tablespoons fresh lime juice
12 cloves garlic, smashed and peeled
1/2 teaspoon ground cumin
8 slices fresh ginger (quarter-size)
1/4 cup chicken broth
1/2 cup tamari
1/3 cup sugar
1/2 teaspoon five-spice powder
6 cloves garlic, smashed and peeled
6 red pepper pods (crushed to about 2 tsp) or 1/2 teaspoon red pepper flakes, to taste
1/3 cup smooth peanut butter
2 tablespoons fresh lime juice

Steps:

  • For the chicken marinade, combine all ingredients in a bowl large enough to hold the chicken, or use a ziploc bag.
  • Marinate for at least several hours or overnight.
  • Cook as desired, bake or grill until done.
  • Usually about 1/2 hour at 350 degrees. The marinade and sauce make enough for 4 lbs of chicken parts. If you are baking this much chicken, you will need to adjust the cooking time. I (TCookie) usually am only cooking about 2 lbs.
  • (I don't cook mine in the microwave. Sorry, Barbara).
  • For the Satay, combine broth, soy, sugar, five-spice powder, garlic and pepper in a 4 cup Pyrex measuring cup.
  • Cover tightly with plastic wrap and cook at full power for 3 minutes.
  • Remove from oven.
  • Pierce plastic and let cool for 5 minutes.
  • Uncover and whisk in the peanut butter and lime juice.
  • Serve with cooked, marinated chicken.

This recipe was given to me by my neighbour who is one of the nicest people I know. She is originally from Indonesia and moved to Canada a few years ago. I am guessing at serving sizes, and cooking times so please adjust amounts to what you think you need. I am also guessing at the amount of oil added to the basting sauce as I was told just to add a little oil to make it easier to baste with. You may need more basting sauce depending on how much you put on while cooking and I would double or triple the sauce if you have more than a pound of meat.

1 tablespoon sweet soy sauce (kecap manis)

1 peeled shallot
4 garlic cloves
2 teaspoons ground coriander
1 teaspoon ground cumin
½ teaspoon ground turmeric
2 tablespoons palm or brown sugar
1 seeded red finger (Fresno, or jalapeño pepper)
1 " piece peeled fresh ginger
juice of 1 lime
2 tablespoons peanut oil
2 tablespoons soy sauce
¼ cup sweet soy sauce (kecap manis)
3 pounds dark and/or white chicken meat cut into ½" pieces
1/2 recipe for peanut sauce

Steps:

  • Add everything except for the chicken to a food processor or a blender and process or blend until smooth. Set aside.
  • Prepare the chicken removing and skin or bones and cut into small ½" pieces and add to a large bowl.
  • Add the marinade onto the chicken and optionally season with salt and pepper. Mix everything together completely. Cover and keep in the refrigerator for at least 4 hours or up to 24 hours.
  • When you are ready to cook, preheat the oven to high heat (450° to 550°) and soak some wooden skewers in water for 20 minutes so they do not catch on fire while grilling.
  • Next, skewer the chicken leaving about 3" at the bottom of the skewer to make it easy to hold and eat. I got 12 8" skewers.
  • Place the chicken on the grill and cook for 3-4 minutes per side or until browned and cooked throughout.
  • Optionally garnish with chopped fresh cilantro and serve with peanut sauce.

  • Whisk together the Marinade/Sauce ingredients in a medium bowl. Remove 1/3 cup to a freezer size bag and whisk in 3 tablespoons olive oil (for the marinade). Add chicken and toss to evenly coat.   • Make the peanut sauce: In a small saucepan over low heat, stir together 1/2 cup coconut milk, 3 tablespoons peanut butter, 1/2 tablespoon red curry paste, 1/2 tablespoon lime juice, 1/2 tablespoon fish sauce and 1 teaspoon Swerve Sweetener. Be sure to heat the sauce at a lower temperature to prevent liquids from separating. Continue stirring sauce until smooth and heated. Remove from heat and place in small serving bowl.
  • Grill and serve: After marinating the chicken, thread onto skewers, leaving a little space between each piece of chicken. Heat the grill to high and place the skewers directly over the heat and grill for about 4 minutes. Flip the skewers and grill for an additional 3 to 5 minutes (for total 8 to 10 minutes), until thermometer reaches 165 degrees. Remove skewers from grill, plate and serve with peanut sauce and lime wedges (for squeezing juice over chicken).
