- In a large resealable plastic bag, combine 1 cup vinaigrette and half of the rosemary. Add chicken. Seal bag and turn to coat; refrigerate for 1 hour. , In a small bowl, combine the jam, lime juice, soy sauce, garlic powder, and remaining vinaigrette and rosemary; set aside., Drain and discard marinade. Place chicken skin side down on grill rack. Grill, covered, over indirect medium heat for 20 minutes. Turn; grill 10-20 minutes longer or until juices a thermometer reads 180°, basting occasionally with raspberry sauce.

- Heat gas or charcoal grill. In small bowl, stir together fruit spread, vinegar and oil; reserve 1/3 cup for glaze. Set remaining mixture aside.
- Carefully brush grill rack with oil. Place chicken on grill over medium heat. Brush chicken with reserved glaze. Cover grill; cook 5 minutes. Turn chicken over; brush with glaze. Cover grill; cook 3 to 7 minutes longer, brushing occasionally with glaze, until juice of chicken is clear when center of thickest part is cut (170°F).
- Meanwhile, on 4 individual dinner plates, arrange spinach, raspberries, onion and almonds. Cut each grilled chicken breast into slices; place on top of salads. Drizzle with remaining fruit spread mixture.

- Mix 1/2 cup dressing with garlic powder and rosemary. Place chicken breasts in a plastic zip-top bag and add dressing marinate in fridge for 30 minutes to 8 hours.
- Grill chicken 4 to 5 minutes over med high coals, or till meat registers 155°. Remove from heat and cover. Allow to rest for 10 minutes to come to temperature.
- Meanwhile, place lettuce on 4 plates. Divide other ingredients equally among the 4 plates. Slice each chicken breast and put equal amount of chicken on each plate. Add additional dressing and enjoy.

- Mix wine, salt, and cayenne pepper, pour over chicken breasts and marinate at least 2 hours, preferably overnight.
- Drain marinade, and pat dry chicken.
- Grill on outdoor grill or grill pan until done, cut into bite sized slices, keep warm.
- Combine dressing ingredients in a jar with a tight fitting lid. It may be necessary to microwave for a few seconds to get the preserves incorporated.
- Toss spinach with dressing, divide onto 4 plates, top with orange, onion, and avocado, and sliced chicken.
LONGHORN GRILLED CHICKEN STRAWBERRY SALAD
Steps:
- Lay the greens out on a platter or on individual serving plates. Arrange the strawberries, grapes, mandarin oranges and candied pecans on salad, leaving a space in the center for the chicken. When cooked and allowed to cool for a few minutes, slice chicken at an angle and place in the center of the salad. Top with red onion slices and Feta cheese. Pass the dressing.
- Mix all ingredients together. If using a jam that's chunky, dressing may be blended. Thin wth a bit of water if needed. Taste and adjust, adding salt and pepper to taste, making a bit sweeter or a bit tarter if needed. Store in the refrigerator until ready to use. Pass the dressing at the table so everyone may add as much or as little as they wish.
- When ready to cook, heat your grill to high for 15 to 20 minutes.
- Pound each chicken breast between sheets of waxed paper or plastic wrap with a rolling pin or a mallet to 1/4-inch thickness. Add to a ziploc bag and add the rest of the ingredients. Marinade for at least an hour and if time allows, marinade longer. When ready to cook, remove chicken, discard marinade and pat chicken dry.
- Place chicken on the grill, smooth side down and grill for 2 to 3 minutes or until nice grill lines show. Turn and continue to grill until golden brown and just cooked through.
- Place each chicken cutlet on a large plate as they're done and allow to rest, lightly covered for several minutes before slicing and dividing among the salads.
- If making indoors, heat a large skillet with a tablespoon or two of oil over high heat, proceed with the recipe as stated above, watching the heat level and turning down if necessary.
