- Preheat an outdoor grill for medium heat; lightly oil the grate.
- Cook the corn on the preheated grill, turning occasionally, until the corn is tender and specks of black appear, about 10 minutes; set aside until just cool enough to handle. Slice the kernels off of the cob and place into a bowl.
- Combine the warm corn kernels with the green pepper, diced tomato, onion, cilantro, and olive oil. Season with salt and pepper; toss until evenly mixed. Set aside for at least 30 minutes to allow flavors to blend before serving.

Steps:
- Season chicken breasts with salt, pepper, chili powder, cumin, garlic powder, oregano, and olive oil.
- Cook over medium heat for about 10 minutes on each side or until internal temperature reaches 165˚F (75˚C). Remove from pan and slice breast into pieces.
- In a bowl, mix sour cream, cilantro, pepper, salt, and lime juice. Set aside until you are ready to serve.
- In a salad bowl, assemble the salad with the romaine on the bottom. Top with red onion, tomatoes, orange bell peppers, corn, cilantro, and jalapeños.
- Add the chicken strips. Gently toss salad with the sour cream dressing.
- Garnish with avocado slices and tortilla strips.

This BBQ Chicken Salad is one of our favorite dinner salads! It's tossed in a tangy cilantro-lime dressing and drizzled with BBQ sauce. Shredded cheese and crumbled tortilla chips are a perfect finishing touch!

- Pat chicken breasts dry using paper towels. In a small bowl, combine the chili powder, paprika, garlic powder, onion powder, salt and pepper. Rub over all sides of the chicken breasts.
- Heat grill to medium-high heat. Grill chicken until internal temperature reaches 165 degrees F, turning once halfway through, about 5-10 minutes per side. Set chicken on a clean plate to rest for at least 10 minutes and then slice.
- Place all ingredients in a blender or food processor. Pulse until cilantro is finely chopped and everything is well combined. Taste and adjust seasonings.
- Place lettuce in a large bowl or 4 individual serving bowls and toss with about half of the dressing.
- Top lettuce with black beans, corn, tomato, red onion, avocado, cheese and chicken. Drizzle each salad with a little more of the cilantro-lime dressing. Top with tortilla strips and then drizzle lightly with BBQ sauce. Serve immediately.

- Preheat oven to 375°F. Place tortillas in single layer on baking sheets; brush evenly with 1 Tbsp. of the dressing. Bake 6 to 8 min. or until tortillas are crisp and lightly browned.
- Heat 3 Tbsp. of the remaining dressing in large skillet on medium-high heat. Add peppers; cook and stir 3 min. or until crisp-tender. Add tomatoes, pineapple and chicken; cook and stir 3 min. or until heated through.

- Prepare the chicken:
- In a bowl let the chicken marinate in the lime juice with the orégano and salt and pepper to taste, covered and chilled, for at least 30 minutes or up to 1 hour. - In a large bowl combine the corn, the bell pepper, and the scallions, add the lime juice, the orégano, the cumin, the oil, and salt and black pepper to taste, and toss the mixture until it is combined well. Cut the chicken lengthwise into thin slices and add it to the corn mixture with any juices that have accumulated on the cutting board. Divide the arugula and the tortilla crisps among 4 plates and mound the chicken salad in the center of each plate.
